Et m\u00eame si le chili est davantage un plat Tex-Mex, il tient ses origines en partie du Mexique. Pour rappel, la cuisine Tex-Mex, de &#8220;Tex&#8221; pour Texas et &#8220;Mex&#8221; pour Mexique, est litt\u00e9ralement une fusion des deux cuisines. Il s&#8217;est par la suite r\u00e9pandu aux autres \u00e9tats du sud des \u00c9tats-Unis puis au reste du pays, allant jusqu&#8217;au Canada. Je l&#8217;aime pour ses saveurs chaudes, fum\u00e9es et \u00e9pic\u00e9es, mais aussi pour les fameux haricots rouges, et je l&#8217;accompagne g\u00e9n\u00e9ralement de pain cornbread ou d&#8217;un bagel l\u00e9g\u00e8rement grill\u00e9. Aimant l&#8217;original, j&#8217;avais bien s\u00fbr des attentes assez \u00e9lev\u00e9es en termes de r\u00e9sultat, tant niveau go\u00fbt que texture. L&#8217;id\u00e9e \u00e9tait de recr\u00e9er la recette sans que l&#8217;un de ses ingr\u00e9dients principaux ne paraisse absent, le faire tout aussi complet et nourrissant en version v\u00e9g\u00e9tarienne ou vegan. Il existe mille et une recettes diff\u00e9rentes &#8211; certaines avec du quinoa, d&#8217;autres avec des lentilles corail ou du puys, d&#8217;autres encore avec des prot\u00e9ines de soja ou du tempeh \u00e9miett\u00e9 &#8211; et il m&#8217;a fallu \u00e9tudier la question en d\u00e9tail pour cr\u00e9er ma propre version.<\/p>\n<p>J&#8217;ai opt\u00e9 ici pour du quinoa dans une version que j&#8217;ai souhait\u00e9 enti\u00e8rement vegan. J&#8217;aime qu&#8217;une fois cuit, le quinoa apporte une texture proche de la viande h\u00e2ch\u00e9e, tout en \u00e9tant nourrissant et apportant une bonne dose de prot\u00e9ines (l&#8217;id\u00e9al \u00e9tant de l&#8217;accompagner de riz au moment de servir pour optimiser l&#8217;absorption du quinoa par l&#8217;organisme). J&#8217;ai fait mon choix ici dans l&#8217;id\u00e9e d&#8217;apporter une fois encore de la texture \u00e0 l&#8217;ensemble mais aussi dans un souci de cr\u00e9er une recette saine et riche en fibres. Vous pouvez suivre ma liste de l\u00e9gumes \u00e0 la lettre ou bien d\u00e9cider de n&#8217;en mettre quelques uns. \u00c0 titre indicatif, les l\u00e9gumes les plus couramment utilis\u00e9s dans un chili sont <strong>l&#8217;oignon \u00e9minc\u00e9, le poivron, les tomates, les\u00a0jalape\u00f1os \u00e9minc\u00e9s et le c\u00e9leri coup\u00e9 en d\u00e9s<\/strong>, tandis que <strong>les carottes et les champignons<\/strong> sont plus optionnels (m\u00eame si pour ma part je les trouve indispensables). D&#8217;autres aiment ajouter du ma\u00efs \u00e9galement. Le chili est donc une recette assez souple et facilement adaptable.<\/p>\n<p>Les l\u00e9gumes, le quinoa et les haricots rouges et noirs sont tout simplement cuits puis mijot\u00e9s ensemble dans un seul large fait-tout ou cocotte, ce qui vous facilitera la vaisselle en fin de repas.<\/p>\n<h2>N&#8217;oubliez pas l&#8217;assaisonnement !<\/h2>\n<p>Il est par ailleurs important de mentionner que les \u00e9pices et l&#8217;assaisonnement en g\u00e9n\u00e9ral jouent un r\u00f4le essentiel dans la r\u00e9ussite de cette recette. Les \u00e9pices sont \u00e0 utiliser \u00e0 discr\u00e9tion de celui qui pr\u00e9pare la recette en fonction de ses go\u00fbts personnels, et je recommande de go\u00fbter pendant la cuisson pour ajuster au besoin. Je trouve le plat encore plus complet lorsqu&#8217;il est d\u00e9gust\u00e9 avec un peu de riz blanc ou du\u00a0<a href=\"https:\/\/www.delscookingtwist.com\/2017\/05\/05\/moist-skillet-jalapeno-cornbread\/\">cornbread aux jalape\u00f1os<\/a>\u00a0(cette recette est d&#8217;un moelleux exceptionnel).
