Alors pourquoi pas avec des betteraves ? Chance pour moi, j&#8217;\u00e9tais \u00e0 deux pas d&#8217;une librairie o\u00f9 j&#8217;ai pu non seulement trouver refuge mais en plus trouver la recette du g\u00e2teau \u00e0 la betterave dans la section des livres de cuisine. Ni une ni deux, une fois rentr\u00e9e \u00e0 Stockholm, je me lan\u00e7ai dans cette recette, en rempla\u00e7ant simplement le gla\u00e7age au citron par un gla\u00e7age \u00e0 la vanille (les deux fonctionnent \u00e0 merveille).<\/p>\n<h2>Un <em>Red Velvet Cake<\/em>, sans colorant !<\/h2>\n<p>Je suis depuis devenue une fan inconditionnelle de cette recette de g\u00e2teau \u00e0 la betterave qui, qu&#8217;on se le dise, n&#8217;a absolument rien \u00e0 envier au red velvet am\u00e9ricain r\u00e9alis\u00e9 avec du colorant alimentaire. Ici, ce sont les pigments de la betterave qui apportent sa couleur rouge velour intense au dessert. Les betteraves sont un l\u00e9gume au pouvoir sucrant naturel et sont en outre une excellente source de fibres.<\/li>\n<li><strong>Sucre.<\/strong> J&#8217;utilise ici un m\u00e9lange de sucre cassonnade et de sucre muscovado, ce dernier permettant d&#8217;apporter de l&#8217;humidit\u00e9 et renfor\u00e7ant ainsi la texture moelleuse du g\u00e2teau.<\/li>\n<li><strong>Huile v\u00e9g\u00e9tale.<\/strong> Utilisez de pr\u00e9f\u00e9rence une huile v\u00e9g\u00e9tale \u00e0 la saveur neutre (huile de colza, huile de tournesol ou un m\u00e9lange d&#8217;huiles par exemple). L&#8217;utilisation de l&#8217;huile rend le g\u00e2teau l\u00e9ger et a\u00e9r\u00e9.<\/li>\n<li><strong>Oeufs.<\/strong> Notez que cette recette ne requiert que 2 oeufs entiers. La recette appelle ici \u00e0 l&#8217;utilisation de betteraves crues, pel\u00e9es et r\u00e2p\u00e9es finement \u00e0 l&#8217;aide d&#8217;une r\u00e2pe \u00e0 fromage ou \u00e9quivalent. Lorsque les betteraves sont r\u00e2p\u00e9es, placez-les alors dans quelques feuilles de papier absorbant et pressez au-dessus de l&#8217;\u00e9vier pour en extraire l&#8217;extrait de jus. J&#8217;ai \u00e9galement test\u00e9 ce g\u00e2teau \u00e0 la betterave avec des betteraves cuites et cela fonctionne \u00e9galement, tant qu&#8217;elles sont cuites au four \u00e0 200\u00b0C plut\u00f4t que cuites \u00e0 l&#8217;eau (qui leur ferait rendre trop de jus).<\/p>\n<p><b>\u00c9tape 2 : m\u00e9langez tous les ingr\u00e9dients humides<\/b>, \u00e0 savoir les oeufs, le sucre et l&#8217;huile v\u00e9g\u00e9tale. Testez aupr\u00e8s de vos proches sans leur dire l&#8217;ingr\u00e9dient myst\u00e8re et je suis pr\u00eate \u00e0 parier que peu s&#8217;apercevront qu&#8217;il s&#8217;agit de betterave.<\/p>\n<p>C\u00f4t\u00e9 texture, il s&#8217;agit d&#8217;un g\u00e2teau r\u00e9alis\u00e9 \u00e0 base d&#8217;huile v\u00e9g\u00e9tale plut\u00f4t que de beurre (un peu comme pour un g\u00e2teau au yaourt), ce qui r\u00e9sulte en un moelleux l\u00e9ger et a\u00e9r\u00e9.        <h4>Pour le g\u00e2teau \u00e0 la betterave :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-1\">Pr\u00e9chauffer le four \u00e0 180\u00b0C et foncer un moule carr\u00e9 (ou rond) de 23 cm avec du papier sulfuris\u00e9.<\/li>\n<li id=\"instruction-step-2\">Peler et r\u00e2per les betteraves crues, puis essorer l\u00e9g\u00e8rement dans du papier absorbant pour extraire l&#8217;extrait de jus.<\/li>\n<li id=\"instruction-step-3\">Fouetter les deux sucres avec l&#8217;huile v\u00e9g\u00e9tale dans un saladier. Incorporer les oeufs, un \u00e0 un, en fouettant bien entre chaque ajout.<\/li>\n<li id=\"instruction-step-4\">Dans un autre saladier, m\u00e9langer ensemble la farine, la cannelle, la levure et le sel et incorporer au m\u00e9lange pr\u00e9c\u00e9dent. Ajouter les betteraves r\u00e2p\u00e9es et bien m\u00e9langer.<\/li>\n<li id=\"instruction-step-5\">Verser le m\u00e9lange dans le moule, puis enfourner pendant 25-30 minutes o\u00f9 jusqu&#8217;\u00e0 ce qu&#8217;une lame de couteau ins\u00e9r\u00e9e en son centre ne ressorte propre. Laisser refroidir compl\u00e8tement.<\/li>\n<\/ol>\n<h4>Pour le gla\u00e7age \u00e0 la vanille :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-6\">Pendant ce temps, pr\u00e9parer le gla\u00e7age : \u00e0 l&#8217;aide d&#8217;un batteur \u00e9lectrique ou d&#8217;un robot m\u00e9nager, battre le fromage frais \u00e0 temp\u00e9rature ambiante avec le beurre ramolli \u00e0 vitesse moyenne jusqu&#8217;\u00e0 ce qu&#8217;il n&#8217;y ait plus aucun grumeaux, environ 3 minutes.<\/li>\n<li id=\"instruction-step-7\">Ajouter le sucre glace, la cr\u00e8me, les graines de la gousse de vanille et le sel, et continuer de battre \u00e0 faible vitesse pour \u00e9viter les \u00e9claboussures de sucre glace. Lorsque tous les ingr\u00e9dients sont bien incorpor\u00e9s, augmeter \u00e0 vitesse moyenne-haute et continuer de battre pendant 3 bonnes minutes, jusqu&#8217;\u00e0 ce que le m\u00e9lange soit lisse et onctueux.<\/li>\n<li id=\"instruction-step-8\">R\u00e9partir le gla\u00e7age sur le g\u00e2teau refroidi \u00e0 l&#8217;aide d&#8217;une large spatule. Placer au r\u00e9frig\u00e9rateur pendant environ 3 heures pour laisser le temps au gla\u00e7age de se figer. Sortir le g\u00e2teau 15 minutes avant d\u00e9gustation.<\/li>\n<\/ol>\n            <\/div>\r\n        <\/div>\r\n    \r\n    \r\n    \r\n            <div class=\"tasty-recipes-notes notop nobot\">\r\n            <h3>Notes<\/h3>\r\n            <div class=\"tasty-recipes-notes-body\">\r\n                <p>* Pour \u00eatre plus pr\u00e9cis, je recommande d&#8217;utiliser au poids, soit 225g de betteraves crue, r\u00e2p\u00e9e. L&#8217;int\u00e9r\u00eat de l&#8217;utiliser crue permet une couleur rouge velour intense. Sachez toutefois que si vous n&#8217;\u00eates pas trop regardants sur la couleur, la recette fonctionne \u00e9galement avec de la betterave cuite r\u00e2p\u00e9e. Dans ce dernier cas de figure, pr\u00e9f\u00e9rez une cuisson au four plut\u00f4t qu&#8217;\u00e0 l&#8217;eau pour \u00e9viter que les betteraves ne rendent trop d&#8217;eau et impactent la texture finale du g\u00e2teau.<\/p>\n<p>** Utilisez de pr\u00e9f\u00e9rence une huile v\u00e9g\u00e9tale neutre en saveur, de type huile de tournesol, huile de colza, ou un m\u00e9lange.
