On les d\u00e9guste ainsi tout naturellement\u00a0pour le <em>fika<\/em>, cette pause caf\u00e9 typique que vous connaissez d\u00e9j\u00e0 si vous lisez mon blog r\u00e9guli\u00e8rement.<\/p>\n<p style=\"text-align: justify;\">Il existe de nombreuses variantes \u00e0 la recette des semlor et j&#8217;en ai d&#8217;ailleurs test\u00e9 quelques unes, me faisant ainsi tous les ans mon petit benchmarking. De plus, chaque ann\u00e9e ou presque, une comp\u00e9tition est organis\u00e9e entre\u00a0p\u00e2tissiers professionnels pour r\u00e9aliser la meilleure recette de semlor. Cette ann\u00e9e, une variante est devenue tr\u00e8s populaire en Su\u00e8de : le\u00a0&#8220;<a href=\"https:\/\/www.thelocal.se\/20150120\/famous-snack-gets-makeover-for-busy-swedes\" target=\"_blank\" rel=\"noopener noreferrer\">wrap\u00a0semla<\/a>&#8221; (le mot <em>semla<\/em> \u00e9tant tout simplement la forme singuli\u00e8re du mot <em>semlor<\/em> en su\u00e9dois, pour information), qui a \u00e9t\u00e9\u00a0cr\u00e9e par\u00a0le p\u00e2tissier Mattias Ljungberg de la tr\u00e8s r\u00e9put\u00e9e p\u00e2tisserie Tosse \u00e0 Stockholm.<\/p>\n<p style=\"text-align: justify;\"><img decoding=\"async\" class=\"aligncenter size-large wp-image-5660\" src=\"https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2015\/02\/Semlor6-760x1024.jpg\" alt=\"Swedish Semlor\" width=\"640\" height=\"863\" srcset=\"https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2015\/02\/Semlor6-760x1024.jpg 760w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2015\/02\/Semlor6-223x300.jpg 223w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2015\/02\/Semlor6-768x1035.jpg 768w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2015\/02\/Semlor6.jpg 1200w\" sizes=\"(max-width: 680px) calc(100vw - 40px), 640px\" \/><\/p>\n<p>Le nom de semla vient du mot latin <em>similia<\/em>, qui signifie la plus fine des farines de bl\u00e9, ce qui correspond en fait \u00e0 la plus ancienne version des semlor qui \u00e9taient \u00e0 l&#8217;origine de petits pains servis dans un bol de lait chaud. Puis, lors de la Ligue hans\u00e9atique, les Su\u00e9dois ont pu se procurer quelques \u00e9pices exotiques, qui \u00e9taient alors utilis\u00e9es pour des occasions sp\u00e9ciales en raison de leur prix \u00e9lev\u00e9, et c&#8217;est ainsi qu&#8217;est alors apparue la version des semlor parfum\u00e9es \u00e0 la cardamome. Au cours du 18\u00e8me si\u00e8cle, les Su\u00e9dois ont \u00e9galement ajout\u00e9 des amandes mix\u00e9es \u00e0 la recette, s&#8217;inspirant de la Cour francaise. Plus tard, au milieu de 19\u00e8me si\u00e8cle, le petit couvercle est apparu, de m\u00eame que la p\u00e2te d&#8217;amande, et enfin dans les ann\u00e9es 1930 de la cr\u00e8me fouett\u00e9e est \u00e9galement venue agr\u00e9menter ces petits pains, en une couche g\u00e9n\u00e9reuse\u00a0situ\u00e9e entre la p\u00e2te d&#8217;amande et le petit couvercle.<\/p>\n<p style=\"text-align: justify;\">D\u00e9gust\u00e9s \u00e0 l&#8217;origine par les Su\u00e9dois le jour de Mardi gras comme derni\u00e8re gourmandise avant le car\u00eame, ces derniers cess\u00e8rent de s&#8217;astreindre \u00e0 un car\u00eame strict avec l&#8217;arriv\u00e9e de la R\u00e9forme et le semla est alors devenu un dessert traditionnel servi chaque mardi entre Mardi gras et P\u00e2ques. Pour la petite anecdote, il semblerait que le Roi de Su\u00e8de Adilf Fr\u00e9d\u00e9ric mourut en f\u00e9vrier 1771, apr\u00e8s un repas guarguantuesque de homard, de caviar, de hareng marin\u00e9, de champagne et&#8230; de 14 semlor ! Alors n&#8217;abusez pas plus d&#8217;un ou deux semlor \u00e0 chaque fois, et ne mangez pas trop de caviar avant surtout \ud83d\ude09<\/p>\n<p style=\"text-align: center;\"><img decoding=\"async\" sugg\u00e8re deux options concernant la garniture \u00e0 la p\u00e2te d&#8217;amande, la premi\u00e8re consistant \u00e0 utiliser de la p\u00e2te d&#8217;amande toute pr\u00eate (m\u00e9lang\u00e9e \u00e0 de la cr\u00e8me fouett\u00e9e pour all\u00e9ger l&#8217;ensemble et aux \u00e9pices cit\u00e9es dans la recette) comme la plupart des Su\u00e9dois le font, tandis que la deuxi\u00e8me option consiste \u00e0 r\u00e9aliser soi m\u00eame sa propre p\u00e2te d&#8217;amande, pour un r\u00e9sultat encore meilleur.<\/p>\n<p style=\"text-align: center;\">J&#8217;esp\u00e8re que la recette vous Verser la farine petit \u00e0 petit jusqu&#8217;\u00e0 l&#8217;obtetntion d&#8217;une p\u00e2te lisse (vous n&#8217;aurez pas forc\u00e9ment besoin d&#8217;utiliser toute la farine). Laisser reposer sous couvert d&#8217;un torchon jusqu&#8217;\u00e0 ce que la p\u00e2te double de volume, environ 30-45 minutes.<\/li>\n<li id=\"instruction-step-3\">Transf\u00e9rer la p\u00e2te sur une surface de travail farin\u00e9e et la diviser en 12 \u00e0 15 morceaux de taille \u00e9gale, et en former des boules r\u00e9guli\u00e8res. Les d\u00e9poser sur une plaque allant au four munie d&#8217;un tapis anti adh\u00e9rant ou de papier sulfuris\u00e9. Laisser reposer sous couvert 30 minutes suppl\u00e9mentaires.<\/li>\n<li id=\"instruction-step-4\">Pr\u00e9chauffer le four \u00e0 225\u00b0C. Badigeonner les petits pains avec l&#8217;oeuf battu et les enfourner pendant 10-12 minutes, jusqu&#8217;\u00e0 ce qu&#8217;ils obtiennent une belle couleur dor\u00e9e. \u00c0 la sortie du four, laisser reposer sur une grille.<\/li>\n<li id=\"instruction-step-5\">Pour la cr\u00e8me fouett\u00e9e : \u00e0 l&#8217;aide d&#8217;un batteur \u00e9lectrique, fouetter la cr\u00e8me liquide pendant quelques minutes, jusau&#8217;\u00e0 l&#8217;obtention d&#8217;une consistence a\u00e9rienne et pas trop dense. Transf\u00e9rer dans une poche \u00e0 douille munie d&#8217;une douille.<\/li>\n<li id=\"instruction-step-6\">Pour la p\u00e2te d&#8217;amande (option 1) : r\u00e2per la p\u00e2te d&#8217;amande dans un r\u00e9cipient de taille moyenne et ajouter 2 cuill\u00e8res \u00e0 soupe de cr\u00e8me fouett\u00e9e de la pr\u00e9paration pr\u00e9c\u00e9dente afin d&#8217;all\u00e9ger l&#8217;ensemble. Y ajouter la cardamome fra\u00eechement moulue, les graines de la gousse de vanille et bien m\u00e9langer, avant de transf\u00e9rer l&#8217;ensemble dans une poche \u00e0 douille.<\/li>\n<li id=\"instruction-step-7\">OU Pour la p\u00e2te d&#8217;amande maison (option 2) : dans un blender, mixer ensemble les amandes enti\u00e8res, le sucre glace, le sucre granul\u00e9 et la cr\u00e8me liquide (\u00e9ventuellement un peu d&#8217;eau si besoin). Ajouter les graines de la gousse de vanille et la cardamome moulue. Bien m\u00e9langer puis transf\u00e9rer la pr\u00e9paration dans une poche \u00e0 douille.<\/li>\n<li id=\"instruction-step-8\">D\u00e9couper un petit couvercle sur les petits pains (pour ma part, j&#8217;aime les d\u00e9couper en forme de triangle) et pr\u00e9lever un peu de mie afin de laisser la place pour garnir l&#8217;int\u00e9rieur avec les pr\u00e9paration d&#8217;amande et de cr\u00e8me fouett\u00e9e. \u00c0 l&#8217;aide des poches \u00e0 douille correspondantes, remplir chaque petit pain d&#8217;1\/3 d&#8217;amande et les 2\/3 restants de cr\u00e8me fouett\u00e9e, puis recouvrir du petit couvercle.
