Mon pr\u00e9f\u00e9r\u00e9 de tous les temps est sans aucun doute le\u00a0<a href=\"https:\/\/www.delscookingtwist.com\/fr\/2014\/03\/08\/pecan-brownie-cheesecake\/\">Brownie cheesecake aux noix de p\u00e9can<\/a>, suivi de pr\u00e8s par le <a href=\"https:\/\/www.delscookingtwist.com\/2015\/11\/01\/salted-caramel-apple-cheesecake\/\">Cheesecake aux pommes au caramel au beurre sal\u00e9<\/a>\u00a0et le\u00a0<a href=\"https:\/\/www.delscookingtwist.com\/2015\/01\/07\/lactose-free-saffron-cheesecake\/\">Cheesecake au safran (sans lactose)<\/a>\u00a0pour une version de luxe. Beaucoup d&#8217;entre vous sont \u00e9galement compl\u00e8tement fans du\u00a0<a href=\"https:\/\/www.delscookingtwist.com\/2015\/07\/09\/honey-lavender-cheesecake\/\">Cheesecake au miel et \u00e0 la lavande<\/a>, subtilement parfum\u00e9 \u00e0 la lavande et avec une texture d&#8217;une douceur imparable. Un <em>must try<\/em>!<\/p>\n<p>Ces derni\u00e8res ann\u00e9es, j&#8217;ai explor\u00e9 d&#8217;autres horizons en testant des recettes de cheesecakes compl\u00e8tement diff\u00e9rentes, crues, vegan et sans gluten. Ce qui \u00e9tait au d\u00e9part est vite devenu une v\u00e9ritable obsession car ces cheesecakes sont absolument d\u00e9licieux ! Surtout, ne vous attendez pas \u00e0 d\u00e9guster un cheesecake ordinaire mais voyez plut\u00f4t cela comme une exp\u00e9rience. Je suis alors pr\u00eate \u00e0 parier que vos papilles en seront enchant\u00e9es. Le quoi ? Le yuzu est en r\u00e9alit\u00e9 un fruit, et plus exactement un agrume acide qui nous vient tout droit d&#8217;Asie. Originaire de Chine centrale et du Tibet o\u00f9 il pousse sauvagement, il fut par la suite introduit au Japon et en Cor\u00e9e. C&#8217;est dans ces deux pays qu&#8217;il est d\u00e9sormais cultiv\u00e9 en masse. Le fruit lui m\u00eame ressemble \u00e0 un petit pamplemousse avec une peau un peu rugueuse, et peut \u00eatre soit jaune soit vert, en fonction de son degr\u00e9 de maturit\u00e9.<\/p>\n<p>L&#8217;utilisation du yuzu en cuisine est toutefois quelque peu diff\u00e9rente de celle d&#8217;un agrume ordinaire, puisque le yuzu est en fait rarement consomm\u00e9 comme un fruit, en raison de son aigreur assez prononc\u00e9e. Pour cette raison, il est bien plus souvent utilis\u00e9 pour son zeste ou en jus que l&#8217;on utilise pour assaisonner des plats au Japon. Saviez-vous que le yuzu \u00e9tait aussi utilis\u00e9 par de nombreuses brasseries et entre ainsi dans la composition de nombres de bi\u00e8res ? J&#8217;ai recu cette poudre de yuzu de ma belle-soeur il y a un petit moment de cela (merci AL!) et je l&#8217;ai depuis gard\u00e9e pr\u00e9cieusement pour l&#8217;utiliser\u00a0dans un dessert sp\u00e9cial. Elle s&#8217;en \u00e9tait procur\u00e9 elle m\u00eame dans le petit magasin\u00a0<a href=\"https:\/\/www.desepicesamaguise.com\/\">Des \u00e9pices \u00e0 ma guise<\/a>, qui est bas\u00e9 \u00e0 Ancenis en France &#8211; cet endroit est un petit paradis pour tous les amoureux de th\u00e9, de caf\u00e9 et d&#8217;\u00e9pices, et je vous invite d&#8217;ailleurs \u00e0 aller consulter leur webshop si vous recherchez des produits de qualit\u00e9.<\/p>\n<p>Dans ce cheesecake, le yuzu apporte une d\u00e9licate saveur d&#8217;agrumes \u00e0 l&#8217;ensemble, renforcant la pr\u00e9sence de zestes de citron utilis\u00e9e dans la base du cheesecake. Au final, vous obtenez un \u00e9quilibre parfait entre un peu de croquant apport\u00e9 par les noix de cajou et les amandes pr\u00e9sentes dans la base du cheesecake, et une texture douce et onctueuse cr\u00e9\u00e9e par ce m\u00e9lange cr\u00e9meux de coco et de cajou. Le yuzu apporte un petit quelque chose \u00e0 l&#8217;ensemble qui place ce dessert dans un niveau sup\u00e9rieur !<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-26804\" d\u00e9poser dans un petit saladier, recouvrir d&#8217;eau filtr\u00e9e et laisser tremper toute la nuit ou au moins 4 heures. \u00c9goutter et rincer les noix de cajou \u00e0 l&#8217;eau claire.<\/li>\n<li id=\"instruction-step-2\">Foncer un moule rectangulaire de 20&#215;25 cm (ou rond de 23 cm de diam\u00e8tre) de papier sulfuris\u00e9. R\u00e9server.<\/li>\n<li id=\"instruction-step-3\">Pour la base : faire fondre l&#8217;huile de coco quelques secondes au micro-ondes. Verser la noix de coco r\u00e2p\u00e9e, les noix de cajou (celles qui n&#8217;ont pas \u00e9t\u00e9 tremp\u00e9es), les amandes et le sel dans un robot mixeur et mixer jusqu&#8217;\u00e0 ce que l&#8217;ensemble forme une p\u00e2te granuleuse. Ajouter l&#8217;huile de coco, le zeste de citron et mixer.<\/li>\n<li id=\"instruction-step-4\">Foncer le fond du moule de cette pr\u00e9paration et le placer au r\u00e9frig\u00e9rateur.<\/li>\n<li id=\"instruction-step-5\">Pour la garniture : verser les noix de cajou tremp\u00e9es, \u00e9goutt\u00e9es et rinc\u00e9es dans un robot mixeur avec le jus de citron, le zeste de citron, le lait de coco, le sirop d&#8217;\u00e9rable et le sel. Mixer jusqu&#8217;\u00e0 ce que l&#8217;ensemble forme une p\u00e2te lise. Incorporer la poudre de yuzu. Ajouter l&#8217;huile de coco fondue tout en continuant de mixer fin d&#8217;obtenir une consistance parfaitement lisse et douce.<\/li>\n<li id=\"instruction-step-6\">Verser la garniture par dessus la base du cheesecake, aplatir le dessus avec une spatule et d\u00e9poser au freezer pendant au minimum 1 heure.
