J&#8217;aime qu&#8217;elles soient versatiles et vous permettent d&#8217;\u00eatre cr\u00e9atif \u00e0 l&#8217;infini, jouant avec les ingr\u00e9dients, les saveurs et les textures. Elles permettent aussi de redonner vie \u00e0 certains restes dans le frigo et sont par ailleurs adaptables \u00e0 tout type de r\u00e9gimes, que l&#8217;on soit v\u00e9g\u00e9tarien, vegan, ou soumis \u00e0 d&#8217;autres r\u00e9gimes tels que le sans gluten ou sans lactose.<\/p>\n<p>La version que je vous propose aujourd&#8217;hui est v\u00e9g\u00e9tarienne et plaira en particulier \u00e0 tous les amoureux de fromage. Je l&#8217;ai test\u00e9e l&#8217;an dernier pour la premi\u00e8re fois en r\u00e9utilisant quelques betteraves que j&#8217;avais cuites au pr\u00e9alable et j&#8217;ai ador\u00e9 imm\u00e9diatement ce m\u00e9lange de saveur somme toute assez original pour une tarte sal\u00e9e. Cela m&#8217;a tout de m\u00eame pris un an (je cuisine trop !) pour la r\u00e9aliser de nouveau. Cette fois-ci j&#8217;ai eu le temps d&#8217;attraper mon appareil photo afin de la partager avec vous. J&#8217;aurais moi m\u00eame pens\u00e9 cela il y a encore quelques ann\u00e9es, mais cela c&#8217;\u00e9tait avant de m&#8217;amuser \u00e0 faire toutes ces exp\u00e9rimentations dans ma cuisine et oser combiner ensemble certaines saveurs.<\/p>\n<p>Et si vous y r\u00e9fl\u00e9chissez une minute, cette tarte est finalement assez proche de la fameuse salade de betteraves, bleu et noix que l&#8217;on trouve si souvent aux US. La saison des betteraves oscille ainsi entre mai et octobre, ce qui nous place en plein dedans. Commencez simplement par la cuisson des betteraves, qui peut se faire la veille. Mon conseil que je redis pour toute tarte sal\u00e9e : essayez de r\u00e9aliser une p\u00e2te bris\u00e9e maison, qui est bien plus simple \u00e0 pr\u00e9parer qu&#8217;on ne le pense pou une saveur absolument imbattable que l&#8217;on ne retrouvera jamais dans une p\u00e2te \u00e0 tarte pr\u00eate \u00e0 l&#8217;emploi. Je vous propose ici ma recette de p\u00e2te bris\u00e9e que je r\u00e9alise depuis des ann\u00e9es ; vous pouvez y aller en toute confiance, elle fonctionne \u00e0 tous les coups.<\/p>\n<p>Pour les betteraves, vous pouvez soit utiliser des betteraves pr\u00e9-cuites ou bien les cuire vous m\u00eame au four comme indiqu\u00e9 dans la recette ou \u00e0 l&#8217;auto-cuiseur. Assurez-vous qu&#8217;elles sont bien tendres apr\u00e8s cuisson (une lame de couteau devrait pouvoir traverser la betterave). Je les d\u00e9pose ensuite simplement sur le lit d&#8217;oignons dans le fond de tarte avec le bleu emi\u00e9tt\u00e9 par dessus. Cette tarte est tr\u00e8s facilement adaptable en fonction des ingr\u00e9dients dont vous disposez chez vous et vous pouvez par exemple ajouter des champignons si vous le souhaitez ou bien omettre les \u00e9pinards. Servez-vous de cette recette comme base et jouez de votre imagination pour l&#8217;am\u00e9liorer \u00e0 votre convenance.<\/p>\n<p>J&#8217;esp\u00e8re en tous les cas qu&#8217;elle vous plaira et que vous la referez souvent ! Couper le beurre en d\u00e9s et l&#8217;\u00e9craser rapidement du bout des doigts avec la farine et l&#8217;eau jusqu&#8217;\u00e0 ce que les ingr\u00e9dients s&#8217;agglom\u00e8rent et forment une boule de p\u00e2te.<\/li>\n<li id=\"instruction-step-2\">\u00c9taler en un large disque puis foncer un moule \u00e0 tarte de 22 cm de diam\u00e8tre.<\/li>\n<li id=\"instruction-step-3\">Enfourner la p\u00e2te pendant 15 \u00e0 20 minutes, puis laisser refroidir.<\/li>\n<\/ol>\n<h4>Pour la garniture :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-4\">Placer les betteraves crues dans de l&#8217;aluminium et refermer en papillotte. Enfourner sur une plaque de cuisson \u00e0 190\u00b0C jusqu&#8217;\u00e0 ce qu&#8217;elles soient bien tendres, environ 40-50 minutes. Retirer du four, laisser refroidir un peu puis \u00f4ter la peau et couper les betteraves en gros quartiers.<\/li>\n<li id=\"instruction-step-5\">Faire chauffer l&#8217;huile dans une po\u00eale puis y faire revenir les oignons jusqu&#8217;\u00e0 ce qu&#8217;ils soient translucides, environ 10 minutes. Ajouter les \u00e9pinards si utilisation et remuer rapidement, jusqu&#8217;\u00e0 ce qu&#8217;ils soient cuits. R\u00e9partir l&#8217;ail par dessus et cuire encore une minute en m\u00e9langeant souvent.<\/li>\n<li id=\"instruction-step-6\">Verser le m\u00e9lange oignons-\u00e9pinards dans le fond de tarte et d\u00e9poser par dessus les quartiers de betteraves, le bleu et les noix.<\/li>\n<li id=\"instruction-step-7\">Dans un saladier, fouetter les oeufs, le lait et la cr\u00e8me. Saler et poivrer.<\/li>\n<li id=\"instruction-step-8\">Verser cette pr\u00e9paration sur la tarte et enfourner \u00e0 180\u00b0C pendant environ 20 minutes. La tarte doit \u00eatre ferme et l\u00e9g\u00e8rement dor\u00e9e.
