Le curry est un plat g\u00e9n\u00e9reux, facile \u00e0 pr\u00e9parer et souvent tr\u00e8s flexible. Il vous suffit de partir de la base (le m\u00e9lange d&#8217;\u00e9pices, le lait de coco) puis d&#8217;adapter ensuite la recette \u00e0 votre guise en fonction de vos envies ou des ingr\u00e9dients que vous avez \u00e0 disposition. Le curry aide aussi \u00e0 r\u00e9duire les sympt\u00f4mes de la maladie d&#8217;Alzheimer, soulage les douleurs et les inflammations et prot\u00e8ge le syst\u00e8me immunitaire des infections bact\u00e9riales. Parfois, il vous faudra toutefois ajouter un peu de texture liquide et en l&#8217;occurrence ici du lait de coco pour ajuster la texture cr\u00e9meuse du plat.<\/p>\n<h2>Comment pr\u00e9parer un curry vegan ?<\/h2>\n<p>Il est relativement facile de pr\u00e9parer un curry vegan, puisqu&#8217;il vous suffit de jouer de votre imagination pour y glisser les l\u00e9gumes de votre choix au gr\u00e9 des saisons. Notez qu&#8217;en fonction du temps dont vous disposez avant le diner, vous pouvez faire cuire les pois chiches ou bien opter pour une bo\u00eete de pois chiches pour aller plus vite. Une petite astuce dans un cas comme dans l&#8217;autre consiste \u00e0 pr\u00e9lever l&#8217;eau de cuisson ou de la bo\u00eete (ce que l&#8217;on appelle aussi aquafaba) et de l&#8217;utiliser pour r\u00e9aliser de d\u00e9licieuses <a href=\"https:\/\/www.delscookingtwist.com\/fr\/2017\/02\/14\/vegan-chocolate-mousse-with-whipped-coconut-cream-made-with-aquafaba\/\">mousses au chocolat vegan<\/a> pour le dessert. Vous verrez, c&#8217;est magique. Je raffole des aubergines et ne manque jamais d&#8217;id\u00e9es pour les glisser dans mes recettes. Pr\u00e9par\u00e9es avec un peu d&#8217;huile d&#8217;olive, elle sont tendre, douce, et abhorrent une texture riche et nourrissante. Dans ma recette, je les utilise coup\u00e9es en d\u00e9s mais il m&#8217;arrive aussi de les couper en rondelles \u00e0 la place. Entre les deux, \u00e0 vous de choisir !<\/p>\n<p>Associ\u00e9es aux pois chiches, les aubergines apportent une texture int\u00e9ressante \u00e0 ce curry, le tout dans une sauce cr\u00e9meuse \u00e0 base de lait de coco. Tandis que les aubergines constituent une excellente source de fibres, les pois chiches sont riches en prot\u00e9ines, et font de ce curry un plat vegan complet et nourrissant tout en \u00e9tant parfaitement sain. J&#8217;aime servir mon curry avec du riz basmati et l&#8217;accompagner d&#8217;un peu de coriandre fra\u00eeche&#8230; avec un petit verre de blanc si vous le souhaitez !<\/p>\n<p><img
