Aujourd&#8217;hui, je me sens d&#8217;humeur fran\u00e7aise et revisite la fameuse cr\u00e8me br\u00fbl\u00e9e en la transformant en&#8230; tarte ! Sous ses airs sophistiqu\u00e9s, vous avez l\u00e0 une recette relativement simple \u00e0 pr\u00e9parer, qui ne requiert que quelques ingr\u00e9dients de base.<\/p>\n<p>La cr\u00e8me br\u00fbl\u00e9e a toujours fait partie de mes desserts pr\u00e9f\u00e9r\u00e9s. Comme tout le monde, j&#8217;aime tapoter la couche de caramel croustillante sur le dessus en utilisant le dos d&#8217;une cuill\u00e8re, jusqu&#8217;\u00e0 ce qu&#8217;elle c\u00e8de sous le poids de la cuill\u00e8re, d\u00e9voilant ainsi cette \u00e9paisse, douce et riche couche de cr\u00e8me aux oeufs en dessous. Un petit plaisir tout simple qui me r\u00e9jouit pourtant \u00e0 chaque fois. Oh, surtout, \u00e9pargnez-moi le jus d&#8217;orange en bouteille et optez comme moi pour une orange fra\u00eechement press\u00e9e \u00e0 laquelle vous ajouterez le zeste, qui renforce la saveur de l&#8217;orange. L&#8217;acidit\u00e9 naturelle de l&#8217;orange contribue quant-\u00e0 elle \u00e0 couper la douceur du dessert, qui sera alors parfait pour tous ceux qui pr\u00e9f\u00e8rent les desserts fruit\u00e9s aux desserts sucr\u00e9s.<\/p>\n<p>La particularit\u00e9 de cette cr\u00e8me br\u00fbl\u00e9e sous forme de tarte r\u00e9side dans sa p\u00e2te \u00e0 tarte, une p\u00e2te sabl\u00e9e, douce et d\u00e9licate, comparable \u00e0 ce que l&#8217;on appelle &#8220;shortbread&#8221; en anglais. Pour la r\u00e9aliser, c&#8217;est tout simple : il vous suffit de mettre tous les ingr\u00e9dients ensemble dans le bol d&#8217;un robot mixeur et de pulser plusieurs fois jusqu&#8217;\u00e0 ce que les ingr\u00e9dients s&#8217;agglom\u00e8rent les uns aux autres. Pour cette raison, il vous faudra placer la p\u00e2te dans le fond du moule \u00e0 tarte pr\u00e9alablement beurr\u00e9 et farin\u00e9 et appuyer avec vos doigts et la paume de vos mains de telle sorte qu&#8217;elle prenne la forme du moule dans le fond et sur les c\u00f4t\u00e9s. N&#8217;h\u00e9sitez pas \u00e0 couper le surplus de p\u00e2te avec un petit couteau bien aiguis\u00e9.<\/p>\n<p>Je recommande \u00e9galement l&#8217;utilisation d&#8217;une moule \u00e0 tarte avec bords d\u00e9tachables, qui permettra de servir la tarte sur un joli plat de service. Si vous n&#8217;en avez pas, utilisez un moule \u00e0 tarte classique. Dans tous les cas, veillez \u00e0 bien pr\u00e9-cuire la p\u00e2te, en prenant soin de la couvrir de papier sulfuris\u00e9 avant d&#8217;y d\u00e9poser des poids ou haricots secs. Dans un premier temps, prenez soin de bien laisser la tarte refroidir au r\u00e9frig\u00e9rateur, et c&#8217;est seulement au moment de servir que vous proc\u00e9derez \u00e0 cette derni\u00e8re \u00e9tape consistant \u00e0 faire caram\u00e9liser le sucre \u00e0 la torche jusqu&#8217;\u00e0 ce qu&#8217;il prenne une jolie couleur dor\u00e9e voir un peu plus. Si vous r\u00e9alisez cette \u00e9tape trop en avance et replacez le dessert au r\u00e9frig\u00e9rateur, vous prenez alors le risque de voir le caramel couler, rendant la cr\u00e8me spongieuse.<\/p>\n<p>J&#8217;utilise pour ma part une torche pour r\u00e9aliser ce joli aspect dor\u00e9 et caram\u00e9lis\u00e9, mais si vous n&#8217;en avez pas il vous suffit de saupoudrer de sucre avant de placer la tarte dans la position haute du four enclench\u00e9 sur position grill. Surveillez de pr\u00e8s pour \u00e9viter que la tarte fa\u00e7on cr\u00e8me &#8220;br\u00fbl\u00e9e&#8221; ne devienne litt\u00e9ralement br\u00fbl\u00e9e ! tarte de 23 cm \u00e0 bords d\u00e9tachables si possible.<\/li>\n<li id=\"instruction-step-2\">Placer tous les ingr\u00e9dients dans le bol d&#8217;un robot mixeur. Pulser jusqu&#8217;\u00e0 ce que la p\u00e2te commence \u00e0 s&#8217;agglom\u00e9rer, pendant environ 30 secondes jusqu&#8217;\u00e0 1 minute. Rassembler la p\u00e2te \u00e0 la main de telle sorte \u00e0 former une boule et la d\u00e9poser dans le moule \u00e0 tarte.<\/li>\n<li id=\"instruction-step-3\">Aplatir avec les mains de mani\u00e8re uniforme dans le fond du moule, en montant de 2,5 cm sur les bords. Piquer le fond avec les dents d&#8217;une fourchette, puis couvrir la p\u00e2te avec du film plastique. Laisser reposer au r\u00e9frig\u00e9rateur pendant une heure minimum. Retirer le film plastique.<\/li>\n<li id=\"instruction-step-4\">Pr\u00e9chauffer le four \u00e0 220\u00b0C.
