Ce plat est absolument fantastique et pourtant relativement facile \u00e0 pr\u00e9parer. Si \u00e0 tout hasard vous suivez mon blog depuis ses d\u00e9buts, vous avez peut \u00eatre vu passer une version tr\u00e8s l\u00e9g\u00e8rement diff\u00e9rente de cette recette (avec du saumon uniquement) auparavant. Je l&#8217;ai par la suite retir\u00e9e du blog, car les photos de l&#8217;\u00e9poque ne lui rendaient pas suffisamment honneur selon moi. Cette recette m\u00e9rite le meilleur !<\/p>\n<p style=\"text-align: justify;\">Je l&#8217;ai donc recr\u00e9e pour vous aujourd&#8217;hui, afin qu&#8217;elle arrive juste \u00e0 temps pour les f\u00eates de fin d&#8217;ann\u00e9e qui approchent \u00e0 grand pas, et tandis que vous \u00eates certainement d\u00e9j\u00e0 en train de r\u00e9fl\u00e9chir \u00e0 votre menu. Que vous r\u00e9alisiez ce plat pour No\u00ebl, pour le R\u00e9veillon du nouvel an, ou bien encore dans un tout autre registre pour la Saint Valentin, ce duo de poissons aura toujours des allures festives. Puis, et c&#8217;est sans aucun doute l&#8217;\u00e9l\u00e9ment du plat que je pr\u00e9f\u00e8re, j&#8217;ai ensuite r\u00e9alis\u00e9 une sauce \u00e0 l&#8217;\u00e9chalote et au vin blanc. Les \u00e9chalotes sont souvent utilis\u00e9es dans la cuisine francaise, et aussi loin que je me souvienne, j&#8217;ai toujours beaucoup aim\u00e9 les plats r\u00e9alis\u00e9s avec de l&#8217;\u00e9chalote. Leur saveur plus douce que celle des oignons rouges mais plus affirm\u00e9e que celle des oignons jaunes, renferme \u00e9galement quelques notes d&#8217;ail. Ma facon pr\u00e9f\u00e9r\u00e9e de les cuisiner consiste \u00e0 les faire fondre dans du beurre, puis d&#8217;y ajouter du vin blanc et de faire r\u00e9duire (et l\u00e0 arrive le moment o\u00f9 j&#8217;ose y tremper un morceau de pain dans la sauce&#8230; mais c&#8217;est notre petit secret, n&#8217;est-ce pas?). Ici vous avez \u00e9galement un peu de cr\u00e8me fra\u00eeche pour ajouter plus d&#8217;\u00e9paisseur \u00e0 la sauce.<!--more--><\/p>\n<p style=\"text-align: justify;\">Une fois que vous avez r\u00e9alis\u00e9 la sauce, ajoutez simplement les \u00e9pinards pendant quelques secondes (ils cuisent tr\u00e8s vite). Vous pouvez aussi remplacer les \u00e9pinards par de l&#8217;oseille si vous le souhaitez, cela fonctionnera \u00e9galement \u00e0 merveille. Les deux versions (\u00e9pinards ou oseille) sont tout aussi d\u00e9licieuses, m\u00eame si pour ma part je crois que j&#8217;ai un petit faible pour celle \u00e0 l&#8217;oseille, mais il est parfois difficile de trouver de l&#8217;oseille tandis que les \u00e9pinards sont beaucoup plus courants. R\u00e9alis\u00e9 avec des flocons d&#8217;avoine, de la farine et du beurre, il n&#8217;y a rien de plus simple. Enfournez le ensuite jusqu&#8217;\u00e0 ce qu&#8217;il devienne l\u00e9g\u00e8rement dor\u00e9, en m\u00e9langeant de temps en temps avec une cuill\u00e8re en bois, pour \u00e9viter qu&#8217;il ne br\u00fble sur le dessus.<\/p>\n<p style=\"text-align: justify;\">La toute derni\u00e8re partie concerne ici le dressage du plat. Il existe en fait au moins trois facons diff\u00e9rentes de proc\u00e9der. La premi\u00e8re est celle que vous retrouvez sur les photos avec un dressage \u00e0 l&#8217;assiette directement. Cela permet d&#8217;avoir des assiettes tr\u00e8s joliment pr\u00e9sent\u00e9es et \u00e9l\u00e9gantes. Enfourner ensuite le tout pendant 15 minutes et le tour est jou\u00e9. Cette version est moins jolie \u00e0 l&#8217;assiette que la premi\u00e8re mais permet de r\u00e9aliser des quantit\u00e9s plus grandes si vous avez besoin de doubler ou m\u00eame tripler les proportions. La troisi\u00e8me version est un mix entre les deux premi\u00e8res : il s&#8217;agit ici de r\u00e9aliser ces crumbles dans des petits ramequins ou verrines de la taille de votre choix, selon que vous Ajouter la cr\u00e8me fra\u00eeche, saler, poivrer, puis laisser mijoter pendant 2-3 minutes, sans cesser de remuer, jusqu&#8217;\u00e0 ce que le m\u00e9lange \u00e9paississe.<\/li>\n<li id=\"instruction-step-5\">Trier, rincer et essorer les pousses d&#8217;\u00e9pinards.
