Pour cette recette, je me suis inspir\u00e9e d&#8217;un plat d\u00e9couvert il y a quelques temps \u00e0 The Allis, un restaurant bo-ho chic de Chicago que j&#8217;adore. De retour \u00e0 la maison, je me me suis lanc\u00e9e dans la reconstitution de ce plat en y ajoutant un peu de quinoa pour le rendre plus rassasiant. Le r\u00e9sultat est parfaitement sain, \u00e0 la fois simple mais avec des saveurs subtiles, le tout parfaitement d\u00e9icieux. Aujourd&#8217;hui je vous pr\u00e9sente la courge d\u00e9licata, une vari\u00e9t\u00e9 ancienne de courge qui est devenue populaire au cours de la derni\u00e8re d\u00e9cennie.<\/p>\n<p><strong>De couleur jaune p\u00e2le avec des rayures vertes<\/strong>, la courge delicata est plus tendre que la courge butternut et repr\u00e9sente une bonne source de fibres, de potassium, avec en plus petite quantit\u00e9 de la vitamine C, B, du magnesium et du manganese.<\/p>\n<p>Mais ce qui en fait sa principale caract\u00e9ristique, c\u2019est qu\u2019elle est tr\u00e8s facile \u00e0 couper et que <strong>sa peau est mince et comestible<\/strong>. Retirer la peau des courges d\u2019hiver est la plupart du temps une \u00e9tape assez fastidieuse et qui en d\u00e9courage plus d\u2019un. Voici comment proc\u00e9der :<\/p>\n<ol>\n<li>Rincez la courge d\u00e9licata et coupez-la dans le sens de la longueur. Rassurez-vous, c&#8217;est pourtant tout simple \u00e0 pr\u00e9parer. Il vous suffit ainsi de mixer des feuilles de menthe fra\u00eeches, de la poudre d&#8217;amande et du parmesan (pour ce dernier, voir mon FAQ ci-dessous pour une version vegan). Vous pouvez \u00e9galement ajouter un peu d&#8217;ail si vous le souhaitez. Vous voyez, c&#8217;est tout simple !<\/p>\n<h2>Et maintenant, on assemble le plat<\/h2>\n<p>Maintenant que les pr\u00e9parations sont pr\u00eates, il suffit d&#8217;ajouter du quinoa et d&#8217;assembler le plat. Deux options sont ici possibles :<\/p>\n<ol>\n<li>Pr\u00e9parer le plat comme une entr\u00e9e ou un accompagnement. Dans ce cas de figure la courge d\u00e9licata demeure centrale dans le plat et le quinoa vient seulement agr\u00e9menter l&#8217;ensemble, le tout avec un filet de pesto de menthe.<\/li>\n<li>Ou bien on pr\u00e9pare le plat \u00e0 la mani\u00e8re d&#8217;un quinoa bowl. Ici, le quinoa demeure alors l&#8217;ingr\u00e9dient principal du plat (n&#8217;h\u00e9sitez pas \u00e0 en pr\u00e9parer un peu plus) et on y ajoute la courge et le pesto. L&#8217;ensemble constitue alors un plat nourrissant et complet.<\/li>\n<\/ol>\n<p>Enfin, n&#8217;oubliez pas d&#8217;agr\u00e9menter votre plat de graines de pomme grenade. La seule diff\u00e9rence, c&#8217;est qu&#8217;il vous faudra peut \u00eatre la peler au pr\u00e9alable, sauf si elle est tr\u00e8s tendre.<\/p>\n<p><strong>Puis-je ajouter une source de prot\u00e9ines \u00e0 mon plat ?<\/strong> Bien s\u00fbr. Vous pouvez par exemple incorporer quelques pois chiches grill\u00e9s \u00e0 l&#8217;ensemble afin de garder le plat v\u00e9g\u00e9tarien.<\/p>\n<p><strong>Et en version vegan, c&#8217;est possible ?<\/strong> Le seul ingr\u00e9dient de la recette qui n&#8217;est pas vegan, c&#8217;est la cuill\u00e9r\u00e9e \u00e0 caf\u00e9 de parmesan r\u00e2p\u00e9 utilis\u00e9e dans le pesto de menthe. J&#8217;aime la saveur sal\u00e9e que cela apporte \u00e0 l&#8217;ensemble, mais il est n\u00e9anmoins parfaitement possible de s&#8217;en passer et de ne conserver que la poudre d&#8217;amande.\u00a0
