Comme vous le savez, le safran est une \u00e9pice on\u00e9reuse, probablement la plus on\u00e9reuse qui soit, que l&#8217;on utilise assez rarement en cuisine et souvent en tr\u00e8s petites quantit\u00e9 puisque son pouvoir aromatique est tr\u00e8s \u00e9lev\u00e9 (de 0,5g \u00e0 1g suffisent selon les recettes). Souvent utilis\u00e9 en sal\u00e9 dans la cuisine indienne, on le retrouve moins souvent en version sucr\u00e9e. En Su\u00e8de toutefois, le safran est souvent utilis\u00e9 dans les p\u00e2tisseries (notamment au moment de No\u00ebl).<\/p>\n<p>Justement, aujourd&#8217;hui c&#8217;est en version sucr\u00e9e que je vous le propose, dans une tarte tatin plus pr\u00e9cisemment. Vous connaissez tous la tarte tatin traditionnelle avec des pommes caram\u00e9lis\u00e9es sous une p\u00e2te invers\u00e9e. C&#8217;est depuis devenu un de mes desserts d&#8217;hiver pr\u00e9f\u00e9r\u00e9s et je l&#8217;ai d&#8217;ailleurs pr\u00e9par\u00e9 de nombreuses fois, si bien que je suis aujourd&#8217;hui parfaitement en mesure de vous guider pour la r\u00e9aliser en toute confiance. R\u00e9aliser une tarte tatin peut para\u00eetre intimidant et un tant soit peu technique \u00e0 premi\u00e8re vue, or c&#8217;est beaucoup plus simple qu&#8217;il n&#8217;y para\u00eet. Je me souviens encore de mon prof de maths au lyc\u00e9e (je n&#8217;aurais jamais pens\u00e9 parler de lui dans mon blog un jour&#8230; s&#8217;il savait !) qui nous expliquait de temps \u00e0 autre que rien ne valait une bonne p\u00e2te \u00e0 tarte maison : une technique somme toute relativement simple pour une saveur absolument imbattable. C&#8217;est sans doute ce dont je me souviens le plus de ce cours de maths, haha ! Quoi qu&#8217;il en soit, une chose est s\u00fbre : mon prof de maths avait raison. En version sal\u00e9e ou sucr\u00e9e, rien ne vaut une p\u00e2te \u00e0 tarte maison.<\/p>\n<p>Notez qu&#8217;une tarte tatin peut \u00eatre r\u00e9alis\u00e9e soit avec une p\u00e2te bris\u00e9e soit avec une p\u00e2te feuillet\u00e9e. Il est donc important de pr\u00e9ciser ici que mon commentaire ci-dessus vaut pour une p\u00e2te bris\u00e9e mais pas pour une p\u00e2te feuillet\u00e9e qui est beaucoup plus technique et que je ne recommanderais pas n\u00e9cessairement de faire vous m\u00eame si vous \u00eates d\u00e9butants, \u00e0 moins d&#8217;en avoir vraiment envie et d&#8217;avoir du temps devant soi. Pour ce qui est du r\u00e9sultat final, tout est question de go\u00fbt. Personnellement, je pr\u00e9f\u00e8re la p\u00e2te bris\u00e9e pour une tarte tatin, qui lui donne un c\u00f4t\u00e9 un peu plus rustique. Ceci est d\u00fb en partie \u00e0 l&#8217;utilisation du safran. Alors si vous n&#8217;\u00eates pas trop bec sucr\u00e9 et que vous pr\u00e9f\u00e9rez toujours les desserts aux fruits par rapport aux desserts au chocolat, cette recette est certainement fa\u00eete pour vous. Par ailleurs, c&#8217;est bient\u00f4t l&#8217;\u00c9piphanie et cette tarte tatin pourrait s&#8217;av\u00e9rer \u00eatre une bonne alternative \u00e0 la galette des rois ou \u00e0 la <a cm de diam\u00e8tre aux bords d\u00e9tachables avec du papier sulfuris\u00e9. Recouvrir l&#8217;ext\u00e9rieur du moule avec de l&#8217;aluminium.<\/li>\n<li id=\"instruction-step-2\">Pour la p\u00e2te : couper le beurre en d\u00e9s et mixer rapidement avec la farine, jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une texture granuleuse. Ajouter l&#8217;oeuf et m\u00e9langer \u00e0 l&#8217;aide d&#8217;une cuill\u00e8re en bois. Ajouter un peu d&#8217;eau au besoin (la p\u00e2te doit \u00eatre ferme et \u00e9lastique, mais en aucun cas collante). Enveloper de papier sulfuris\u00e9 et r\u00e9server au frais pendant la pr\u00e9paration de la garniture.<\/li>\n<li id=\"instruction-step-3\">Peler, \u00e9p\u00e9piner et couper les poires en quarts. Les d\u00e9poser dans le moule, la partie bomb\u00e9e touchant le fond du moule.<\/li>\n<li id=\"instruction-step-4\">Faire chauffer le sucre dans une casserole \u00e0 fond \u00e9pais plac\u00e9e sur feu doux, sans remuer. Lorsque le sucre commence \u00e0 se caram\u00e9liser, retirer du feu et verser sur les poires. Parsemer de beurre coup\u00e9 en d\u00e9s et r\u00e9partir le safran par dessus.<\/li>\n<li id=\"instruction-step-5\">Retirer la p\u00e2te du r\u00e9frig\u00e9rateur et l&#8217;\u00e9taler en un cercle plus large que celui du moule (d&#8217;un diam\u00e8tre de 5 \u00e0 6 cm de diam\u00e8tre plus grand que celui du moule). D\u00e9poser le cercle de p\u00e2te par dessus les poires, en laissant les bords retomber entre les poires et les parois du moule. R\u00e9aliser quelques entailles au couteau pour laisser l&#8217;air s&#8217;\u00e9chapper.<\/li>\n<li id=\"instruction-step-6\">Enfourner pendant 40 \u00e0 45 minutes. La p\u00e2te doit \u00eatre bien dor\u00e9e. Retirer du four et laisser refroidir l\u00e9g\u00e8rement avant de retourner la tarte tatin sur un plat de service.<\/li>\n<li id=\"instruction-step-7\">Toaster les \u00e9clats de pistaches quelques instants \u00e0 la po\u00eale sans cesser de remuer, et d\u00e8s qu&#8217;ils commencent \u00e0 dorer, les retirer du feu et parsemer par dessus la tarte.
