M\u00eame s&#8217;il n&#8217;est pas au centre des festivit\u00e9s pour cette occasion sp\u00e9ciale, il n&#8217;est pas rare de le voir servi aux c\u00f4t\u00e9s des autres plats. Le saumon gravlax est plus qu&#8217;un classique en Su\u00e8de, c&#8217;est une v\u00e9ritable institution, que l&#8217;on retrouve \u00e0 toute occasion festive, allant de la f\u00eate de l&#8217;\u00e9t\u00e9 de <em>Midsommar<\/em> \u00e0 la fameuse table de No\u00ebl <em>Julbord<\/em>, servi g\u00e9n\u00e9ralement en tr\u00e8s fines tranches en guise d&#8217;entr\u00e9e ou en accompagnement d&#8217;autres plats. Chaque famille ou presque d\u00e9tient sa recette de saumon gravlax, une recette qui part d&#8217;une base semblable, mais avec la possibilit\u00e9 de jouer sur les proportions et en d&#8217;apporter sa petite touche personnelle\u00a0en ajoutant par exemple de la vodka, de la betterave, etc.<\/p>\n<p style=\"text-align: justify;\">Comme je le disais il y a un instant, c&#8217;est en ce moment la saison de la f\u00eate des \u00e9crevisses en Su\u00e8de, une\u00a0tradition culinaire estivale qui se r\u00e9f\u00e8re \u00e0 la r\u00e9colte des \u00e9crevisses, qui durant preque tout le XXi\u00e8me si\u00e8cle, \u00e9tait strictement autoris\u00e9e par la loi vers la fin de l&#8217;\u00e9t\u00e9. De nos jours, la plupart des \u00e9crevisses sont import\u00e9es et ce \u00e0 tout moment de l&#8217;ann\u00e9e, ceci afin de satisfaire la demande, mais la tradition de fin d&#8217;\u00e9t\u00e9 demeure.<\/p>\n<p style=\"text-align: justify;\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-26243\" src=\"https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2016\/08\/Salmon-gravlax_0119.jpg\" alt=\"Salmon gravlax\" width=\"1600\" height=\"2047\" srcset=\"https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2016\/08\/Salmon-gravlax_0119.jpg 1200w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2016\/08\/Salmon-gravlax_0119-234x300.jpg 234w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2016\/08\/Salmon-gravlax_0119-768x983.jpg 768w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2016\/08\/Salmon-gravlax_0119-800x1024.jpg 800w\" sizes=\"(max-width: 770px) calc(100vw - 40px), 730px\" \/><\/p>\n<p>Les festivit\u00e9s des \u00e9crevisses se d\u00e9roulent habituellement \u00e0 l&#8217;ext\u00e9rieur (dans la mesure o\u00f9 la m\u00e9t\u00e9o le permet) et mettent \u00e9videmment \u00e0 l&#8217;honneur les \u00e9crevisses, accompagn\u00e9es du fromage su\u00e9dois V\u00e4sterbotten (un fromage mature friable), servi tel quel sous forme de gros bloc avec la fameuse r\u00e2pe \u00e0 fromage su\u00e9doise et de fines tranches de pain croustillant, ou bien pour une version plus \u00e9labor\u00e9e avec une d\u00e9licieuse tranche de tarte au fromage V\u00e4sterbotten. Sur la table \u00e9galement, quelques bols de harengs marin\u00e9s de diff\u00e9rentes mani\u00e8res, des pommes de terres nouvelles cuites \u00e0 la vapeur ou servies en salade&#8230; et pourquoi pas (m\u00eame si cela n&#8217;est pas obligatoire) quelques tranches de saumon gravlax !<\/p>\n<p style=\"text-align: justify;\">Consistant en du saumon cru marin\u00e9 dans du sel, du sucre et de l&#8217;aneth, the samon gravlax tire son nom du Moyen Age, \u00e0 l&#8217;\u00e9poque o\u00f9 les p\u00eacheurs salaient le saumon et le fermentaient l\u00e9g\u00e8rement en l&#8217;enterrant dans du sable avec des poids dessus. Le mot <em>gravlax<\/em> lui m\u00eame vient justement du mot su\u00e9dois <em>gr\u00e4va<\/em>, qui signifie &#8220;creuser&#8221; (comprendre ici &#8220;saumon enterr\u00e9&#8221;) ou au sens moderne du terme &#8220;marin\u00e9&#8221;. Tout ce qu&#8217;il vous faut, c&#8217;est planifier un peu \u00e0 l&#8217;avance\u00a0puique le saumon a besoin d&#8217;environ deux jours pour &#8220;cuire&#8221;dans sa marinade. Mais rassurez-vous, le r\u00e9sultat vaut l&#8217;attente. Bonne nouvelle cependant : il ne vous faut qu&#8217;une quinzaine de minutes pour pr\u00e9parer la recette !<\/p>\n<p style=\"text-align: justify;\">Une fois de plus, je n&#8217;ai pas voulu m&#8217;en tenir \u00e0 une recette classique et y ai ajout\u00e9 un twist en jouant sur des saveurs que l&#8217;on retrouve souvent dans les pays nordiques. Tandis que l&#8217;utilisation de betteraves n&#8217;a que pour unique but de colorer le saumon d&#8217;une jolie couleur ros\u00e9e, le raifort frais r\u00e2p\u00e9 (il est tr\u00e8s difficile \u00e0 trouver en France mais vous pouvez le retrouver dans certains magasins asiatiques) apporte quant \u00e0 lui une touche de caract\u00e8re \u00e0 l&#8217;ensemble. Servez le sur une tranche de pain noir accompagn\u00e9 d&#8217;une sauce \u00e0 base de cr\u00e8me fra\u00eeche, de citron et d&#8217;aneth, puis d\u00e9corez de quelques graines de courge.<\/p>\n<svg Bien refermer le sachet puis le placer dans un plat creux avec le c\u00f4t\u00e9 peau au dessus.<\/li>\n<li id=\"instruction-step-5\">Placer au r\u00e9frig\u00e9rateur et laisser &#8220;cuire&#8221; dans sa marinade pendant environ deux jours, en retournant le filet de saumon deux fois au cours de l&#8217;op\u00e9ration, \u00e0 intervalle de temps relativement \u00e9gale, ceci afin d&#8217;assurer la p\u00e9n\u00e9tration de la marinade et de la couleur ros\u00e9e sur toutes les faces.<\/li>\n<li id=\"instruction-step-6\">Une fois que le saumon gravlax est pr\u00eat, retirer le sac plastique alimentaire, d\u00e9barrasser le saumon des ingr\u00e9dients de la marinade et s\u00e9cher avec du papier sopalin.
