Alors l\u00e0 je vous vois d\u00e9j\u00e0 lever les yeux au ciel <em>&#8220;Du chou-fleur, magique, vraiment ?!? Elle se moque de moi l\u00e0 !&#8221;<\/em>. Eh bien non, figurez-vous que je suis en plus tr\u00e8s s\u00e9rieuse (j&#8217;agrave mon cas !). Je m&#8217;explique. La fa\u00e7on dont le chou-feur\u00a0est ici pr\u00e9par\u00e9 transporte la recette vers de nouveaux horizons, et il se peut m\u00eame\u00a0que vous changiez bient\u00f4t d&#8217;avis sur le chou-fleur.<\/p>\n<p>Mais alors de quoi s&#8217;agit-il alors ? Ici les fleurets de chou-fleur sont grill\u00e9s au four ensemble avec des citrons. Il vous suffit de couper les citrons en deux, les d\u00e9poser c\u00f4t\u00e9 face sur la plaque de cuisson (ne les pressez pas) avec le chou-fleur et d&#8217;arroser celui-ci d&#8217;un filet d&#8217;huile d&#8217;olive. Le reste est un jeu d&#8217;enfant ; il vous suffira simplement de faire griller le halloumi des deux c\u00f4t\u00e9s dans le four encore chaud, puis de garnir le pain pita des fleurets de chou-fleur, de halloumi, d&#8217;aoili, d&#8217;un peu de coriandre fra\u00eeche et d&#8217;arroser d&#8217;un filet de citron grill\u00e9 par dessus. Tout simple, n&#8217;est-ce pas ?<\/p>\n<p>Je n&#8217;aurais jamais pens\u00e9 associer du chou-fleur avec des citrons grill\u00e9s (m\u00eame pas faire griller des citrons pour \u00eatre honn\u00eate) jusqu&#8217;\u00e0 ce que je d\u00e9couvre un plat relativement similaire dans un petit restaurant de Chicago que j&#8217;adore (The Allis). L&#8217;ensemble a litt\u00e9ralement \u00e9merveill\u00e9 mes papilles et donn\u00e9 l&#8217;inspiration pour la recette que vous avez maintenant devant vous. Un sandwich tout simple, savoureux et tr\u00e8s nourrissant r\u00e9alis\u00e9 avec du pain pita, et qui vous fera presque oublier que le tout est compl\u00e8tement v\u00e9g\u00e9tarien. J&#8217;aurais pu opter pour un aioli classique ici, puisque le sandwich n&#8217;est lui-m\u00eame pas enti\u00e8rement vegan \u00e0 cause du halloumi, mais j&#8217;ai pens\u00e9\u00a0que les personnes vegan int\u00e9ress\u00e9es par cette recette sauraient y trouver\u00a0un substitut v\u00e9g\u00e9talien\u00a0et appr\u00e9cieraient d&#8217;avoir en revanche la recette d&#8217;un aioli vegan. Et puis aussi tout simplement, le d\u00e9fi d&#8217;un aioli v\u00e9g\u00e9tarien m&#8217;a plu. Car ici, tout \u00e9tait question d&#8217;exp\u00e9riences en cuisine, consistant \u00e0 remplacer les oeufs par un ingr\u00e9dient magique : l&#8217;aquafaba, c&#8217;est \u00e0 dire le jus de pois chiches.<\/p>\n<p>Le jus de pois chiches, vous connaissez certainement d\u00e9j\u00e0 et l&#8217;avez peut \u00eatre m\u00eame d\u00e9j\u00e0 test\u00e9 dans une mousse au chocolat (bon l\u00e0 si vous ne connaissez pas et que vous lisez ce passage, je sens que vous allez me trouver bizarre) ! Pour ceux qui ne connaissent pas donc, le jus de pois chiche extrait de la cuisson des pois chiches et qui est aussi le liquide contenu dans les bo\u00eetes de conserve de pois chiche a une texture relativement visqueuse et transparente qui la fait ressembler au blanc d&#8217;oeuf cru. Mieux encore, vous pouvez avec le jus de pois chiche r\u00e9aliser des blancs en neige et le rendu sera exactement le m\u00eame qu&#8217;avec des blancs d&#8217;oeufs. En lisant sur le sujet, j&#8217;ai compris qu&#8217;il existait un risque d&#8217;\u00e9chec et que l&#8217;aioli reste liquide, ce qui ne m&#8217;a gu\u00e8re mis en confiance. J&#8217;ai donc entrepris ma petite affaire avec prudence, et Oh quelle surprise lorsque j&#8217;ai vu l&#8217;aioli s&#8217;\u00e9paissir soudainement, avec une texture identique \u00e0 celle d&#8217;un aioli classique. C&#8217;est l\u00e0 que je me suis apercue qu&#8217;il n&#8217;est pas si difficile de r\u00e9ussir son aioli vegan, d\u00e8s lors que l&#8217;on suit la recette avec pr\u00e9cision. Au final, le r\u00e9sultat est impressionnant, et personne ne pourrait deviner que l&#8217;aioli est en fait vegan !<\/p>\n<p>Pour moi, ces sandwichs de pains pita au chou-fleur au citron\u00a0et de halloumi sont encore meilleurs si le pain est l\u00e9g\u00e8rement r\u00e9chauff\u00e9 dans le four encore chaud et qu&#8217;il s&#8217;accompagne d&#8217;un peu de coriandre fra\u00eeche. verser un filet d&#8217;huile d&#8217;olive par dessus. D\u00e9couper les citrons en deux et les disposer face sur la plaque. Faire griller pendant 40 minutes, ou jusqu&#8217;\u00e0 ce que le chou fleur prenne une jolie couleur dor\u00e9e. \u00c0 mi-cuisson, m\u00e9langer les fleurets de chou fleur et presser les citrons grill\u00e9s par dessus, puis poursuivre la cuisson.<\/li>\n<li id=\"instruction-step-3\">Disposer les tranches de halloumi sur l&#8217;autre plaque et les faire griller des deux c\u00f4t\u00e9s jusqu&#8217;\u00e0 ce qu&#8217;ils prennent une jolie couleur dor\u00e9e (environ 5 minutes sur chaque c\u00f4t\u00e9).<\/li>\n<li id=\"instruction-step-4\">Pr\u00e9parer l&#8217;aioli vegan : verser l&#8217;aquafaba, le vinaigre, la moutarde et le sel dans le r\u00e9cipient profond et mixer quelques secondes avec le mixeur plongeant jusqu&#8217;\u00e0 ce que l&#8217;ensemble soit bien m\u00e9lang\u00e9. Garder le mixeur plongeant allum\u00e9 \u00e0 vitesse lente et ajouter tr\u00e8s lentement l&#8217;huile v\u00e9g\u00e9tale, en prenant soin que l&#8217;huile s&#8217;incorpore simultan\u00e9ment. Si l&#8217;huile est vers\u00e9e trop rapidement, l&#8217;ensemble deviendra alors trop liquide. S&#8217;il y a un peu d&#8217;huile qui reste en surface, veiller \u00e0 bien l&#8217;incorporer au mixeur avant d&#8217;ajouter le reste d&#8217;huile. La mayonnaise va subitement s&#8217;\u00e9paissir. Ajouter enfin le jus de citron, l&#8217;ail et bien m\u00e9langer.<\/li>\n<li id=\"instruction-step-5\">Faire r\u00e9chauffer le pain pita quelques instants dans le four encore chaud ou \u00e0 la po\u00eale sans ajout de mati\u00e8re grasse (il peut aussi s&#8217;appr\u00e9cier froid \u00e9ventuellement).<\/li>\n<li id=\"instruction-step-6\">Garnir le pain pita avec les tranches d&#8217;halloumi et le chou fleur au citron.
