Lorsque j&#8217;\u00e9tais enfant, la fa\u00e7on de le consommer \u00e9tait la plupart du temps cuit \u00e0 l&#8217;eau et accompagn\u00e9 d&#8217;une vinaigrette ou d&#8217;une sauce b\u00e9chamel. D&#8217;un tel ennui&#8230; Et pourtant, pour une raison que je ne m&#8217;explique pas, j&#8217;ai toujours ador\u00e9 le chou-fleur. Je dois \u00eatre vraiment bizarre ! Ces derni\u00e8res ann\u00e9es cependant, j&#8217;ai d\u00e9couvert de nouvelles\u00a0fa\u00e7ons de l&#8217;accommoder et le cuisiner qui le rendent tr\u00e8s savoureux, au point de faire changer d&#8217;avis tous ses d\u00e9tracteurs.\u00a0Oui, rien que\u00a0\u00e7a !<\/p>\n<h2>Le chou-fleur dans tous ses \u00e9tats<\/h2>\n<p>Parmi ces recettes, il y a bien s\u00fbr celle qui a le vent en poupe depuis quelques temps : le riz de chou-fleur (\u00e9galement appel\u00e9 semoule ou tabouleh de chou-fleur), consistant \u00e0 r\u00e9duire le chou-fleur en une consistance sableuse \u00e0 l&#8217;aide d&#8217;un\u00a0robot mixeur.<\/p>\n<p>Ma recette pr\u00e9f\u00e9r\u00e9e pour appr\u00e9cier le riz de chou-fleur est mon <a href=\"https:\/\/www.delscookingtwist.com\/fr\/2016\/09\/27\/vegan-chickpea-curry-with-cauliflower-rice-gluten-free\/\">curry de pois chiches<\/a>. Dans cette recette, il suffit simplement de remplacer le riz par le riz de chou-fleur. Et saviez-vous que l&#8217;on peut aussi r\u00e9aliser une pizza avec du chou-fleur ? Par curiosit\u00e9, allez voir ma <a href=\"https:\/\/www.delscookingtwist.com\/fr\/2016\/04\/21\/veggie-beet-pizza-with-a-cauliflower-crust-gluten-free\/\">pizza veggie et son pesto de betterave sur fond de p\u00e2te au chou-fleur<\/a>, vous serez surpris. Je suis aussi compl\u00e8tement dingue du chou-fleur r\u00f4ti avec du citron, technique que j&#8217;utilise \u00e0 la fois dans mes <a href=\"https:\/\/www.delscookingtwist.com\/fr\/2017\/01\/17\/roasted-lemon-cauliflower-halloumi-pita-pockets-with-a-vegan-aioli\/\">pains pita garnis de chou-fleur au citron, halloumi et aioli vegan<\/a> et dans mon <a href=\"https:\/\/www.delscookingtwist.com\/fr\/2017\/01\/24\/roasted-cauliflower-hummus-and-pita-chips\/\">hummus de chou-fleur et chips de pain pita<\/a>. De mani\u00e8re g\u00e9n\u00e9rale, la cuisson du chou-fleur au four est l&#8217;une de mes pr\u00e9f\u00e9r\u00e9es, je l&#8217;utilise aussi pour mes <a href=\"https:\/\/www.delscookingtwist.com\/fr\/steaks-de-chou-fleur-et-sauce-epicee-harissa-tahini-vegan-sans-gluten\/\">Steaks de chou-fleur et sauce \u00e9pic\u00e9e harissa-tahini (vegan, sans gluten)<\/a>\u00a0ainsi que dans ce <a href=\"https:\/\/www.delscookingtwist.com\/fr\/crumble-de-chou-fleur-et-panais-aux-noisettes\/\">Crumble de chou-fleur et panais aux noisettes<\/a>. Or, il y a quelques jours, j&#8217;ai trouv\u00e9 dans la version imprim\u00e9e\u00a0du magazine <a href=\"https:\/\/www.bonappetit.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Bon Appetit<\/a> une autre recette \u00e0 base de chou-fleur qui a imm\u00e9diatement retenu mon attention. Je n&#8217;ai pas pu r\u00e9sister, il m&#8217;a fallu tester et le plat m&#8217;a tellement plu que je me suis simplement d\u00e9cid\u00e9e \u00e0 le partager avec vous ici, mes chers lecteurs, car je sais qu&#8217;il vous plaira aussi.<\/p>\n<h2>Des steacks de chou-fleur<\/h2>\n<p>Ici, le chou-fleur n&#8217;est pas un accompagnement mais bien plut\u00f4t l&#8217;ingr\u00e9dient principal et bient\u00f4t m\u00eame l&#8217;unique ingr\u00e9dient du plat. Eh oui, avec un seul chou-fleur, on peut cr\u00e9er toute une variation autour de ce l\u00e9gume en jouant avec le contraste des textures. Par dessus une petite\u00a0pur\u00e9e de chou-fleur et de tahini au citron, on d\u00e9pose ainsi un steak de chou-fleur grill\u00e9. Ici, la partie centrale est d\u00e9coup\u00e9e en deux larges steaks, tandis que les parties arrondies sur le bord ainsi que la tige plus dure et les feuilles tendres sont r\u00e9duites en pur\u00e9e (on \u00e9vitera ici d&#8217;utiliser les feuilles les plus dures). Avec un seul et m\u00eame chou-fleur, nous voici donc avec un plat principal pour deux !<\/p>\n<p>Ne vous m\u00e9prenez pas toutefois, ce n&#8217;est pas parce qu&#8217;il y a un seul ingr\u00e9dient &#8211; ou presque &#8211; que l&#8217;on parle d&#8217;une recette de tous les jours juste bonne \u00e0 utiliser les restes. Avec ce plat, vous obtenez \u00e0 l&#8217;inverse quelque chose d&#8217;\u00e9l\u00e9gant que vous vous verriez plut\u00f4t servi dans un restaurant moderne ax\u00e9 cuisine fusion. Maintenant, la question que vous vous posez certainement : mais est-ce que ce plat constitu\u00e9 exclusivement de l\u00e9gumes est pour autant nourrissant ? Ne ressort-on pas de table avec la faim au ventre ? En r\u00e9alit\u00e9, gr\u00e2ce \u00e0 sa texture un peu filandreuse, le steak de chou-fleur s&#8217;apparente quelque peu \u00e0 de la viande. Si toutefois vous n&#8217;avez pas d&#8217;allergie particuli\u00e8re, je vous recommande de servir le tout avec une tranche de pain de campagne l\u00e9g\u00e8rement grill\u00e9e, garnie d&#8217;un peu d&#8217;ail et un filet d&#8217;huile d&#8217;olive. \u00c0 d\u00e9guster avec un verre de vin blanc de type Chardonnay ou Pinot gris.<\/p>\n<svg aria-hidden=\"true\" style=\"position: Couper la partie arrondie de chaque pi\u00e8ce de telle sorte \u00e0 cr\u00e9er deux larges steaks d&#8217;environ 3 cm d&#8217;\u00e9paisseur. Couper grossi\u00e8rement les florets restants et les r\u00e9server pour r\u00e9aliser la pur\u00e9e de chou-fleur.<\/li>\n<li id=\"instruction-step-3\">Pour les steaks de chou-fleur : faire chauffer l&#8217;huile dans une large po\u00eale sur feu moyen. Faire cuire sur chaque face, en retournant d\u00e9licatement les steaks de chou-fleur de temps \u00e0 autre, jusqu&#8217;\u00e0 ce qu&#8217;ils prennent une jolie couleur dor\u00e9e.
