A wonderful winter lentil salad in a vegetarian version with delicious caramelized pears and blue cheese.

Ingredients

For the lentil salad:

  • 1 1/4 cup (250g) lentils
  • 2 Tablespoons olive oil
  • 1 Tablespoon butter
  • 2 Tablespoons honey
  • 2 Tablespoons balsamic vinegar
  • 4 small pears, sliced in 4
  • 250g arugula salad
  • 150g blue cheese, diced
  • 1/4 cup (40) hazelnuts
  • 1/4 cup (40g) cranberries

For the dressing:

  • 2 Tablespoons olive oil
  • 1 Tablespoon cider vinegar
  • 1/2 small shallot, minced
  • 1/2 Tablespoon mustard
  • Salt & pepper

Instructions

  1. Rinse the lentils and toss them in the olive oil. Add 3 times the volume in water and boil them on medium heat for about 20 minutes. Drain thoroughly.
  2. Heat some butter in a frying pan on medium-high heat, then pour the honey and balsamic together. Soak the pears and let them caramelize on all sides. Be careful to not burn them. Reserve.
  3. Prepare the dressing with the olive oil, vinegar, minced shallot and mustard. Season with salt and pepper.
  4. On a large bowl, toss together the arugula salad with the lentils. Add the hazelnuts and cranberries. Pour the dressing and toss well. Serve on 4 plates with the caramelized pears on top.

Notes

You can enjoy the lentil salad recipe in its vegetarian version or decide to add some diced bacon. It will pair the blue cheese perfectly!
