Bringing the spring vibes with a colorful drink today! As you know, my obsession with beets is a long and controversial one. I take immense pleasure in sneaking beets into places it shouldn’t be. Like cakes, pancakes, granola, pizzas (cf. this article about 10 original recipes to make you love beets). And now onto this beet latte.

Beets may be loaded with health properties, but I admit that the primary reason of this recipe is linked to its vibrant and naturally pink color. I believe in pretty foods as we all eat with our eyes first. Colors make food appealing and they somehow trigger something in our appetite, at least mine. Let’s be clear, I’m not talking about any artificial food colorant here, but about natural food colors brought by ingredients themselves.

Since I first made this pink beet latte, I’ve fallen irrevocably in love with the idea of all the spices mingled with the earthiness of this humble, yet absolutely gorgeous root vegetable. It is somehow a warmer, more intense counterpart of a chai latte, but the gorgeous color just can’t be beat (beet)!

However, I know that this beet latte will not appeal to everyone. Some people just can’t handle the taste of beets. Beetroot does have a slightly earthy taste, and yes, you have to love beetroot juice if you want to enjoy it. Personally, I find this latte a nice way to mute the earthy flavors of beets by pairing it with warming spices, cinnamon and ginger especially. It’s also just a fun and beautiful treat, that tastes healthy.

That being said, don’t beat yourself up if you don’t like it or if you do not even want to give it a try. Just a friendly tip: try to combine with raspberry powder (or fresh raspberries, pureed and drained into a sieve to remove the seeds) to avoid a strong earthy taste. It might be a first step, and before you know it you will fall in love with beets too!

Health benefits of a beet latte

Beyond its pretty face, this beet latte also provides surprising health benefits, which makes it a nice healing and liver-supporting alternative to your usual coffee or tea.

Beets are rich in betaine, a substance that helps protect the liver and encourages the liver cells to get rid of toxins. Betaine also works to improve enzymatic activity to break down fat. Beyond the liver, beets are any-inflammatory for the entire body. The betaine promotes the synthesis of creatine which helps to improve muscle strength and power and it encourages muscle growth. It also shown to lower lactate within your muscles, delaying the onset of muscle fatigue, and allowing you to go harder, faster, and for longer.

Last but not least, this beet latte is ridiculously easy to prepare. Besides the beet itself roasted in the oven, all you need to do is blend all the ingredients together until smooth. Combine with frothed milk, and drink up this healing elixir drink warm, using a sweetener of your choice.

Ingredients

  • 1 small beetroot, peeled
  • 1/2 teaspoon ground ginger (or 1 teaspoon freshly grated)
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon pure vanilla extract
  • 1 pinch ground cardamom (optional)
  • 1 teaspoon maple syrup or agave syrup
  • 1 1/2 cup (360 ml) unsweetened non-dairy milk (I use almond)

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap beet in foil and roast for about 30 minutes, or until a fork easily pierces it (you can do this ahead of time).
  2. In a blender or a food processor, add all the ingredients except the extra 1/2 cup (120 ml) milk, and blend until smooth.
  3. In a small pot, heat up blended beet ingredients until boiling. Pour into a mug.
  4. Add remaining almond milk into a glass and foam with a milk frother (or just give it a whiz in a high-powered blender).
  5. Gently pour the foamed milk into the mug over the beet mixture, while stirring with a spoon. Sprinkle extra ground ginger or cinnamon, and drink away!
