Lorsque j&#8217;y vivais encore, il n&#8217;\u00e9tait pas rare de me faire un restaurant marocain de temps \u00e0 autre, moi qui appr\u00e9cie tant les plats aux saveurs sucr\u00e9es-sal\u00e9es. \u00c0 Paris, je vivais dans le 5\u00e8me arrondissement tout pr\u00e8s de la grande mosqu\u00e9e o\u00f9 j&#8217;aimais me rendre r\u00e9guli\u00e8rement pour m&#8217;\u00e9vader quelques instants, ne serait-ce que pour un go\u00fbter et un th\u00e9 \u00e0 la menthe. Que de beaux et doux souvenirs !<\/p>\n<p>Mais les ann\u00e9es suivantes pass\u00e9es \u00e0 l&#8217;\u00e9tranger m&#8217;ont fait passer la cuisine marocaine en arri\u00e8re plan, et la toute derni\u00e8re fois que j&#8217;ai pu appr\u00e9cier un plat marocain remonte il me semble \u00e0 2012 lorsque j&#8217;\u00e9tais \u00e0 Grenade en Espagne. De fait, les restaurants marocains sont plut\u00f4t rares l\u00e0 o\u00f9 j&#8217;ai v\u00e9cu, en Su\u00e8de \u00e0 Stockholm et maintenant ici aux US \u00e0 Chicago. Mais alors voil\u00e0, l&#8217;autre jour j&#8217;ai eu une envie irr\u00e9pressible de manger marocain et d&#8217;y retrouver ses saveurs authentiques. J&#8217;ai alors fait quelques recherches aupr\u00e8s de locaux et de Marocains locaux de Chicago pour essayer de d\u00e9nicher la perle rare. Mon petit d\u00e9fi \u00e9tait de le r\u00e9aliser enti\u00e8rement v\u00e9g\u00e9tarien, et au final il s&#8217;est av\u00e9r\u00e9 \u00eatre vegan &#8211; encore mieux ! Si vous \u00eates marocains ou expert en cuisine marocaine, je vous demande d&#8217;\u00eatre indulgent envers mon plat qui, aussi fid\u00e8le \u00e0 une recette originale puisse-t-il \u00eatre, s&#8217;en \u00e9mancipe \u00e9galement d\u00e9finitivement par certains aspects, ceci dans ma logique d&#8217;ajouter toujours une petite touche personnelle \u00e0 mes plats, ce fameux petit &#8220;twist&#8221;.<\/p>\n<p>Une chose que j&#8217;aime tout particuli\u00e8rement dans la cuisine marocaine et dans les tajines notamment est l&#8217;utilisation de fruits secs, comme les dattes, abricots, ou autres fruits \u00e0 coque telles les amandes par exemple. Cuits dans un fait-tout \u00e0 fond \u00e9pais avec le reste des ingr\u00e9dients, les fruits secs retrouvent ainsi tout leur moelleux en se gonflant de l&#8217;eau du bouillon, leur donnant ainsi une fragrance enchantrice. Notez ici que j&#8217;ai fait le choix d&#8217;abricots secs pour ma part, mais vous pourriez parfaitement les remplacer par des dattes ou bien faire un m\u00e9lange abricots secs-dattes. Pour ces derni\u00e8res, je recommande tout particuli\u00e8rement les dattes Medjool, dont la chair est incroyablement fondante. J&#8217;aurais pu les faire cuire dans le fait-tout directement mais j&#8217;ai \u00e0 la place opt\u00e9 pour l&#8217;option facile de les utiliser d\u00e9j\u00e0 en bo\u00eete. Cela fonctionne parfaitement aussi ; il suffit simplement de se souvenir de les ajouter en dernier pour qu&#8217;ils ne s&#8217;imbibent pas davantage d&#8217;eau. Laissez fr\u00e9mir encore quelques minutes en veillant bien \u00e0 ce que les pois chiches s&#8217;impreignent des \u00e9pices et des saveurs du plat, et c&#8217;est pr\u00eat.<\/p>\n<p>G\u00e9n\u00e9ralement les l\u00e9gumes sont cuits directement dans le tajine, mais ici j&#8217;ai pr\u00e9f\u00e9r\u00e9 les faire r\u00f4tir au four pour une saveur et une texture plus prononc\u00e9e que j&#8217;aime tout particuli\u00e8rement. Mon choix de l\u00e9gumes racines se r\u00e9sume \u00e0 des carottes tricolores (oranges, violettes, blanches) et des pommes de terre, mais vous pouvez parfaitement les remplacer par tout autre l\u00e9gume racine de votre choix. Personnellement j&#8217;aime servir mon tajine avec un peu de semoule. <strong>Contrairement au tajine, la semoule qui vient en accompagnement ici contient du gluten. Pour une version 100% sans gluten je vous conseille de simplement le remplacer par du quinoa.<\/strong> J&#8217;ai pr\u00e9par\u00e9 le mien de mani\u00e8re un peu sophistiqu\u00e9e, lui ajoutant quelques \u00e9pices qui renforcent les saveurs du tagine. R\u00e9haussez le tout des l\u00e9gumes racine et vous obtenez un plat vegan complet, nourrissant et d\u00e9licieusement parfum\u00e9. bouillon de cube, remuer et faire sauter encore une minute. Ajouter ensuite les abricots secs, le jus de citron, le sirop d&#8217;agave (ou le miel si non vegan*) et la moiti\u00e9 de la coriandre h\u00e2ch\u00e9e. Verser l&#8217;eau par dessus et laisser mijoter pendant environ 15 minutes.<\/li>\n<li id=\"instruction-step-3\">Ajouter les pois chiches, les amandes effil\u00e9es.
