Aujourd&#8217;hui je vous pr\u00e9sente la version &#8220;de luxe&#8221; de ces petites beaut\u00e9s qui vous ont beaucoup plu ! J&#8217;ai, depuis que je vis en Su\u00e8de, d\u00e9velopp\u00e9 une petite &#8220;addiction&#8221; \u00e0 la cardamome, une \u00e9pice que j&#8217;appr\u00e9cie tout particuli\u00e8rement dans les desserts. Les petites brioches \u00e0 la cardamome sont une variante des fameuses petites brioches su\u00e9doises\u00a0\u00e0 la cannelle <a href=\"https:\/\/www.delscookingtwist.com\/2014\/01\/13\/swedish-cinnamon-rolls-or-kanelbullar\/\" target=\"_blank\" rel=\"noopener noreferrer\">&#8220;Kanelbullar&#8221;<\/a>, et en dehors de l&#8217;utilisation d&#8217;une \u00e9pice diff\u00e9rente pour la garniture,\u00a0la recette de base reste la m\u00eame pour les deux versions. La recette traditionnelle n\u00e9cessite une seule p\u00e2te \u00e0 brioche r\u00e9alis\u00e9e avec de la levure de boulanger, avec en cons\u00e9quence un temps de repos n\u00e9cessaire afin de faire lever la p\u00e2te. J&#8217;ai utilis\u00e9 cette recette pour mes <a href=\"https:\/\/www.delscookingtwist.com\/fr\/2013\/11\/12\/swedish-cardamom-buns-with-a-twist-of-raspberries\/\" target=\"_blank\" rel=\"noopener noreferrer\">petites brioches su\u00e9doises \u00e0 la cardamome et aux framboises<\/a> par exemple.<\/p>\n<p style=\"text-align: justify;\">Une alternative \u00e0 cette recette classique &#8220;facile&#8221; est de r\u00e9aliser une sorte de levain comme base de d\u00e9part et qui sera incorpor\u00e9e \u00e0 la p\u00e2te \u00e0 brioche proprement dite. R\u00e9aliser un levain ou &#8220;pr\u00e9-p\u00e2te&#8221; comporte des avantages certains. Cela\u00a0permet d&#8217;augmenter les capacit\u00e9s de fermentation ainsi que le volume de la p\u00e2te, et am\u00e9liore la texture de la brioche ainsi que l&#8217;ar\u00f4me du produit fini. Tout ce dont vous avez besoin est d&#8217;un peu plus de temps que pour la recette classique, car il faut prendre en compte le temps de repos de la pr\u00e9-p\u00e2te, de la p\u00e2te elle-m\u00eame, avant de faire lever les petites brioches une derni\u00e8re fois avant cuisson.<\/p>\n<p style=\"text-align: justify;\">Si vous avez une envie irr\u00e9sistible de cardamome et que vous ne disposez que de peu de temps devant vous, optez pour la recette de base des <a href=\"https:\/\/www.delscookingtwist.com\/fr\/2014\/01\/13\/swedish-cinnamon-rolls-or-kanelbullar\/\" target=\"_blank\" rel=\"noopener noreferrer\">petites brioches \u00e0 la cannelle<\/a> en remplacant simplement par l&#8217;\u00e9pice souhait\u00e9e. Ensuite proc\u00e9dez comme ci-dessous pour faconner la jolie petite forme des brioches. Si en revanche vous souhaitez \u00e9pater vos invit\u00e9s et r\u00e9aliser une recette qui se conserve bien sur plusieurs jours, je vous conseille d&#8217;utiliser la recette ci-dessous utilisant une pr\u00e9-p\u00e2te. Ajouter la farine et le sucre, et travailler jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une p\u00e2te lisse. Couvrir \u00e0 l&#8217;aide d&#8217;un torchon et laisser reposer pendant 30 minutes, le temps que la p\u00e2te double de volume.<\/li>\n<li id=\"instruction-step-2\">\u00c9tape 2 : incorporer les ingr\u00e9dients de l&#8217;\u00e9tape 2 \u00e0 la p\u00e2te de l&#8217;\u00e9tape 1, puis p\u00e9trir la p\u00e2te pendant 15 \u00e0 20 minutes \u00e0 la main (ou 12-15 minutes \u00e0 l&#8217;aide d&#8217;un robot). Couvrir avec un torchon et laisser lever pendant 30 minutes suppl\u00e9mentaires.<\/li>\n<li id=\"instruction-step-3\">Pendant ce temps, pr\u00e9parer la garniture : moudre les graines de cardamome \u00e0 l&#8217;aide d&#8217;un mortier ou \u00e0 l&#8217;aide d&#8217;un moulin \u00e0 \u00e9pices (il est important de moudre les graines de cardamome juste avant utilisation plut\u00f4t que d&#8217;acheter de la cardamome moulue, car elles perdent tr\u00e8s rapidement leur saveur) et les m\u00e9langer au sucre et au beurre mou.<\/li>\n<li id=\"instruction-step-4\">Transf\u00e9rer la p\u00e2te sur une surface farin\u00e9e, p\u00e9trir rapidement puis diviser la p\u00e2te en deux parts \u00e9gales.<\/li>\n<li id=\"instruction-step-5\">\u00c9taler l&#8217;une des p\u00e2tes en un large rectangle et \u00e9taler la pr\u00e9paration \u00e0 la cardamome sur la moiti\u00e9 dans le sens de la longueur. Plier la p\u00e2te en deux, de telle sorte que la partie vide soit recouverte par celle garnie de la pr\u00e9paration \u00e0 la cardamome.<\/li>\n<li id=\"instruction-step-6\">Faire des entailles dans la p\u00e2te, de 0,5 cm de large de la mani\u00e8re qui suit : couper une bande sur deux de haut en bas, la deuxi\u00e8me bande s&#8217;arr\u00eatant \u00e0 1 cm du haut de la bande. Prendre chaque bande de 1 cm et tresser les deux bandes plus fines qui la composent. Replier cette sorte de tresse sur elle-m\u00eame et la d\u00e9poser sur une caissette ou bien sur du papier sulfuris\u00e9 ou un tapis de cuisson allant au four. Parsemer \u00e9ventuellement de perles de sucre, puis couvrir \u00e0 l&#8217;aide d&#8217;un torchon et laisser la p\u00e2te lever une derni\u00e8re fois pendant 30 minutes.<\/li>\n<li id=\"instruction-step-7\">Pendant ce temps, r\u00e9p\u00e9ter les \u00e9tapes 5 et 6 avec la deuxi\u00e8me moiti\u00e9 de p\u00e2te non utilis\u00e9e, en utilisant le reste de garniture \u00e0 la cardamome*.<\/li>\n<li id=\"instruction-step-8\">Enfourner \u00e0 225\u00b0C pendant environ 10 minutes. Badigeonner avec le sirop (eau et sucre, auquel vous pouvez dissoudre la gousse de vanille d\u00e9j\u00e0 utilis\u00e9e pour la p\u00e2te &#8211; \u00e9tape 2) imm\u00e9diatement \u00e0 la sortie du four.<\/li>\n<li id=\"instruction-step-9\">Laisser les petites brioches \u00e0 la cardamome refroidir sur une grille avant de servir. Cela donne une jolie forme \u00e0 la petite brioche et pernet une bonne r\u00e9partition de la cardamome.
