Si vous \u00eates abonn\u00e9 \u00e0 ma newsletter, vous n&#8217;\u00eates pas sans savoir que mon menu de No\u00ebl n&#8217;est pas des plus traditionnels cette ann\u00e9e. Pas seulement parce qu&#8217;il est vegan, mais aussi parce que j&#8217;ai pris le loisir de jouer avec des saveurs plus exotiques, leur rempla\u00e7ant les sempiternels marrons, champignons et autres saveurs d\u00eetes &#8220;classiques&#8221; de No\u00ebl. Cela peut para\u00eetre original, mais finalement\u00a0\u00e7a ne l&#8217;est pas tant que\u00a0\u00e7a si l&#8217;on pense qu&#8217;une bonne partie de la terre passe No\u00ebl au chaud et au soleil. J&#8217;\u00e9tais r\u00e9cemment au Mexique et l&#8217;\u00e9t\u00e9 est pour moi arriv\u00e9 comme une surprise, \u00e0 seulement 3 heures de vol de Chicago !<\/p>\n<p>Au cas o\u00f9 vous avez manqu\u00e9 le d\u00e9but de ce menu de No\u00ebl vegan, il a commenc\u00e9 avec des <a href=\"https:\/\/www.delscookingtwist.com\/fr\/2017\/12\/08\/caramelized-red-onions-polenta-bites-vegan-gluten-free\/\">bouch\u00e9es de polenta aux oignons caram\u00e9lis\u00e9s<\/a>. Une mise en bouche l\u00e9g\u00e8re et originale, associant des saveurs sucr\u00e9es-sal\u00e9es. Me revoici donc aujourd&#8217;hui avec le plat principal de mon menu de No\u00ebl : un parmentier aux saveurs tropicales. L&#8217;id\u00e9e ici \u00e9tait de cr\u00e9er un plat qui saurait recr\u00e9er la texture de la viande, sans en avoir le go\u00fbt \u00e9videmment. Originaire d&#8217;Indon\u00e9sie, le tempeh est un produit alimentaire \u00e0 base de soja ferment\u00e9 qui se pr\u00e9sente sous forme compacte. Il pr\u00e9sente une haute teneur en prot\u00e9ines, en fibres, en vitamines et a, \u00e0 l&#8217;inverse du tofu, une texture ferme et un go\u00fbt prononc\u00e9, lequel s&#8217;accentue avec le temps. En raison de sa forte valeur nutritionnelle et de sa texture, le tempeh est souvent utilis\u00e9 en tant que substitut \u00e0 la viande dans le cadre d&#8217;un r\u00e9gime v\u00e9g\u00e9tarien.<\/p>\n<p>J&#8217;ai \u00e9galement souhait\u00e9 cette recette sans gluten, afin de donner ici une option suppl\u00e9mentaire \u00e0 nos amis qui pr\u00e9sentent une intol\u00e9rance au gluten. Dans sa forme ferment\u00e9e traditionnelle, le tempeh se compose de graines de soja et de vinaigre exclusivement, ce qui a priori est donc exempt de gluten. Pourtant, il semble que d&#8217;autres graines entrent tr\u00e8s souvent dans la composition du tempeh, selon les diff\u00e9rentes marques et compagnies, et parmi ces graines, certaines contiennent du gluten. J&#8217;aurais d&#8217;ailleurs parfaitement pu opter pour un autre ingr\u00e9dient \u00e0 la place, notamment le <a href=\"http:\/\/sante-medecine.journaldesfemmes.com\/faq\/23719-seitan-definition\">seitan<\/a>, qui donnerait des r\u00e9sultats relativement proches du tempeh (pour une version avec gluten toutefois). Un autre ingr\u00e9dient que j&#8217;aime tout particuli\u00e8rement pour sa texture bluffante s&#8217;apparentant \u00e0 de la viande effil\u00e9e est le jacquier, ou <em>jackfruit<\/em> en anglais (oui, un fruit!). La seule raison pour laquelle je n&#8217;ai pas opt\u00e9 pour le jacquier ici s&#8217;explique par mon d\u00e9sir de rendre cette recette accessible au plus grand nombre, or le tempeh se trouve facilement en magasins bio et pas seulement, tandis que le jacquier se fait encore rare.<\/p>\n<p>Pour ce qui est de la pr\u00e9paration du tempeh (ou du seitan, ou encore du jacquier, selon ce que vous choisirez), rien de plus simple. J&#8217;ai simplement marin\u00e9 le tempeh &#8211; pr\u00e9alablement coup\u00e9 en tout petits morceaux &#8211; dans une sauce soja-gingembre, avec un peu d&#8217;ail pour un go\u00fbt encore plus prononc\u00e9. Vous pouvez laisser mariner pendant une heure si vous avez peu de temps devant vous, l&#8217;id\u00e9al \u00e9tant cependant de laisser mariner durant toute une nuit pour que le tempeh s&#8217;impreigne bien de la marinade. Au moment d&#8217;extraire la marinade, pensez \u00e0 bien la conserver, puisqu&#8217;elle resservira pour les tranches d&#8217;ananas \u00e0 faire griller. Le lait de coco\/cr\u00e8me de coco ne permettant pas de donner suffisamment le go\u00fbt de la noix de coco \u00e0 la pur\u00e9e, j&#8217;ai pris le loisir d&#8217;y ajouter de la noix de coco r\u00e2p\u00e9e que j&#8217;ai en outre mix\u00e9e au robot mixeur de telle sorte \u00e0 obtenir une texture sableuse. Tout simple \u00e0 faire, cette pur\u00e9e de noix de coco apporte un petit plus \u00e0 l&#8217;ensemble, se mariant \u00e0 merveille avec l&#8217;ananas.<\/p>\n<p>Afin de dresser mon plat, j&#8217;ai ici utilis\u00e9 un emporte pi\u00e8ce pour un rendu final plus sophistqu\u00e9 qui sied aux f\u00eates de fin d&#8217;ann\u00e9es. Cependant vous pouvez parfaitement r\u00e9aliser la recette dans un plat \u00e0 gratin, comme pour un parmentier classique, en commencant par une couche de tranches d&#8217;ananas, une de tempeh, et une de pur\u00e9e. Servez accompagn\u00e9 d&#8217;un peu de salade m\u00e2che. menu dans un bol en verre. Dans un autre bol, fouetter ensemble la sauce soja, le sucre, l&#8217;ail et le gingembre. Verser par dessus le tempeh et bien m\u00e9langer. Couvrir et placer au r\u00e9frig\u00e9rateur 1 heure minimum, en remuant au moins une fois entre temps.<\/li>\n<li id=\"instruction-step-2\">Pour la pur\u00e9e de pomme de terre et coco : faire cuire les pommes de terre dans un large volume d&#8217;eau sal\u00e9, jusqu&#8217;\u00e0 ce qu&#8217;elles soient bien tendres. \u00c9goutter et r\u00e9duire en pur\u00e9e. Ajouter la cr\u00e8me de coco (partie solide d&#8217;une bo\u00eete de lait de coco). Mixer la noix de coco r\u00e2p\u00e9e au robot mixeur jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une texture proche de la farine, puis incorporer \u00e0 la pur\u00e9e de pommes de terre. Saler, poivrer, et bien m\u00e9langer.<\/li>\n<li id=\"instruction-step-3\">Pr\u00e9lever le tempeh tout en conservant la marinade.<\/li>\n<li id=\"instruction-step-4\">Pour l&#8217;ananas : foncer une plaque allant au four de papier sulfuris\u00e9. Y d\u00e9poser les tranches d&#8217;ananas, le reste de marinade, et faire friller \u00e0 200\u00b0C pendant 5-8 minutes, jusqu&#8217;\u00e0 ce que l&#8217;ananas soit grill\u00e9. Retourner les tranches et faire griller de l&#8217;autre c\u00f4t\u00e9. Retirer du four et r\u00e9server.<\/li>\n<li id=\"instruction-step-5\">Faire chauffer l&#8217;huile dans une po\u00eale, et une fois l&#8217;huile bien chaude, ajouter le tempeh marin\u00e9 (sans la marinade). Faire sauter jusqu&#8217;\u00e0 ce qu&#8217;il prenne une couleur dor\u00e9e.<\/li>\n<li id=\"instruction-step-6\">\u00c0 l&#8217;aide d&#8217;un emporte pi\u00e8ce, dresser les tranches d&#8217;ananas dans le fond, puis recouvrir d&#8217;une couche de tempeh saut\u00e9, et enfin recouvrir de la pur\u00e9e de noix de coco.
