Lorsqu&#8217;il s&#8217;agit d&#8217;un plat de poissons ou de fruits de mer, j&#8217;aime ajouter quelques notes d&#8217;agrumes, apportant une pointe de fra\u00eecheur et donnant du peps au plat. L&#8217;id\u00e9e sous-jacente consiste \u00e0 trouver un \u00e9quilibre de saveurs subtile qui permet de r\u00e9hausser un plat et en aucun cas d&#8217;en masquer la saveur d&#8217;origine. Les notes d&#8217;agrumes apportent ici un parfum d\u00e9licat aux noix de Saint-Jacques, et en font un plat digne d&#8217;un menu de chef \u00e9toil\u00e9. La recette est toute simple mais ne laissera pas vos invit\u00e9s indiff\u00e9rents.<\/p>\n<h2><strong>Comment po\u00ealer les noix de Saint-Jacques ?<\/strong><\/h2>\n<p>\u00c0 la fois fragiles et d\u00e9licates, les noix de Saint-Jacques sont un monde de po\u00e9sie \u00e0 elles toutes seules. Leur chair ferme et dense r\u00e9sulte une fois cuite en une bouch\u00e9e terriblement fondante en bouche. En utilisant l&#8217;huile seule, le risque est de les frire plut\u00f4t que de les saisir, et d&#8217;obtenir alors une texture d\u00e9sech\u00e9e et \u00e9lastique plut\u00f4t que douce et fondante.<\/p>\n<p>De mani\u00e8re g\u00e9n\u00e9rale, et quelle que soit la recette de noix de Saint-Jacques que vous pr\u00e9parez, gardez toujours en t\u00eate qu&#8217;il est important que les p\u00e9toncles restent la star du plat, les autres saveurs n&#8217;intervenant qu&#8217;en compl\u00e9ment. Ce sont des ingr\u00e9dients simples et nobles \u00e0 la fois qui associent \u00e9pices, douceur et fra\u00eecheur avec brio dans une sauce qui se veut l\u00e9g\u00e8re et pleine de saveurs. Voici comment pr\u00e9parer la sauce :<\/p>\n<ol>\n<li>Fa\u00eetes fondre les \u00e9chalotes dans un peu de beurre jusqu&#8217;\u00e0 ce qu&#8217;elles soient bien tendres.<\/li>\n<li>D\u00e9glacez avec du vin blanc et laissez r\u00e9duire le liquide de moiti\u00e9.<\/li>\n<li>Versez le jus d&#8217;orange, ajoutez le zeste, puis r\u00e2pez le gingembre frais.<\/li>\n<li>M\u00e9langez et laissez mijoter pendant environ 10 minutes, le temps que la sauce s&#8217;\u00e9paississe un peu.<\/li>\n<\/ol>\n<p>Arrosez les noix de Saint-Jacques tout juste po\u00eal\u00e9es de la sauce \u00e0 l&#8217;orange et au gingembre en ayant la main l\u00e9g\u00e8re (ne les noyez pas dans la sauce). Dressez-les de pr\u00e9f\u00e9rence \u00e0 l&#8217;assiette, \u00e0 raison de 3 ou 4 p\u00e9toncles par personne (selon la taille des p\u00e9toncles) sur un peu de cr\u00e8me fra\u00eeche, puis arrosez l\u00e9g\u00e8rement de sauce \u00e0 l&#8217;orange. Pour une jolie finition du plat, ajoutez quelques pousses de graines germ\u00e9es ou bien un peu de menthe fra\u00eeche.<\/p>\n<p>Si vous pr\u00e9f\u00e9rez les servir comme plat principal, d\u00e9posez-les sur un lit de pur\u00e9e de panais ou bien encore de pur\u00e9e de chou-fleur. Quelle que soit l&#8217;option retenue, gardez en m\u00e9moire que ce plat doit \u00eatre savour\u00e9 en gourmet et non en gourmand, donc ne chargez pas trop l&#8217;assiette.
