Le lendemain, les festivit\u00e9s se poursuivent autour du traditionnel repas de No\u00ebl qui peut durer des heures voire la journ\u00e9e enti\u00e8re. Dans ma famille, on commence g\u00e9n\u00e9ralement autour de midi autour de bouch\u00e9es ap\u00e9ritives, le temps que les invit\u00e9s se mettent dans l&#8217;ambiance et commencent \u00e0 bavarder ensemble, puis on encha\u00eene avec une ribambelle de plats qui arrivent de mani\u00e8re tr\u00e8s orchestr\u00e9e les uns apr\u00e8s les autres. Pas de pr\u00e9cipitation, on est l\u00e0 pour prendre son temps, appr\u00e9cier des mets fins et de qualit\u00e9, et aussi pour socialiser. \u00c0 la fin arrive le dessert, et ce n&#8217;est parfois qu&#8217;une simple pause de quelques heures avant de remettre le couvert pour un buffet frugal en fin de soir\u00e9e (il ne faudrait pas mourir de faim pendant la nuit!).<\/p>\n<p style=\"text-align: justify;\">Les f\u00eates de fin d&#8217;ann\u00e9e ont aussi pour caract\u00e9ristque de voir appara\u00eetre au menu quelques plats typiques et festifs, comme le foie gras qui reste un met d\u00e9licat de la cuisine fran\u00e7aise, m\u00eame s&#8217;il est aussi tr\u00e8s controvers\u00e9 par les d\u00e9fenseurs des animaux. Il existe de tr\u00e8s nombreuses fa<em>\u00e7<\/em>ons de pr\u00e9senter et servir le foie gras, comme par exemple en le servant sur une tranche de brioche, accompagn\u00e9 d&#8217;une confiture de figues ou d&#8217;oignons confits, ou bien encore avec un peu de vinaigre balsamique.<\/p>\n<p style=\"text-align: justify;\">Aujourd&#8217;hui c&#8217;est une version diff\u00e9rente que je vous pr\u00e9sente ici, tout en jouant sur ces saveurs sucr\u00e9es-sal\u00e9es. Le foie gras se mariant parfaitement avec les \u00e9pices, j&#8217;ai simplement r\u00e9alis\u00e9 un pain d&#8217;\u00e9pices que j&#8217;ai ensuite d\u00e9coup\u00e9 en forme d&#8217;\u00e9toiles \u00e0 l&#8217;aide d&#8217;un emporte-pi\u00e8ces. Cela permet de jouer sur la pr\u00e9sentation du plat que je trouve d\u00e8s lors plus festif. Une petite astuce si vous ne savez pas quoi faire des miettes de pain d&#8217;\u00e9pices restantes : utilisez-les pour r\u00e9aliser un tiramisu de No\u00ebl ou comme base pour un cheesecake. Superposez ensuite une tranche de foie gras sur vos \u00e9toiles de pain d&#8217;\u00e9pices, et finissez par le\u00a0confit de poires \u00e0 la vanille. On pourrait aussi imaginer ici le servir avec un fromage fort, comme du bleu par exemple. L&#8217;ensemble se r\u00e9sume en\u00a0une v\u00e9ritable explosion de saveurs qui joue sur tous les tableaux. Servez votre foie gras avec un vin blanc doux tel que du Montbazillac par exemple, ou bien un vin blanc sec si vous pr\u00e9f\u00e9rez.<\/p>\n<p style=\"text-align: justify;\"><img decoding=\"async\" Baisser le feu et poursuivre la cuisson en \u00e9cumant r\u00e9guli\u00e8rement, pendant 35 minutes.
