Sa p\u00e2te sucr\u00e9e fa\u00e7on &#8220;shortbread&#8221; est r\u00e9hauss\u00e9e d&#8217;une subtile cr\u00e8me au citron et d&#8217;une meringue italienne. Il \u00e9tait temps de rem\u00e9dier \u00e0 cela, et c&#8217;est pour cette raison que j&#8217;ai choisi la tarte au citron meringu\u00e9e pour mon d\u00e9fi de p\u00e2tisserie fran\u00e7aise du mois d&#8217;avril &#8211; petit rappel : je me suis donn\u00e9e pour objectif cette ann\u00e9e de partager chaque mois une nouvelle recette de p\u00e2tisserie fran\u00e7aise avec mes lecteurs. Jusqu&#8217;\u00e0 pr\u00e9sent vous avez pu voir une galette des rois (+ un tutoriel \u00e9tape par \u00e9tape pour apprendre \u00e0 r\u00e9aliser une p\u00e2te feuillet\u00e9e), une brioche \u00e0 t\u00eate ainsi que le pain cocotte en 5 recettes, une recette de pain miracle sans p\u00e9trissage \u00e0 tester absolument.<\/p>\n<p>Il me fallait absolument vous partager ma version de la tarte au citron meringu\u00e9e, d&#8217;autant que c&#8217;est le dessert pr\u00e9f\u00e9r\u00e9 de David ! Je suis moi m\u00eame fan de ce dessert, tant pour sa saveur que pour son joli rendu visuel, notamment lorsqu&#8217;on utilise une torche pour dorer la jolie meringue italienne (je crois fermement que manger joli est encore meilleur). Petite anecdote : en passant en revue les diff\u00e9rentes photos de tartes au citron meringu\u00e9e en ligne, je me suis apercue d&#8217;un ph\u00e9nom\u00e8ne auquel je n&#8217;avais encore jamais pens\u00e9. Vous obtenez presque deux desserts diff\u00e9rents, c&#8217;est assez impressionnant. Tout cela m&#8217;a fait m&#8217;interroger sur l&#8217;origine r\u00e9elle de cette fameuse tarte au citron meringu\u00e9e que je croyais depuis toujours \u00eatre d&#8217;origine francaise &#8211; l&#8217;est-elle vraiment ? N&#8217;\u00e9tant plus tr\u00e8s s\u00fbre, j&#8217;ai alors effectu\u00e9 quelques recherches. La tarte au citron meringu\u00e9e est certes le 4\u00e8me dessert pr\u00e9f\u00e9r\u00e9 des Francais mais ses origines sont plus complexes. Tout a commenc\u00e9 avec la cr\u00e8me au citron ou &#8220;lemon curd&#8221; qui sans surprise nous vient tout droit de Grande Bretagne. Cette cr\u00e8me s&#8217;est av\u00e9r\u00e9e \u00eatre une simple variation de celle r\u00e9alis\u00e9e avec du citron vert et qui servait de base \u00e0 la pr\u00e9paration de la Key Lime Pie dans les \u00e9tats du sud des \u00c9tats Unis, \u00e0 commencer par la Floride en premier lieu. Bient\u00f4t une variation a \u00e9t\u00e9 invent\u00e9e \u00e9galement avec du citron cette fois-ci.<\/p>\n<p>Plus tard, ce dessert a \u00e9t\u00e9 import\u00e9 en Europe par le biais de la Suisse, o\u00f9 Alexandre Frehse a alors am\u00e9lior\u00e9 la recette en cr\u00e9ant la tarte au citron meringu\u00e9e, am\u00e9lioration bas\u00e9e sur la meringue, une recette invent\u00e9e par le Chef italien Gasparini. La recette que nous connaissons aujourd&#8217;hui nous vient en revanche de la Chef p\u00e2tissi\u00e8re am\u00e9ricaine Elizabeth Goodwell qui a \u00e9crit la reccette en 1806. J&#8217;ai peu h\u00e9sit\u00e9 \u00e0 vrai dire ayant ce penchant naturel pour l&#8217;\u00e9l\u00e9gance, et j&#8217;ai naturellement opt\u00e9 pour celle de mon enfance en France. J&#8217;ai n\u00e9anmoins apport\u00e9 ma signature \u00e0 la recette, en la modifiant l\u00e9g\u00e8rement, notamment pour la p\u00e2te sucr\u00e9e sans oeuf qui s&#8217;apparente davantage \u00e0 une recette de &#8220;shortbread&#8221; &#8211; il s&#8217;agit en fait de celle que j&#8217;ai utilis\u00e9e dans ma tarte \u00e0 l&#8217;orange fa\u00e7on cr\u00e8me br\u00fbl\u00e9e, qui m&#8217;a compl\u00e8tement conquise.<\/p>\n<p>Cette p\u00e2te se r\u00e9alise au robot mixeur et il suffit de pulser jusqu&#8217;\u00e0 ce que les ingr\u00e9dients s&#8217;agglom\u00e8rent les uns aux autres. Rassemblez ensuite le tout \u00e0 la main de telle sorte \u00e0 former une boule homog\u00e8ne, puis placez-la entre deux feuilles de papier sulfuris\u00e9 avant de l&#8217;abattre en un large disque. \u00c0 cette \u00e9tape, je recommande de placer la p\u00e2te au r\u00e9frig\u00e9rateur pendant une heure afin que la p\u00e2te se solidifie quelque peu avant de l&#8217;abaisser dans le moule, en prenant soin de retirer le film plastique au pr\u00e9alable. La p\u00e2te est tr\u00e8s fragile et il peut arriver qu&#8217;elle s&#8217;effondre en partie \u00e0 cette \u00e9tape. La version que je vous propose aujourd&#8217;hui est d&#8217;une simplicit\u00e9 enfantine et est pour ainsi dire impossible \u00e0 r\u00e2ter. La recette consiste en quelques ingr\u00e9dients simples : des oeufs, du sucre, du jus et des zestes de citron. Laissez refroidir l&#8217;appareil avant d&#8217;en garnir la p\u00e2te pr\u00e9cuite, puis placez le tout au frais pendant que vous pr\u00e9parez&#8230; la meringue italienne !<\/p>\n<p>Ah, la meringue italienne, comme je l&#8217;aime ! Pourtant elle peut para\u00eetre un peu effrayante au premieer abord, en grande partie car elle requiert l&#8217;utilisation d&#8217;un thermom\u00e8tre pour mesurer la temp\u00e9rature du sirop. Ne vous laissez pas impressionner par ce d\u00e9tail, car cela reste n\u00e9anmoins beaucoup plus simple qu&#8217;il n&#8217;y parait. Vous pourriez \u00e0 la place r\u00e9aliser une meringue fran\u00e7aise qui n&#8217;a pas cette contrainte du thermom\u00e8tre, mais selon moi l&#8217;italienne est bien meilleure en go\u00fbt, beaucoup plus raffin\u00e9e et somptueuse. En suivant juste ces quelques r\u00e8gles de base, vous vous assurez d&#8217;obtenir une meringue italienne absolument parfaite \u00e0 chaque fois, que vous utilisiez un robot mixeur de type kitchen aid ou un batteur \u00e9lectrique (j&#8217;ai test\u00e9 les deux versions pour un r\u00e9sultat identique).<\/p>\n<p>La touche finale est aussi la plus ludique : dessinez quelques courbes \u00e0 la cuill\u00e8re sur votre meringue italienne et dorez-la \u00e0 l&#8217;aide d&#8217;une torche ou en la passant quelques minutes au four (en surveillant de pr\u00e8s pour \u00e9viter que la meringue ne br\u00fble). Si vous vous sentez d&#8217;humeur cr\u00e9ative, utilisez une poche \u00e0 douille pour r\u00e9aliser de jolies figures meringu\u00e9e \u00e0 la place. L&#8217;embout St Honor\u00e9 est le plus classique pour ce type de dessert, mais n&#8217;importe quel embout pourrait fonctionner \u00e9galement. ingr\u00e9dients dans le bol d&#8217;un robot mixeur et pulser jusqu&#8217;\u00e0 ce que la p\u00e2te commence \u00e0 s&#8217;agglom\u00e9rer, pendant environ 30 secondes jusqu&#8217;\u00e0 1 minute. Rassembler la p\u00e2te \u00e0 la main de telle sorte \u00e0 former une boule, puis l&#8217;\u00e9taler entre deux feuilles de film alimentaire en un disque de 25 cm de diam\u00e8tre. Laisser reposer au r\u00e9frig\u00e9rateur pendant une heure minimum.<\/li>\n<li id=\"instruction-step-2\">Pr\u00e9chauffer le four \u00e0 220\u00b0C. Beurrer et fariner un moule \u00e0 tarte de 23 cm \u00e0 bords d\u00e9tachables.<\/li>\n<li id=\"instruction-step-3\">Retirer le film alimentaire puis abaisser la p\u00e2te dans le moule, en s&#8217;aidant du bout des doigts pour ajuster si besoin (la p\u00e2te est tr\u00e8s fragile).<\/li>\n<li id=\"instruction-step-4\">Couvrir le fond de la p\u00e2te avec du papier sulfuris\u00e9, ajoouter des poids ou haricots secs, puis enfourner pendant 10-12 minutes ou jusqu&#8217;\u00e0 ce que les bords soient l\u00e9g\u00e8rement dor\u00e9s. Retirer la tarte du four et laisser refroidir.<\/li>\n<\/ol>\n<h4>Pour la cr\u00e8me au citron :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-5\">Faire chauffer le jus de citron avec les zestes et le beurre dans une casserole.<\/li>\n<li id=\"instruction-step-6\">Dans un saladier, m\u00e9langer le sucre avec les \u0153ufs.<\/li>\n<li id=\"instruction-step-7\">Versez 1\/3 du jus de citron dans l&#8217;appareil \u0153ufs\/sucre, bien m\u00e9langer puis reverser le tout dans la casserole. Faire \u00e9paissir la cr\u00e8me sur feu moyen, sans cesser de remuer.<\/li>\n<li id=\"instruction-step-8\">Lorsque la cr\u00e8me au citron \u00e9paissit et nappe \u00e0 la cuill\u00e8re, verser dans le fond de tarte puis r\u00e9servez au frais.<\/li>\n<\/ol>\n<h4>Pour la meringue italienne :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-9\">M\u00e9langer le sucre et l&#8217;eau dans une casserole et faire chauffer le sirop sans remuer jusqu&#8217;\u00e0 115\u00b0C.<\/li>\n<li id=\"instruction-step-10\">Faire monter les blancs en neige montant mais pas encore fermes (ils doivent \u00eatre mousseux et tirer sur la paroi), puis ajouter alors le sirop tr\u00e8s doucement et continuer de fouetter jusqu&#8217;\u00e0 ce que la meringue soit bien ferme. La meringue doit former une pointe sur le fouet (bec d&#8217;oiseau).<\/li>\n<li id=\"instruction-step-11\">Recouvrir la tarte de la meringue, en utilisant une cuill\u00e8re pour onduler l\u00e9g\u00e8rement.
