Avec quelques ingr\u00e9dients seulement &#8211; farine, beurre, oeufs et sucre &#8211; on obtient une p\u00e2te riche et subtilement sucr\u00e9e qui met en valeur les tartes aux fruits. \u00c0 d\u00e9faut, vous pourriez opter pour une p\u00e2te bris\u00e9e, mais \u00e9vitez autant que possible les p\u00e2tes d\u00e9j\u00e0 pr\u00eates \u00e0 l&#8217;emploi qui g\u00e2cheront la somptuosit\u00e9 de ce dessert.<\/p>\n<div>Ensuite, il vous faudra <strong>cuire la rhubarbe<\/strong> en compote. Pour cela, rien de plus simple. Il suffit simplement de les cuire avec \u00e9ventuellement un tout petit peu d&#8217;eau et des zestes de citron pour la saveur. Une fois que la compot\u00e9e est pr\u00eate, on la r\u00e9partit par-dessus la p\u00e2te pr\u00e9-cuite, puis <strong>on ajoute les fraises fra\u00eeches<\/strong>\u00a0coup\u00e9es en deux ou en lamelles.<\/div>\n<div><\/div>\n<div>R\u00e9alisez enfin la cr\u00e8me d&#8217;amande en fouettant ensemble poudre d&#8217;amande, oeufs et sucre dans une jatte, avant de le r\u00e9partir sur les fruits. C&#8217;est une question de pr\u00e9f\u00e9rence. Personnellement, j&#8217;opte volontiers pour la meringue italienne, qui est de loin ma pr\u00e9f\u00e9r\u00e9e.<\/p>\n<p>Dans une version pr\u00e9c\u00e9dente de cette recette (mise \u00e0 jour le 4 ao\u00fbt 2019), j&#8217;utilisais une meringue francaise classique toute simple, consistant \u00e0 battre les blancs en neige jusqu&#8217;\u00e0 ce qu&#8217;ils soient bien fermes avant de ne leur ajouter du sucre et de battre encore quelques instants. On passe ensuite la tarte meringu\u00e9e au four quelques instants et c&#8217;est pr\u00eat. C&#8217;est tr\u00e8s clairement la version la plus facile et si vous vous sentez encore d\u00e9butants en cuisine, je vous encourage \u00e0 opter pour cette version.<\/p>\n<p>Si vous \u00eates un peu plus aventureux, testez la meringue italienne. Celle-ci n\u00e9cessite en amont de pr\u00e9parer un sirop de sucre chauff\u00e9 \u00e0 une temp\u00e9rature pr\u00e9cise (ce qui n\u00e9cessitera l&#8217;utilisation d&#8217;un thermom\u00e8tre) avant de l&#8217;ajouter en un filet r\u00e9gulier aux blancs d&#8217;oeufs en train de monter mais pas encore fermes. Laisser refroidir quelques instants puis verser sur le fond de tarte. Verser cette pr\u00e9paration sur le fond de tarte, puis enfourner \u00e0 210\u00b0C pendant 15 minutes.<\/li>\n<\/ol>\n<h4>Pour la meringue** :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-5\">Verser l\u2019eau et le sucre dans une petite casserole et faire chauffer le sirop jusqu\u2019\u00e0 115\u00b0C sans remuer.<\/li>\n<li id=\"instruction-step-6\">Lorsque la temp\u00e9rature approche les 110\u00b0C, commencer \u00e0 battre les blancs en neige en parall\u00e8le \u00e0 l\u2019aide d\u2019un mixeur \u00e9lectrique ou id\u00e9alement d\u2019un robot m\u00e9nager pour avoir les mains libres.<\/li>\n<li id=\"instruction-step-7\">Lorsque les blancs commencent \u00e0 \u00eatre mousseux et \u00e0 attacher un peu la paroi (sans \u00eatre fermes), ajouter tr\u00e8s progressivement aux blancs d\u2019oeufs le sirop d\u00e9sormais \u00e0 115\u00b0C, en un filet r\u00e9gulier, tout en continuant de monter les blancs en neige \u00e0 vitesse basse-moyenne.<\/li>\n<li id=\"instruction-step-8\">Une fois que tout le sirop est incorpor\u00e9, augmenter la vitesse \u00e0 maximum et continuer de battre, jusqu\u2019\u00e0 ce que la meringue soit soyeuse et bien ferme.
