Vous n&#8217;\u00eates certainement pas sans savoir qu&#8217;avant de poser mes valises \u00e0 Chicago, j&#8217;ai v\u00e9cu de nombreuses ann\u00e9es \u00e0 Stockholm en Su\u00e8de. Jusqu&#8217;\u00e0 r\u00e9cemment, je n&#8217;avais pas encore vraiment ressenti de nostalgie \u00e0 l&#8217;\u00e9gard de ce pays, \u00e9tant prise dans le tourbillon de la d\u00e9couverte de Chicago et aussi parce que je suis d&#8217;un naturel port\u00e9 vers l&#8217;avenir. Cependant,&nbsp;des envies de nature, de retrouver des petites habitudes de tous les jours ou simplement d&#8217;\u00e9changer avec quelques amis proches me sont parvenues \u00e0 l&#8217;esprit r\u00e9cemment sans crier gare. Et cette recette aussi.<\/p>\n\n\n\n<p>R\u00e9alis\u00e9e \u00e0 la base dans le cadre d&#8217;une interview pour le site de cuisine Kweezine, cette couronne m&#8217;\u00e9voque en effet d&#8217;agr\u00e9ables souvenirs. On est alors \u00e0 l&#8217;\u00e9t\u00e9 2015 (wow, que le temps file !), il fait beau et chaud \u00e0 Stockholm, en tout cas suffisamment pour ne porter qu&#8217;un mince petit gilet, et je me rends dans mon petit studio cuisine pr\u00e9f\u00e9r\u00e9 au coeur de la ville, Bomank\u00f6k Cuisine. Je commence alors \u00e0 pr\u00e9parer cette couronne qui rassemble pour moi le meilleur de la Su\u00e8de en attendant l&#8217;arriv\u00e9e de Laetitia, qui vient tout droit de France pour m&#8217;interviewer de la part de Kweezine. Si vous vivez en France, que vous \u00eates blogueur\/se culinaire, cuisinier ou p\u00e2tissier professionnel, ou simplement passionn\u00e9 de cuisine ou d&#8217;oenologie, vous pourriez bien vous y int\u00e9resser d&#8217;ici peu. Il s&#8217;agit d&#8217;une plateforme culinaire proposant des d&#8217;ateliers de cuisine ou de p\u00e2tisserie, mais aussi lors de d\u00e9gustations gourmandes (vin, chocolat, miel, caf\u00e9 etc), vous permettant de d\u00e9couvrir des recettes du monde entier. Pour ma part, j&#8217;ai eu l&#8217;immense plaisir de travailler avec eux l&#8217;\u00e9t\u00e9 dernier lors d&#8217;un atelier de p\u00e2tisserie su\u00e9doise que j&#8217;ai dispens\u00e9 chez et avec le partenariat d&#8217;Ikea Bordeaux. Une tr\u00e8s belle exp\u00e9rience que je recommande ; l&#8217;\u00e9quipe de Kweezine est tr\u00e8s chaleureuse et instaure naturellement une ambiance g\u00e9n\u00e9reuse et d\u00e9contract\u00e9e.<\/p>\n\n\n\n<p>Mais revenons-en \u00e0 la premi\u00e8re fois que j&#8217;ai rencontr\u00e9 l&#8217;\u00e9quipe de Kweezine \u00e0 Stockholm lors de cette fameuse interview un an plus t\u00f4t.&nbsp;Afin de les recevoir au mieux et faire de notre interview une exp\u00e9rience culinaire compl\u00e8te, j&#8217;avais entrepris de leur pr\u00e9parer une sp\u00e9cialit\u00e9 su\u00e9doise. Aux c\u00f4t\u00e9s des <a href=\"https:\/\/www.delscookingtwist.com\/fr\/2014\/01\/13\/swedish-cinnamon-rolls-or-kanelbullar\/\">petites brioches su\u00e9doises \u00e0 la cannelle &#8220;Kanelbullar&#8221;<\/a> et de leur pendant \u00e0 la cardamome nomm\u00e9es <a href=\"https:\/\/www.delscookingtwist.com\/fr\/2014\/11\/23\/authentic-swedish-cardamom-buns-learn-why-you-should-use-a-pre-dough\/\">&#8220;Kardemummabullar&#8221;<\/a>, il existe d&#8217;inombrables d\u00e9clinaisons possibles selon les go\u00fbts et les saisons: les <a href=\"https:\/\/www.delscookingtwist.com\/fr\/2013\/11\/12\/swedish-cardamom-buns-with-a-twist-of-raspberries\/\">brioches \u00e0 la framboise et \u00e0 la cardamome<\/a>, les <a href=\"https:\/\/www.delscookingtwist.com\/fr\/2016\/06\/20\/swedish-blueberry-vanilla-buns-blabarsbullar\/\">brioches aux myrtilles et \u00e0 la vanille<\/a>, ou encore cette couronne en version familiale parfum\u00e9e \u00e0 la cardamome et agr\u00e9ment\u00e9e de p\u00e9pites de chocolat blanc.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter\"><img decoding=\"async\" width=\"1200\" height=\"1649\" src=\"https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2017\/02\/Swedish-White-Chocolate-Cardamom-Wreath.jpg\" alt=\"Couronne su\u00e9doise \u00e0 la cardamome et au chocolat blanc\" class=\"wp-image-26598\" srcset=\"https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2017\/02\/Swedish-White-Chocolate-Cardamom-Wreath.jpg 1200w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2017\/02\/Swedish-White-Chocolate-Cardamom-Wreath-218x300.jpg 218w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2017\/02\/Swedish-White-Chocolate-Cardamom-Wreath-768x1055.jpg 768w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2017\/02\/Swedish-White-Chocolate-Cardamom-Wreath-745x1024.jpg 745w\" sizes=\"(max-width: 770px) calc(100vw - 40px), 730px\" \/><\/figure>\n\n\n\n<p>R\u00e9alis\u00e9e avec la m\u00eame base que celle que j&#8217;utilise pour mes brioches \u00e0 la cannelle &#8220;Kanelbullar&#8221; (une des recettes pr\u00e9f\u00e9r\u00e9es de mes lecteurs, facile \u00e0 r\u00e9aliser et d\u00e9licieuse), j&#8217;ai ici utilis\u00e9 la p\u00e2te pour lui donner la forme d&#8217;une couronne tress\u00e9e. L&#8217;utilisation de la cardamome dans la garniture n&#8217;est pas sans rappeler les petites brioches \u00e0 la cardamome (dont je raffole !), avec une petite touche de douceur suppl\u00e9mentaire apport\u00e9e par le chocolat blanc.<\/p>\n\n\n\n<p>Le tressage de la brioche est beaucoup plus simple qu&#8217;il n&#8217;y parait au premier abord : une fois que vous avez \u00e9tal\u00e9 votre grand rectangle de p\u00e2te, d\u00e9posez&nbsp;la garniture sur une seule moiti\u00e9 dans le sens de la longueur. Repliez ensuite la moiti\u00e9 vide sur la moiti\u00e9 garnie, puis coupez cette large bande en deux, toujours dans le sens de la longueur. Les papilles aiguis\u00e9es, nous nous sommes install\u00e9s autour de l&#8217;\u00eelot central pour r\u00e9aliser l&#8217;interview, suivie d&#8217;une session photos et du traditionnel fika su\u00e9dois &#8211; cette pause caf\u00e9 typique lors de laquelle on d\u00e9guste des sp\u00e9cialit\u00e9s su\u00e9doises. La n\u00f4tre \u00e9tait donc toute trouv\u00e9e et encore ti\u00e8de. quelques cuill\u00e8res \u00e0 soupe de lait.<\/li>\n<li id=\"instruction-step-2\">Faire fondre le beurre dans une petite casserole ou au micro-ondes et y verser le lait.<\/li>\n<li id=\"instruction-step-3\">Ajouter le reste des ingr\u00e9dients et p\u00e9trir la p\u00e2te pendant environ 10-15 minutes, \u00e0 la main ou dans le bol d&#8217;un robot mixeur.<\/li>\n<li id=\"instruction-step-4\">Couvrir et laisser lever pendant 30 \u00e0 45 minutes, jusqu&#8217;\u00e0 ce que la p\u00e2te ait doubl\u00e9 de volume.<\/li>\n<li id=\"instruction-step-5\">En attendant, pr\u00e9parer la garniture: moudre les graines de cardamome \u00e0 l&#8217;aide d&#8217;un petit moulin \u00e0 \u00e9pices et les m\u00e9langer avec le beurre et le sucre.<\/li>\n<li id=\"instruction-step-6\">Une fois repos\u00e9e, d\u00e9poser la p\u00e2te sur un plan de travail farin\u00e9. P\u00e9trir quelques minutes suppl\u00e9mentaires pour la remodeler, puis la diviser en 2 parties \u00e9gales.<\/li>\n<li id=\"instruction-step-7\">Prendre le premier morceau de p\u00e2te et \u00e9taler au rouleau \u00e0 p\u00e2tisserie sur une surface l\u00e9g\u00e8rement farin\u00e9e en un large rectangle.<\/li>\n<li id=\"instruction-step-8\">\u00c9taler le m\u00e9lange \u00e0 la cardamome sur la moiti\u00e9 de la p\u00e2te dans le sens de la longueur, puis parsemer de p\u00e9pites de chocolat blanc.<\/li>\n<li id=\"instruction-step-9\">Replier la partie de la p\u00e2te vierge sur celle recouverte de la garniture \u00e0 la cardamome, afin d&#8217;obtenir une large bande.<\/li>\n<li id=\"instruction-step-10\">Couper la moiti\u00e9 de cette bande dans le sens de la longueur, puis entrelacer les bandes de p\u00e2te comme pour une tresse \u00e0 deux branches.<\/li>\n<li id=\"instruction-step-11\">Transf\u00e9rer avec pr\u00e9caution sur une plaque de cuisson et former une couronne. Joindre les bouts avec un peu d&#8217;eau ti\u00e8de pour faire la soudure.<\/li>\n<li id=\"instruction-step-12\">R\u00e9p\u00e9ter avec le deuxi\u00e8me morceau de p\u00e2te.<\/li>\n<li id=\"instruction-step-13\">Cuire \u00e0 mi-hauteur dans un four chaud pr\u00e9chauff\u00e9 \u00e0 220\u00b0C pendant 25-30 minutes.<\/li>\n<li id=\"instruction-step-14\">Pendant ce temps, pr\u00e9parer le sirop: faire bouillir l&#8217;eau dans une petite casserole, et ajouter le sucre. Extrairer les graines de la gousse de vanille et les ajouter au sirop.
