Nous voici d\u00e9j\u00e0 au 28 f\u00e9vrier et j&#8217;ai bien failli manquer \u00e0 ma parole ce mois-ci. Non, je n&#8217;avais pas oubli\u00e9 ma parole, mais il s&#8217;av\u00e8re que j&#8217;avais choisi ce mois-ci choisi une recette que je pensais simple et qui pourtant m&#8217;a donn\u00e9 du fil \u00e0 retordre. Apr\u00e8s pas moins de 3 essais et beaucoup d&#8217;\u00e9nergie, de patience et de science pour essayer de comprendre, j&#8217;ai enfin r\u00e9ussi \u00e0 comprendre comment r\u00e9ussir sa brioche \u00e0 tous les coups.<\/p>\n<p>C&#8217;est une brioche \u00e0 t\u00eate que j&#8217;ai choisi pour vous aujourd&#8217;hui, la fameuse brioche traditionnelle que l&#8217;on conna\u00eet depuis toujours. Je ne vous la pr\u00e9sente plus, je sais qu&#8217;elle n&#8217;a aucun secret pour vous non plus. Vous en connaissez la texture, la saveur, et vous savez pafaitement \u00e0 quoi vous attendre d\u00e8s que vous la go\u00fbter ; personne ne pourrait vous tromper sur ce point. La p\u00e2te \u00e0 brioche est en revanche ce sur quoi nous devons travailler ici. La boulange et la patisserie fran\u00e7aise ont pour particularit\u00e9 d&#8217;\u00eatre pr\u00e9cises tant au niveau des quantit\u00e9s des ingr\u00e9dients que des instructions de la recette elle m\u00eame. Chaque \u00e9tape a une raison et un impact sur le r\u00e9sultat final. Si la p\u00e2te est trop dense, votre brioche ressemblera \u00e0 une sorte de g\u00e2teau. Alors soyez attentif \u00e0 chaque \u00e9tape et chaque d\u00e9tail, car chacun a son importance.<\/p>\n<p>J&#8217;avais 15 ans lorsque j&#8217;ai r\u00e9alis\u00e9 ma toute premi\u00e8re brioche maison, sans robot ou machine \u00e0 p\u00e9trir, juste mes petites mains et mes bras \u00e0 l&#8217;\u00e9poque encore peu muscl\u00e9s. Je me souviens que j&#8217;avais \u00e9t\u00e9 assez d\u00e9\u00e7ue du r\u00e9sultat, la texture de ma brioche n&#8217;\u00e9tant pas des tr\u00e8s r\u00e9ussie, tr\u00e8s dense avec un petit arri\u00e8re go\u00fbt de levure. \u00c0 l&#8217;\u00e9poque, je m&#8217;\u00e9tais dit que je ne retenterai sans doute jamais, d&#8217;autant qu il suffit de 5 \u00e0 10 minutes pour en trouver une bonne dans une boulangerie alentours. D\u00e9j\u00e0, j&#8217;adore p\u00e9trir les p\u00e2te \u00e0 pain et \u00e0 brioche, trouvant cette activit\u00e9 relaxante. Ensuite, j&#8217;aime les d\u00e9fis en cuisine, me d\u00e9passer encore et sans cesse. Enfin, le contexte a lui aussi beaucoup chang\u00e9, et apr\u00e8s pas moins de 8 ans pass\u00e9s \u00e0 l&#8217;\u00e9tranger, nul doute que je vois les choses diff\u00e9remment. Ici \u00e0 Chicago, on peut parfois trouver quelques boulangeries fran\u00e7aises qui proposent des brioches, mais elles ne courent pas les rues non plus. Donc si on veut une bonne brioche, mieux vaut pr\u00e9parer la sienne. Maintenant laisse-moi vous livrer mes secrets et astuces en vue d&#8217;une brioche r\u00e9ussie.<\/p>\n<p><strong>1. Le p\u00e9trissage &#8211;<\/strong> pour cette \u00e9tape, je recommande vivement l&#8217;utilisation d&#8217;un robot de type Kitchen Aid pour p\u00e9trir la p\u00e2te \u00e0 votre place. Comme je vous le disais plus haut, j&#8217;aime g\u00e9n\u00e9ralement r\u00e9aliser cette \u00e9tape \u00e0 la main, mais je dois avouer que cela peut para\u00eetre relativement difficile et d\u00e9courageant lorsqu&#8217;on r\u00e9alise une brioche de ce type, la p\u00e2te restant collante pendant un bon moment avant de devenir souple et \u00e9lastique. Il ne faut pas moins d&#8217;une heure de p\u00e9trissage (en deux fois) au Kitchen Aid, et un peu plus \u00e0 la main, en s&#8217;assurant d&#8217;avoir un mouvement \u00e9nergique tout du long. La levure boulang\u00e8re &#8211;<\/strong> apr\u00e8s plusieurs essais, j&#8217;ai constat\u00e9 que la levure fra\u00eeche est celle qui donne les meilleurs r\u00e9sultats pour cette recette. Selon o\u00f9 vous vous trouvez, la levure fra\u00eeche peut \u00eatre difficile \u00e0 trouver (en supermarch\u00e9s et\/ou chez le boulanger en France, absolument partout en Su\u00e8de, chez certains supermarch\u00e9s aux US, comme Whole Foods par exemple). Il vous faut dans un premier temps dissoudre la levure dans un m\u00e9lange d&#8217;eau\/lait ti\u00e8de, avant de la laisser s&#8217;activer pendant environ 15 minutes avant incorporation de tous les autres ingr\u00e9dients \u00e0 l&#8217;exception du beurre.<\/p>\n<p><strong>3. Le beurre vient en dernier &#8211;<\/strong> il vous faudra d&#8217;abord p\u00e9trire la p\u00e2te pendant 20 minutes \u00e0 vitesse faible. Seulement \u00e0 la fin de ce long processus, vous pouvez incorporer le beurre, petit \u00e0 petit. Le choix du beurre est ici important : vous le voulez riche, avec un fort taux de mati\u00e8re grasse avoisinant les 82% de gras, et autant que possible doux plut\u00f4t que demi-sel, dans la mesure o\u00f9 l&#8217;on utilise d\u00e9j\u00e0 beaucoup de sel dans la recette. Le temps des pousses (de la p\u00e2te) &#8211;<\/strong> c&#8217;est sans doute ce qui est le plus important dans cette recette pour s&#8217;assurer d&#8217;obtenir la bonne texture. Lorsque votre p\u00e2te est pr\u00eate et d\u00e9j\u00e0 p\u00e9trie, il vous faut 1\/ former un boule et laisser lever \u00e0 temp\u00e9rature ambiante pendant 1 heure, ou jusqu&#8217;\u00e0 ce que la p\u00e2te ait doubl\u00e9 de volume, 2\/ D\u00e9gazez (= enlever l&#8217;air en p\u00e9trissant la p\u00e2te quelques secondes) ensuite la p\u00e2te et la placer dans le r\u00e9frig\u00e9rateur sous couvert pour 4 \u00e0 12 heures (je recommande 12, soit toute une nuit). Ce proc\u00e9d\u00e9 va permettre aux ar\u00f4mes de se d\u00e9velopper et de freiner par la m\u00eame occasion le processus d&#8217;activation de la levure au contact du froid. 3\/ Apr\u00e8s cela, c&#8217;est le moment de faconner la brioche, de la dorer avec le m\u00e9lange d&#8217;oeuf, et de la re-laisser pousser une troisi\u00e8me fois dans un environnement chaud autour de 25-30\u00b0C (aupr\u00e8s d&#8217;un radiateur ou d&#8217;un four encore l\u00e9g\u00e8rement chaud) pendant 1h30, sous couvert d&#8217;un linge pour \u00e9viter qu&#8217;une croute laide ne se forme par dessus votre brioche. \u00c0 cette \u00e9tape, la brioche va encore doubler de volume. C&#8217;est donc bien 3 temps de pousse que la recette exige, et chacune d&#8217;entre elle a son importance.<\/p>\n<p><strong>5. La touche finale &#8211;<\/strong> juste avant de la cuire au four, badigeonnez votre brioche du m\u00e9lange d&#8217;oeuf une deuxi\u00e8me fois. Cuire pendant 20-30 minutes, jusqu&#8217;\u00e0 ce que la croute soit bien dor\u00e9e. \u00c0 la sortie du four, transf\u00e9rez-la d\u00e9licatement sur une grille jusqu&#8217;\u00e0 ce qu&#8217;elle refroidisse compl\u00e8tement tout en permettant \u00e0 la mie de rester moelleuse et a\u00e9r\u00e9e. Apr\u00e8s quelques jours, lorsque votre brioche devient rassie, pr\u00e9parez du pain perdu avec, c&#8217;est toujours pour moi le meilleur pain perdu du monde, que j&#8217;aime avec un peu de caramel au beurre sal\u00e9 par dessus et une boule de glace vanille.<\/p>\n<p>Bravo, vous avez \u00e9t\u00e9 tr\u00e8s patients \u00e0 lire tout cela, et tant mieux car ca c&#8217;est exactement ce que la recette de la brioche exige. Temps et patience sont vos alli\u00e9s. Laisser reposer 15 min.<\/li>\n<li id=\"instruction-step-2\">Ajouter le sucre, les oeufs, le rhum, les graines de vanille, la farine et le sel, et p\u00e9trir \u00e0 vitesse minimum pendant 10 minutes.<\/li>\n<li id=\"instruction-step-3\">Ajouter le beurre pommade en plusieurs fois et p\u00e9trir au robot jusqu\u2019\u00e0 ce que la p\u00e2te devienne lisse et se d\u00e9colle des parois du robot, environ 30-40 minutes.<\/li>\n<li id=\"instruction-step-4\">Couvrir le bol du robot de film alimentaire et laisser pousser jusqu\u2019\u00e0 ce que la p\u00e2te double de volume (soit environ 1h environ).<\/li>\n<li id=\"instruction-step-5\">D\u00e9gazer (en tapant dessus pour retirer le gaz), puis remettre la boule de p\u00e2te dans le bol en couvrant de film alimentaire. Placer au r\u00e9frig\u00e9rateur et laisser reposer de 4 \u00e0 12h au r\u00e9frig\u00e9rateur (l&#8217;id\u00e9al \u00e9tant toute une nuit).<\/li>\n<\/ol>\n<h4>POUR LE FA\u00c7ONNAGE :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-6\">Sortir la p\u00e2te du r\u00e9frig\u00e9rateur et d\u00e9gazer de nouveau. Beurrer un moule \u00e0 brioche \u00e0 t\u00eate.<\/li>\n<li id=\"instruction-step-7\">Former un boudin \u00e9pais et couper au quart, en r\u00e9servant ce p\u00e2ton pour la &#8220;t\u00eate&#8221;.<\/li>\n<li id=\"instruction-step-8\">R\u00e9aliser une boule ferme et homog\u00e8ne avec le p\u00e2ton le plus gros, en ramenant les bords en dessous de la boule. Coller vos 3 doigts (pouce, index et majeur) ensemble et percer le p\u00e2ton pour y faire une sorte de cavit\u00e9 assez large, lui donnant la forme d&#8217;un gros donut. D\u00e9poser le p\u00e2ton dans le fond du moule \u00e0 brioche.<\/li>\n<li id=\"instruction-step-9\">Prendre le quart du p\u00e2ton restant et r\u00e9aliser une boule lisse et homog\u00e8ne. Placer une main par dessus et avec l&#8217;autre main, rouler un c\u00f4t\u00e9 de telle sorte que la boule prenne la forme du goutte d&#8217;eau. Incorporer au p\u00e2ton principal, en pla\u00e7ant la partie la plus fine dans le trou du donut, et en pressant tout autour avec des doigts farin\u00e9s de telle sorte \u00e0 ce qu&#8217;elle forme une t\u00eate ronde et homog\u00e8ne.<\/li>\n<li id=\"instruction-step-10\">Dorer la brioche avec le m\u00e9lange oeuf-eau-sel \u00e0 l&#8217;aide d&#8217;un petit pinceau, en gardant le surplus pour plus tard.<\/li>\n<li id=\"instruction-step-11\">Couvrir la brioche d&#8217;un torchon pour \u00e9viter qu&#8217;une cro\u00fbte ne se forme et laisser lever aupr\u00e8s d&#8217;une source de chaleur d&#8217;environ 25-30 C pendant 1h30, jusqu&#8217;\u00e0 ce que la brioche ait bien gonfl\u00e9.<\/li>\n<li id=\"instruction-step-12\">Pr\u00e9chauffer le four \u00e0 180\u00b0C.<\/li>\n<li id=\"instruction-step-13\">Badigeonner une nouvelle fois la brioche avec le m\u00e9lange oeuf-eau-sel et enfourner pendant 20-30 minutes, jusqu&#8217;\u00e0 ce qu&#8217;elle soit bien dor\u00e9e.
