Ce fut pour moi une aventure tr\u00e8s amusante que de composer des plats de f\u00eates vegan pour remplacer les classiques \u00e9puis\u00e9s que l&#8217;on retrouve chaque ann\u00e9e au moment des f\u00eates. J&#8217;aime explorer de nouveaux horizons, et j&#8217;ai pris ici le loisir d&#8217;apporter ma touche d&#8217;exotisme au menu, en commencant par des <a href=\"https:\/\/www.delscookingtwist.com\/fr\/2017\/12\/08\/caramelized-red-onions-polenta-bites-vegan-gluten-free\/\">bouch\u00e9es de polenta aux oignons caram\u00e9lis\u00e9s<\/a>, avant de poursuivre le repas par un <a href=\"https:\/\/www.delscookingtwist.com\/fr\/2017\/12\/12\/coconut-pineapple-ginger-tempeh-parmentier-vegan-gluten-free\/\">parmentier de tempeh, gingembre, noix de coco et ananas grill\u00e9<\/a>. Arrive maintenant le moment tant attendu du dessert de No\u00ebl.<\/p>\n\n\n\n<p>J&#8217;ai ici opt\u00e9 pour un g\u00e2teau de No\u00ebl plut\u00f4t qu&#8217;une b\u00fbche&#8230; tout un projet, n&#8217;est-ce pas ? Ces derni\u00e8res ann\u00e9es, la question fait d\u00e9bat avec l&#8217;envie de s&#8217;\u00e9manciper un peu des classiques vus, revus et visit\u00e9s depuis si longtemps. Alors, b\u00fbche de No\u00ebl ou g\u00e2teau de No\u00ebl ? Telle est la question. Pour ma part, j&#8217;aime toujours autant la b\u00fbche p\u00e2tissi\u00e8re tout en appr\u00e9ciant de plus en plus l&#8217;id\u00e9e d&#8217;un joli g\u00e2teau familial \u00e0 la place&#8230; Pas facile de choisir. R\u00e8gle num\u00e9ro 1 : je voulais un dessert de No\u00ebl vegan. R\u00e8gle num\u00e9ro 2 : je voulais des \u00e9pices de No\u00ebl. R\u00e8gle num\u00e9ro 3 : je le souhaitais \u00e0 la fois \u00e9l\u00e9gant, festif et rustique. Je ne vais pas vous mentir; cela fait des semaines voire des mois que je r\u00e9fl\u00e9chis \u00e0 mon dessert de No\u00ebl. Pourquoi ? Tout simplement parce que je souhaitais \u00e0 travers lui vous montrer qu&#8217;un dessert de No\u00ebl vegan peut \u00eatre aussi d\u00e9licieux et visuellement attirant qu&#8217;un dessert classique. Or, comme vous le savez, j&#8217;aime sortir des sentiers battus en cuisine, et j&#8217;ai l&#8217;intime conviction que vegan ou non vegan, il est important de diversifier son alimentation autant que possible pour des raisons \u00e0 la fois de sant\u00e9 et environnementales. D&#8217;o\u00f9 ce menu de No\u00ebl enti\u00e8rement vegan.<\/p>\n\n\n\n<p>Si l&#8217;id\u00e9e vous s\u00e9duit mais que vous ne vous sentez pas encore pr\u00eats \u00e0 franchir le pas d&#8217;un No\u00ebl vegan, commencez avec le dessert. Un dessert vegan est en effet sans doute le choix le plus simple car il est fort probable que personne ne le remarquera, notamment si vous optez pour ce gingerbread. Mais au fait, c&#8217;est quoi le gingerbread ? On serait tent\u00e9 de penser qu&#8217;il s&#8217;agit d&#8217;un pain d&#8217;\u00e9pices; or il existe quelques diff\u00e9rences entre les deux. Le pain d&#8217;\u00e9pices met en avant le miel et est r\u00e9alis\u00e9 avec de la farine de seigle. Vous aimerez aussi la douce saveur \u00e9pic\u00e9e de la cannelle associ\u00e9e au gingembre et au clou de girofle, qui apportent du caract\u00e8re et une saveur plus proche de la terre \u00e0 l&#8217;ensemble. Cette recette donne 3 g\u00e2teaux de 23 cm de diam\u00e8tre. Si vous pr\u00e9f\u00e9rez ne r\u00e9aliser qu&#8217;un seul gingerbread, il vous suffira de diviser les quantit\u00e9s par deux, \u00e0 l&#8217;exception des \u00e9pices pour lesquelles je vous conseille de conserver les m\u00eames proportions. Cela peut vous sembler beaucoup, mais les \u00e9pices jouent un r\u00f4le cl\u00e9 dans la saveur du g\u00e2teau.<\/p>\n\n\n\n<p>J&#8217;ai donc ici r\u00e9alis\u00e9 3 g\u00e2teaux s\u00e9par\u00e9s, en vue de cr\u00e9er ce &#8220;Naked Cake&#8221;, qui comme son nom l&#8217;indique, d\u00e9voile des parois presques nues, \u00e0 l&#8217;inverse d&#8217;un layer cake qui recouvrirait toutes les parois. Si vous avez un peu de temps devant vous, je vous recommande de r\u00e9aliser votre caramel vegan maison et ce, pour plusieurs raisons. Tout d&#8217;adors, je trouve que c&#8217;est beaucoup plus facile \u00e0 r\u00e9ussir qu&#8217;un caramel classique, car il ne prend pas dans le fond de la casserole (ou alors c&#8217;est moi qui ne suis pas assez bien \u00e9quip\u00e9e en termes de casserole \u00e0 double fond, mais ici il n&#8217;y en a tout simplement pas besoin). Ensuite, tout ce qu&#8217;il vous faut, c&#8217;est de la cr\u00e8me de coco, du sucre de coco (ou sucre normal) et remuer sans arr\u00eat \u00e0 feu doux jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une texture un peu aqueuse et l\u00e9g\u00e8rement colante. J&#8217;ai ici remplac\u00e9 le beurre par de la margarine vegan et du lait de coco. Le reste n&#8217;est que sucre glace et extrait de vanille, comme pour un&nbsp;gla\u00e7age classique. Vous obtenez une texture douce et cr\u00e9meuse qui s&#8217;\u00e9tale facilement par dessus les couches de g\u00e2teau et le g\u00e2teau lui m\u00eame. Si votre&nbsp;gla\u00e7age n&#8217;est pas assez lisse, rajoutez un peu de lait de coco, en tr\u00e8s petite quantit\u00e9 \u00e0 la fois, sans cesser de battre au mixeur \u00e9lectrique. Enfin, lorsque vous l&#8217;\u00e9talez sur le g\u00e2teau, souvenez-vous de bien d\u00e9couvrir les parois pour lui donner cet aspect &#8220;nu&#8221; propre au Naked Cake.<\/p>\n\n\n\n<p>La touche finale est apport\u00e9e par les cranberries au sucre. Il s&#8217;agit davantage de d\u00e9coration ici, donc c&#8217;est une \u00e9tape que vous pouvez parfaitement omettre si vous n&#8217;en avez pas le temps ou si tout simplement vous avez du mal \u00e0 mettre la main sur des cranberries fra\u00eeches (ce qui peut \u00eatre un d\u00e9fi de taille, selon o\u00f9 vous vous trouvez). Une alternative serait aussi d&#8217;utiliser des <a href=\"https:\/\/www.delscookingtwist.com\/fr\/biscuits-de-noel-aux-epices-gingerbread\/\">petits biscuits \u00e9pic\u00e9s,<\/a> selon ma recette ici pour d\u00e9corer le g\u00e2teau. Votre Naked Cake sera haut et relativement dense, si bien que vous pouvez ais\u00e9ment y d\u00e9couper 12 \u00e0 15 parts. Retirer du feu et laisser refroidir pendant 5 minutes. Verser le sirop de sucre par dessus les cranberries et bien m\u00e9langer. Laisser reposer \u00e0 temp\u00e9rature ambiante ou au r\u00e9frig\u00e9rateur pendant au moins 6 heures ou toute la nuit (id\u00e9al). Le sirop de sucre s&#8217;\u00e9paissit avec le temps.<\/li>\n<li id=\"instruction-step-2\">\u00c9goutter les cranberries et verser le reste de sucre par dessus. Bien remuer, en veillant \u00e0 ce que les cranberries soient uniform\u00e9ment recouvertes de sucre.<\/li>\n<li id=\"instruction-step-3\">Transf\u00e9rer les cranberries au sucre sur une feuille de papier sulfuris\u00e9 ou un tapis en silicone, et laisser s\u00e9cher pendant au moins 2 heures.<\/li>\n<li id=\"instruction-step-4\">POUR LES GINGERBREAD X3 : pr\u00e9chauffer le four \u00e0 180\u00b0C. Beurrer (au beurre v\u00e9g\u00e9tal) et fariner trois moules de 23 cm de diam\u00e8tre.<\/li>\n<li id=\"instruction-step-5\">Dans un blender, m\u00e9langer la m\u00e9lasse, le sirop d&#8217;\u00e9rable, la compote de pomme et l&#8217;huile de coco, jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une texture lisse et douce.<\/li>\n<li id=\"instruction-step-6\">Dans un grand saladier, m\u00e9langer la farine, le bicarbonate de soude, le sel et les \u00e9pices.<\/li>\n<li id=\"instruction-step-7\">Incorporer les ingr\u00e9dients humides aux ingr\u00e9dients secs. M\u00e9langer et ajouter l&#8217;eau chaude.<\/li>\n<li id=\"instruction-step-8\">R\u00e9partir la p\u00e2te dans les moules en trois portions \u00e9gales, et enfourner \u00e0 mi-hauteur pendant 40-45 minutes, ou jusqu&#8217;\u00e0 ce qu&#8217;une lame de couteau ins\u00e9r\u00e9e ressorte propre.<\/li>\n<li id=\"instruction-step-9\">Laisser reposer pendant 10 minutes dans les moules, puis transf\u00e9rer sur une grille jusqu&#8217;\u00e0 refroidissement complet, environ 30 minutes.<\/li>\n<li id=\"instruction-step-10\">POUR LE GLACAGE : dans un saladier, battre la margarine \u00e0 l&#8217;aide d&#8217;un batteur \u00e9lectrique jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une texture douce et cr\u00e9meuse, soit environ 1 minute. Ajouter la sauce au caramel, puis r\u00e9gler le batteur \u00e9lectrique sur vitesse r\u00e9duite, en incorporant graduellement la moiti\u00e9 du sucre. Ajouter le lait de coco et l&#8217; extrait de vanille, puis le reste du sucre glace. Lorsque le sucre glace est bien incorpor\u00e9, r\u00e9gler le mixeur sur vitesse moyenne-haute et continuer de battre jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une texture douce et cr\u00e9meuse, environ 2 \u00e0 4 minutes suppl\u00e9mentaires.<\/li>\n<li id=\"instruction-step-11\">POUR LE MONTAGE : d\u00e9poser une goutte du gla\u00e7age au centre d&#8217;un plat \u00e0 service et y poser le premier g\u00e2teau par dessus (ceci pour \u00e9viter que le g\u00e2teau ne glisse). \u00c0 l&#8217;aide d&#8217;une maryse, r\u00e9partir le gla\u00e7age de mani\u00e8re uniforme par dessus le premier g\u00e2teau. D\u00e9poser le second g\u00e2teau par dessus, et r\u00e9p\u00e9ter l&#8217;op\u00e9ration avec le gla\u00e7age. Faire chauffer \u00e0 feu doux tout en remuant afin que le sucre de coco se dissolve. Lorsque la pr\u00e9paration commencer \u00e0 bouillir, r\u00e9duire le feu au minimum et laisser mijoter 10-15 minutes. La sauce s&#8217;\u00e9paissira tout en refroidissant. Afin de tester la texture, verser une goutte de caramel sur une assiette et placer au freezer pendant quelques minutes. Si le caramel ne se fige pas, laisser mijoter un peu plus longtemps.
