L&#8217;\u00e9vocation seule de ce plat me ram\u00e8ne en Isra\u00ebl o\u00f9 j&#8217;\u00e9tais en mai dernier pour le mariage d&#8217;amis, un s\u00e9jour dont je garde un souvenir tr\u00e8s agr\u00e9able. Ensemble avec tous les invit\u00e9s du mariage, nous \u00e9tions log\u00e9s dans une &#8220;camplodge&#8221; plusieurs jours avant le mariage, o\u00f9 nous vivions en communaut\u00e9 de mani\u00e8re assez rustique et le plus souvent en ext\u00e9rieur, ce mode de vie \u00e9tant facilit\u00e9 par un temps d\u00e9j\u00e0 tr\u00e8s chaud au bord de la mer morte en ce d\u00e9but de saison.<\/p>\n<p>J&#8217;ai toujours aim\u00e9 les vacances simples et en pleine nature, qui permettent d&#8217;appr\u00e9cier les choses basiques de la vie, comme se pr\u00e9parer \u00e0 manger au feu de bois par exemple. Je ne rechine pas sur les hotels et les bons restaus \u00e9videmment, mais le fait d&#8217;\u00eatre loin du confort permet de se recentrer sur l&#8217;essentiel et d&#8217;appr\u00e9cier des plats simples r\u00e9alis\u00e9s avec quelques ingr\u00e9dients et pr\u00e9par\u00e9s avec amour. \u00c0 Neot Hakikar, au bord de la mer morte, j&#8217;ai eu la chance de go\u00fbter une shakshuka exceptionnelle pour un petit d\u00e9jeuner autour d&#8217;une grande tabl\u00e9e en ext\u00e9rieur. Je me souviens avoir attrap\u00e9 un pain pita \u00e0 la vol\u00e9e avant que l&#8217;un de mes amis d&#8217;Isra\u00ebl ne m&#8217;arr\u00eate imm\u00e9diatement. J&#8217;avais commis l&#8217;impair de la shakshuka ! Il y a tout un rituel \u00e0 respecter pour ceux qui s&#8217;y connaissent. J&#8217;aime ce rapport sacr\u00e9 aux plats que l&#8217;on pr\u00e9pare et me suis fait un plaisir de d\u00e9couvrir la bonne mani\u00e8re de savourer sa shakshuka. Tout d&#8217;abord, on prend un pain pita et on le coupe en deux sur la tranche afin d&#8217;en faire un pita pocket ; ensuite on le garnit de tahini, de shakshuka, d&#8217;un peu de salade comcobre-tomates-oignons rouges, on ajoute un dernier filet de tahini et on recouvre de coriandre fra\u00eeche. Un r\u00e9gal !<\/p>\n<p>La shakshuka \u00e9tant un plat national en Isra\u00ebl (pour en savoir plus sur l&#8217;origine de la shakshuka, allez voir mon article <a href=\"https:\/\/www.delscookingtwist.com\/fr\/2017\/04\/21\/shakshuka-with-feta-cheese\/\">ici<\/a>), j&#8217;ai eu l&#8217;occasion d&#8217;en tester d&#8217;autres versions pendant mon s\u00e9jour. Au restaurant, elles sont servies dans des po\u00eales en fonte individuelles. L&#8217;assaisonnement rendait l&#8217;ensemble tr\u00e8s savoureux, mais il manquait quelques prot\u00e9ines v\u00e9g\u00e9tales \u00e0 ce plat \u00e0 mon go\u00fbt. C&#8217;est pourquoi, une fois rentr\u00e9e \u00e0 Chicago, je me suis attel\u00e9e \u00e0 travailler ma propre version d&#8217;une shakshuka vegan.<\/p>\n<p>Lors de mon dernier s\u00e9jour \u00e0 New York, j&#8217;ai pu go\u00fbter des oeufs brouill\u00e9s \u00e0 base de tofu chez <a href=\"https:\/\/eatbychloe.com\/menus\/\">Chlo\u00e9<\/a> (un restaurant v\u00e9g\u00e9talien que je vous recommande au passage). De mani\u00e8re assez surprenante, on retrouve la texture des oeufs brouill\u00e9s, ce qui m&#8217;a beaucoup plu. Le tofu \u00e9tant une bonne source de prot\u00e9ines, j&#8217;ai alors naturellement remplac\u00e9 les oeufs par du tofu soyeux que j&#8217;ai brouill\u00e9 l\u00e9g\u00e8rement. Si vous n&#8217;\u00eates pas vegan, vous pouvez ajouter des oeufs, ou encore de la feta. Quel que soit votre choix, souvenez-vous que la shakshuka est une question d&#8217;assaisonnement, avec le bon ajustement d&#8217;\u00e9pices.
