Les soupes et autres sortes de curry sont souvent des incontournables de la longue saison automnale et hivernale. On les aime nourissants, riches en saveurs, et sains autant que possibles. Je recommande aussi l&#8217;utilisation d&#8217;ingr\u00e9dients de saison. Les l\u00e9gumes racines, les courges et tous types de noix sont ceux que l&#8217;on retrouve le plus souvent.<\/p>\n<p>Le souci, c&#8217;est que l&#8217;on a pas envie de cuisiner toujours la m\u00eame chose. Or, bien souvent on a une ou deux recettes en t\u00eate par ingr\u00e9dient (soupe de courge par exemple), que l&#8217;on pr\u00e9pare encore et encore, jusqu&#8217;\u00e0 ce qu&#8217;on s&#8217;en lasse. Je ne vous bl\u00e2me pas, j&#8217;ai beau \u00eatre blogueuse culinaire, je suis exactement comme vous, et il se trouve que cela est parfaitement normal ; nous avons tous nos priorit\u00e9s dans la vie. Ajoutez \u00e0 cela quelques oignons et poireaux fondus, et un assaisonnement simple de sel et de poivre fra\u00eechement moulu et vous obtenez une soupe \u00e0 la fois nourrissante et parfaitement saine. Proc\u00e9dez comme suit au moment de servir : versez la soupe dans les bols, ajoutez un filet d&#8217;huile d&#8217;olive et parsemez d&#8217;une poign\u00e9e de granola. L&#8217;ensemble forme une entr\u00e9e des plus \u00e9l\u00e9gantes et raffin\u00e9es qui sera parfaite pour les f\u00eates notamment. Vos invit\u00e9s seront ravis !<\/p>\n<p>Notez si la soupe est vegan, le granola lui ne l&#8217;est pas. Si vous \u00eates vegan vous m\u00eame, vous pouvez n\u00e9anmoins remplacer le blanc d&#8217;oeuf avec de l&#8217;aquafaba (le liquide que l&#8217;on trouve dans les bo\u00eetes de pois chiches). Utilisez alors 80 ml d&#8217;aquafaba et m\u00e9langez avec l&#8217;huile et le sirop d&#8217;agave. Ajoutez les noix et proc\u00e9dez comme pour la version classique. Vous pouvez \u00e9galement remplacer l&#8217;aquafaba par des graines de lin moulues. Dans ce cas, utilisez une cuill\u00e8re et demie de graines de lin moulues et m\u00e9langez-les avec 60 ml d&#8217;eau. Vous n&#8217;obtiendrez certes pas une texture aussi croustillante qu&#8217;avec le granola sal\u00e9 mais ajouterez malgr\u00e9 tout un petit plus \u00e0 votre soupe. Porter \u00e0 \u00e9bullition, puis baisser le feu au minimum et laisser mijoter pendant 40-50 minutes.<\/li>\n<li id=\"instruction-step-3\">Mixer au mixeur plongeant, en ajoutant plus d&#8217;eau si besoin. La soupe doit \u00eatre lisse et onctueuse. Saler et ajouter un tour de poivre du moulin.<\/li>\n<li id=\"instruction-step-4\">Pour le granola : pr\u00e9chauffer le four \u00e0 180\u00b0C et recouvrir une plaque allant au four de papier sulfuris\u00e9.<\/li>\n<li id=\"instruction-step-5\">Dans un saladier, m\u00e9langer ensemble les flocons d&#8217;avoine, noix, noix de cajou, graines de courge, de s\u00e9same, de fenouil, le chili en poudre et s\u00e9ch\u00e9. Ajouter le blanc d&#8217;oeuf, l&#8217;huile d&#8217;olive et le sirop d&#8217;agave. Bien m\u00e9langer.<\/li>\n<li id=\"instruction-step-6\">Verser la mixture ainsi obtenue sur la plaque et enfourner pendant 20-30 minutes, en m\u00e9langeant deux ou trois fois. Retirer du four lorsque le granola commence \u00e0 dorer.<\/li>\n<li id=\"instruction-step-7\">Laisser refroidir compl\u00e8tement sur la plaque, puis servir directement sur la soupe. Si vous \u00eates vegan, vous pouvez n\u00e9anmoins modifier la version du granola comme suit :<\/p>\n<p>1\/ remplacer le blanc d&#8217;oeuf par de l&#8217;aquafaba (liquide d&#8217;une bo\u00eete de pois chiches). Utiliser 80 ml d&#8217;aquafaba et m\u00e9langer avec l&#8217;huile et le sirop d&#8217;agave.<br \/>Ajouter toutes les noix et graines, et bien m\u00e9langer. Proc\u00e9der ensuite selon les instructions de la recette.<\/p>\n<p>2\/ utiliser des graines de lin moulues. Dans ce cas, utiliser 1 1\/2 cuil. \u00e0 soupe de graines de lin moulues, m\u00e9lang\u00e9es avec 60 ml d&#8217;eau, et laisser reposer pendant environ 5 minutes.
