Sans \u00eatre vegan moi m\u00eame, je fais toutefois la part belle aux plats v\u00e9g\u00e9taliens dans mon alimentation et essaie de r\u00e9duire ma consommation de produits animaux autant que possible. Et il en est de m\u00eame pour David, notamment depuis qu&#8217;il a regard\u00e9 le documentaire &#8220;What the Health&#8221; sur Netflix. L&#8217;avez-vous vu ? Pour ma part, je l&#8217;avais regard\u00e9 il y a quelques mois avec l&#8217;\u00e9quipe Best Of You lors de mon dernier voyage \u00e0 Stockholm. Sans avoir compl\u00e8tement adh\u00e9r\u00e9 au ton du film personnellement, je reconnais qu&#8217;il soul\u00e8ve des probl\u00e9matiques int\u00e9ressantes concernant l&#8217;industrie agroalimentaire actuelle, qu&#8217;il convient de repenser dans son ensemble pour notre sant\u00e9 et le bien \u00eatre de la plan\u00e8te.<\/p>\n<p>Dans cette logique, je pense qu&#8217;il est important de recr\u00e9er de nouvelles habitudes alimentaires et traditions autour de plats \u00e0 base de plantes. Un No\u00ebl vegan ? Pourquoi pas apr\u00e8s tout ! Soyons avant-gardistes et n&#8217;ayons pas peur du changement. Qui sait, peut \u00eatre que dans quelques dizaines d&#8217;ann\u00e9es un No\u00ebl traditionnel sera un No\u00ebl vegan. Je suis heureuse d&#8217;apporter ma pierre \u00e0 l&#8217;\u00e9difice cette ann\u00e9e en composant un menu de No\u00ebl vegan en trois plats (entr\u00e9e, plat, dessert). La mienne sera \u00e0 base de polenta. Ou plut\u00f4t de bouch\u00e9es de polenta pour \u00eatre exacte. Avez-vous d\u00e9j\u00e0 pr\u00e9par\u00e9 de la polenta chez vous ? C&#8217;est simple comme un jeu d&#8217;enfant. R\u00e9alis\u00e9e avec de la farine de ma\u00efs et du lait (lait de coco entier ici pour cette version vegan), cela ressemble \u00e0 une sorte de porridge \u00e9pais une fois cuit, avec une texture cr\u00e9meuse et l\u00e9g\u00e8rement collante.<\/p>\n<p>Rien de compliqu\u00e9 dans la cuisson de la polenta ; il suffit de bien penser \u00e0 1\/ bien saler d\u00e8s le d\u00e9but au risque que la polenta ne soit fade, et 2\/ remuer souvent pour \u00e9viter que des grumeaux ne se forment. La polenta se d\u00e9guste cr\u00e9meuse accompagn\u00e9e de l\u00e9gumes r\u00f4tis par exemple, ou bien comme ici en bouch\u00e9es, une version un peu plus rare et un peu plus sophistiqu\u00e9e aussi. Pour obtenir des bouch\u00e9es comme ici, \u00e9taler la polenta fra\u00eechement cuite sur une plaque allant au four r\u00e9hauss\u00e9e de papier sulfuris\u00e9 huil\u00e9 en couche assez \u00e9paisse. Vous pouvez aussi la verser dans un petit plat (huil\u00e9) carr\u00e9 pour vous assurer que vous obtenez la bonne \u00e9paisseur, soit environ 1.30 cm. Enfournez ensuite \u00e0 220\u00b0C pendant 25 minutes environ. Mon conseil : les cuire jusqu&#8217;\u00e0 ce qu&#8217;ils soient bien tendres, tout en conservant une l\u00e9g\u00e8re couleur mauve pour un plus joli r\u00e9sultat au moment du service. J&#8217;ai ici ajout\u00e9 quelques tomates s\u00e9ch\u00e9es qui contrastent avec la douceur des oignons. Pour la touche croustillante, j&#8217;aime parsemer quelques pignons de pin par dessus, mais cela reste parfaitement optionnel.<\/p>\n<p>Sortez la polenta du four et laissez-la refroidir l\u00e9g\u00e8rement, le temps que la polenta se fige bien. D\u00e9coupez ensuite des parts \u00e9gales ou de jolis cercles comme ici en utilisant un emporte pi\u00e8ce. Si vous optez pour cette derni\u00e8re option vous aurez des restes de polenta ci et l\u00e0. Pour \u00e9viter de les jeter, d\u00e9coupez les en cubes et servez-les par dessus une salade. Baisser le feu au minimum en fouettant souvent jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une texture \u00e9paisse s&#8217;apparentant \u00e0 du porridge \u00e9pais, environ 10-15 minutes. Incorporer une cuill\u00e8re \u00e0 soupe d&#8217;huile et bien m\u00e9langer la polenta ainsi obtenue.<\/li>\n<li id=\"instruction-step-3\">Verser la polenta sur la plaque ou dans le plat et \u00e9taler en une couche \u00e9paisse de 1,5 cm d&#8217;\u00e9paisseur environ. Saler et poivrer.<\/li>\n<li id=\"instruction-step-4\">Couvrir le cornmeal de film alimentaire et laisser refroidir au r\u00e9frig\u00e9rateur jusqu&#8217;\u00e0 ce qu&#8217;il se fige, au minimum 1 heure.<\/li>\n<li id=\"instruction-step-5\">Pr\u00e9chauffer le four \u00e0 220\u00b0C et une fois la temp\u00e9rature atteinte y enfourner la polenta pendant 25-30 minutes, jusqu&#8217;\u00e0 ce qu&#8217;elle commence \u00e0 dorer sur les bords et au dessus.<\/li>\n<li id=\"instruction-step-6\">Pendant ce temps, pr\u00e9parer les oignons : faire suer les oignons dans la margarine jusqu&#8217;\u00e0 ce qu&#8217;ils deviennent presque translucides. Ajouter le sucre, m\u00e9langer et laisser cuire pendant 5 minutes \u00e0 feu moyen. Verser le vin blanc et laisser r\u00e9duire aux deux tiers. Ajouter le vinaigre balsamique et r\u00e9duire de nouveau. Jeter les tomates s\u00e9ch\u00e9es et m\u00e9langer. Retirer du feu, saler et poivrer.<\/li>\n<li id=\"instruction-step-7\">Assembler les bouch\u00e9es de polenta : d\u00e9couper la polenta cuite en parts ou \u00e0 l&#8217;aide d&#8217;un emporte pi\u00e8ce pour faire de jolis cercles.
