Cette tradition am\u00e9ricaine c\u00e9l\u00e9br\u00e9e le dernier jeudi du mois de novembre fleure bon l&#8217;automne, avec de nombreux plats \u00e0 base de courges, de patates douces et autres l\u00e9gumes, pour accompagner la dinde, pi\u00e8ce ma\u00eetresse du repas.<\/p>\n\n\n\n<p>La tarte aux noix de p\u00e9can, c&#8217;est un peu le dessert qui r\u00e9unit tout le monde, notamment ceux qui ne sont pas tr\u00e8s fans de la courge ou des \u00e9pices que l&#8217;on retrouve dans la pumpkin pie. R\u00e9alis\u00e9e avec des noix de p\u00e9can, on y retrouve \u00e9galement du beurre, du sucre, des oeufs, ainsi que du sirop de glucose, que j&#8217;ai pris ici la libert\u00e9 de remplacer par du sirop d&#8217;\u00e9rable. Ici la combinaison du sucre et du sirop d&#8217;\u00e9rable participe de la bonne tenue de la garniture.<\/li>\n\n\n\n<li><strong>Beurre demi-sel.<\/strong> L&#8217;utilisation du beurre demi-sel vient casser le c\u00f4t\u00e9 tr\u00e8s sucr\u00e9 de la pecan pie. Si vous utilisez du beurre doux, rajoutez \u00bc cuil. \u00e0 caf\u00e9 de sel \u00e0 la garniture.<\/li>\n\n\n\n<li><strong>Noix de p\u00e9can.<\/strong> Assurez-vous que vos noix de p\u00e9can ne sont pas trop vieilles, car elles ont tendance \u00e0 devenir rances avec le temps. Ensuite, on ajoute le beurre fondu et l\u00e9g\u00e8rement caram\u00e9lis\u00e9, avant d&#8217;incorporer les noix de p\u00e9can. <\/li>\n\n\n\n<li><strong>Et hop, au four ! <\/strong>Versez la garniture par-dessus la p\u00e2te pr\u00e9-cuite, puis enfournez pour 50 minutes. Si vous souhaitez n\u00e9anmoins r\u00e9duire la quantit\u00e9 de sucre, ajoutez une cuil. \u00e0 soupe de farine pour stabiliser la garniture et \u00e9viter que la pecan pie ne se d\u00e9lite \u00e0 la d\u00e9coupe.<\/li>\n\n\n\n<li><strong>Comment savoir si la pecan pie est cuite ?<\/strong> Chaque four \u00e9tant diff\u00e9rent, il est important de garder un oeil sur la cuisson. Le centre de la garniture doit gonfler un peu et les bords \u00eatre fig\u00e9s. La pie continuera de cuire dans le moule chaud hors du four.<\/li>\n\n\n\n<li><strong>Puis-je utiliser du miel plut\u00f4t que du sirop d&#8217;\u00e9rable ?<\/strong> Oui, on peut substituer le miel au sirop d&#8217;\u00e9rable. La saveur de la pecan pie en sera l\u00e9g\u00e8rement modifi\u00e9e mais n\u00e9anmoins tr\u00e8s bonne.<\/li>\n\n\n\n<li><strong>Puis-je r\u00e9aliser une version avec des noix ?<\/strong> Tout \u00e0 fait. Vous pouvez ensuite la d\u00e9guster avec un peu de cr\u00e8me fouett\u00e9e non sucr\u00e9e. Faites-la refroidir \u00e0 temp\u00e9rature ambiante, puis couvrez-la d&#8217;une feuille d&#8217;aluminium et conservez-la 4 jours au frigo. Vous pouvez \u00e9galement la congeler, une fois refroidie et plac\u00e9e dans un sac cong\u00e9lation herm\u00e9tique. Elle se conservera ainsi jusqu&#8217;\u00e0 3 mois.
