Vous verrez, en suivant mon <a href=\"https:\/\/www.delscookingtwist.com\/fr\/pate-feuilletee-guide-etape-par-etape\/\">tutoriel \u00e9tape par \u00e9tape<\/a>, vous ne pourrez pas vous tromper !<\/p>\n<p>Maintenant, il est important de bien prendre en compte certains aspects essentiels \u00e0 la r\u00e9ussite d&#8217;une p\u00e2te feuillet\u00e9e, base de toute galette des rois. En p\u00e9trissant beurre et farine ensemble, les particules de farine nappent le beurre, \u00e9vitant ainsi que celui-ci ne soit trop collant lorsqu&#8217;on le travaillera avec la p\u00e2te un peu plus tard. \u00c0 partir de ce moment l\u00e0 et jusqu&#8217;\u00e0 la fin de la recette, une r\u00e8gle pr\u00e9vaut : <strong>toujours travailler la p\u00e2te la plus froide possible.<\/strong> Si elle devient trop chaude (ne serait-ce qu&#8217;\u00e0 temp\u00e9rature ambiante), placer la au r\u00e9frig\u00e9rateur jusqu&#8217;\u00e0 ce qu&#8217;elle refroidisse avant de la travailler de nouveau.<\/li>\n<li><strong>Le pliage et le tournage.<\/strong> Voir mon <a href=\"https:\/\/www.delscookingtwist.com\/fr\/pate-feuilletee-guide-etape-par-etape\/\">tutoriel \u00e9tape par \u00e9tape pour vous guider.<\/a><\/li>\n<li><strong>Repos entre les diff\u00e9rents pliages et tournages. <\/strong>Suivant les recommandations d&#8217;un ami chef p\u00e2tissier, j&#8217;ai pris soin de laisser la p\u00e2te reposer au frais entre les diff\u00e9rents pliages et tournages, au moins une fois ou deux au cours du processus. Pour cela, il convient d&#8217;abaisser la p\u00e2te avec d\u00e9licatesse, au risque d&#8217;endommager la p\u00e2te et mettre en p\u00e9ril la r\u00e9ussite de votre entreprise, cr\u00e9ant un feuilletage d\u00e9s\u00e9quilibr\u00e9. <em><strong>Mon conseil :<\/strong><\/em> tapoter gentilement la p\u00e2te avec le rouleau \u00e0 p\u00e2tisserie plut\u00f4t que de l&#8217;\u00e9taler.<\/p>\n<p>Si par accident le beurre en venait \u00e0 s&#8217;\u00e9chapper malgr\u00e9 tout, ne vous avouez pas vaincus. Vous pouvez toujours essayer de dissimuler le beurre lors du prochain pliage, en veillant \u00e0 ce qu&#8217;il soit bien au milieu de deux couches de p\u00e2te (\u00e0 \u00e9viter autant que possible n\u00e9anmoins). Si vous n&#8217;en avez pas, vous pouvez tout simplement utiliser de l&#8217;extrait de vanille \u00e0 la place.<\/p>\n<h2>Assemblage de la galette \u00e0 la frangipane<\/h2>\n<p>Une fois la p\u00e2te feuillet\u00e9e pr\u00eate \u00e0 l&#8217;emploi d&#8217;un c\u00f4t\u00e9 et la frangipane de l&#8217;autre, passez \u00e0 l&#8217;assemblage de la galette des rois \u00e0 la frangipane. Pour cela, rien de plus simple : \u00e9talez la frangipane sur un disque de p\u00e2te en laissant une bordure tout autour. Pour un rendu plus propre, j&#8217;aime utiliser une poche \u00e0 douille pour d\u00e9poser la cr\u00e8me frangipane sur la p\u00e2te.<\/p>\n<p><strong>N&#8217;oubliez pas d&#8217;y glisser la f\u00e8ve !<\/strong> Enfin, ajoutez le deuxi\u00e8me disque de p\u00e2te en faisant pression pour bien souder les bords. Badigeonnez le tout d&#8217;oeuf battu, d\u00e9corez avec une lame de couteau bien aiguis\u00e9e (sans percer la p\u00e2te) et enfournez le tout !<\/p>\n<h2>Autres id\u00e9es de recettes pour le beurre mani\u00e9<\/strong> en malaxant le beurre pommade du bout des doigts. Ajouter la farine en une fois et malaxer ensemble beurre et farine jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une p\u00e2te lisse et homog\u00e8ne. Former un carr\u00e9, envelopper de film alimentaire et placer au r\u00e9frig\u00e9rateur.<\/li>\n<li id=\"instruction-step-2\">Sur une surface de travail propre, verser la farine additionn\u00e9e de sel et former un puits. Verser l&#8217;eau en son centre, puis du bout des doigts incorporer progressivement la farine par un mouvement d\u00e9licat et circulaire. Ramener la farine restante en r\u00e2clant la surface du plan de travail jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une p\u00e2te compacte et peu travaill\u00e9e (limitant ainsi le d\u00e9veloppement du gluten et de l&#8217;elasticit\u00e9).<\/li>\n<\/ol>\n<h4>Pliage de la p\u00e2te feuillet\u00e9e :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-3\">Former une croix ou une \u00e9toile \u00e0 4 branches en r\u00e9servant une partie boursouffl\u00e9e au centre. \u00c9taler chaque branche de la croix au rouleau \u00e0 p\u00e2tisserie. D\u00e9poser le beurre meuni\u00e9 sur la partie centrale, puis replier chacune des trois branches une par une, en enveloppant le beurre meuni\u00e9 avec soin. \u00c9tirer la derni\u00e8re branche au rouleau \u00e0 p\u00e2tisserie puis l&#8217;\u00e9tirer de facon \u00e0 envelopper enti\u00e8rement le p\u00e2ton par dessus et sur les c\u00f4t\u00e9s.<\/li>\n<li id=\"instruction-step-4\"><strong>Pour le 1er tour:<\/strong> \u00e0 l&#8217;aide d&#8217;un rouleau \u00e0 p\u00e2tisserie, tapoter doucement le p\u00e2ton de mani\u00e8re \u00e0 r\u00e9partir la mati\u00e8re grasse \u00e9quitablement sans percer le p\u00e2ton, en formant une longue langue de p\u00e2te. Abaisser ensuite la p\u00e2te sans forcer pour \u00e9viter que la p\u00e2te encore fragile ne se d\u00e9chire. Plier l&#8217;abaisse en 3 parties \u00e9gales (replier une extr\u00e9mit\u00e9 de l&#8217;abaisse sur elle-m\u00eame, puis replier l&#8217;autre extr\u00e9mit\u00e9 sur les deux premi\u00e8res). Bien souder les 3 \u00e9paisseurs de l&#8217;abaisse. Le premier tour est ainsi termin\u00e9.<\/li>\n<li id=\"instruction-step-5\"><strong>Pour les autres tours:<\/strong> faire 1\/4 de tour, puis abaisser \u00e0 nouveau la p\u00e2te selon le m\u00eame proc\u00e9d\u00e9, en pliant en trois de nouveau. Faire 6 tour au total. Mon conseil : commencer par 3 tours, filmer la p\u00e2te et mettre au frais. Ressortir quelques heures plus tard ou id\u00e9alement le lendemain, et r\u00e9aliser les 3 tours restants.<\/li>\n<\/ol>\n<h4>Pour la cr\u00e8me frangipane (cr\u00e8me p\u00e2tissi\u00e8re + cr\u00e8me d&#8217;amandes) :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-6\"><strong>Cr\u00e8me p\u00e2tissi\u00e8re* :<\/strong> faire chauffer le lait avec la gousse de vanille fendue en deux et stopper d\u00e8s \u00e9bullition. Dans un saladier, blanchir les jaunes avec le sucre, puis incorporer la farine et le lait bouillant. Remettre le tout dans la casserole et cuire pendant quelques minutes sans cesser de remuer, jusqu&#8217;\u00e0 ce que le m\u00e9lange \u00e9paississe. Verser dans un bol puis couvrir de film alimentaire en faisant contact, pour \u00e9viter qu&#8217;une peau ne se forme. Laisser refroidir.<\/li>\n<li id=\"instruction-step-7\"><strong>Cr\u00e8me d&#8217;amandes :<\/strong> dans un saladier, m\u00e9langer ensemble le beurre et le sucre. Incoporer les oeufs un \u00e0 un, en fouettant entre chaque ajout. Ajouter le rhum, la poudre d&#8217;amande et bien m\u00e9langer. \u00c0 cette \u00e9tape, r\u00e2per la f\u00e8ve tonka et l&#8217;ajouter \u00e0 la pr\u00e9paration (la f\u00e8ve tonka peut \u00eatre remplac\u00e9e par 1 cuil. \u00e0 caf\u00e9 d&#8217;extrait de vanille \u00e9ventuellement).<\/li>\n<li id=\"instruction-step-8\">Pr\u00e9lever 100g de la cr\u00e8me p\u00e2tissi\u00e8re et l&#8217;incorporer \u00e0 la cr\u00e8me d&#8217;amande. On obtient ainsi une cr\u00e8me frangipane*. Verser la cr\u00e8me frangipane dans une poche \u00e0 douille et r\u00e9server au frais jusqu&#8217;\u00e0 utilisation.<\/li>\n<\/ol>\n<h4>Assemblage de la galette des rois :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-9\">\u00c9taler la p\u00e2te feuillet\u00e9e en une large bande. D\u00e9couper deux disques, un de 27\/28 cm de diam\u00e8tre et le second un centim\u00e8tre de moins de diam\u00e8tre.<\/li>\n<li id=\"instruction-step-10\">Transf\u00e9rer le plus petit disque sur une plaque de cuisson recouverte de papier sulfuris\u00e9, puis garnir de la cr\u00e8me frangipane \u00e0 l&#8217;aide de la poche \u00e0 douille, en r\u00e9alisant des cercles \u00e0 partir du centre, laissant une marge de 1,5 cm tout autour. <strong>Ne pas oublier de glisser la f\u00e8ve !<\/strong> Recouvrir du second disque de p\u00e2te, puis faire pression tout autour avec le pouce, en d\u00e9coupant quelques entailles au couteau.<\/li>\n<\/ol>\n<h4>Dorure et finitions :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-11\">Fouetter le jaune d&#8217;oeuf avec le sirop d&#8217;\u00e9rable. Badigeonner la galette de ce m\u00e9lange \u00e0 l&#8217;aide d&#8217;un petit pinceau.
