This vegan fig and almond smoothie is a delicious healthy smoothie prepared with fresh figs and almond butter. Creamy, fruity with a subtle nutty flavor, it is loaded with fibers and vitamins. It makes a great energy drink for breakfast, after a workout, and whenever figs are in season.

Ingredients

Scale
  • 3 large fresh figs, cut in half
  • 1 Tablespoon almond butter, unsweetened*
  • ½ Tablespoon agave syrup or maple syrup
  • 1 cup (240 ml) almond milk, unsweetened**

Instructions

  1. Add figs, almond butter, syrup and almond milk to a high powered blender.
  2. Blend everything until smooth and creamy, adjusting the quantity of milk to make it thinner or the quantity of almond butter to make it creamier.***

Notes

* You can add one more Tablespoon almond butter to make the smoothie thicker and creamier.

** Ideally you want to use almond milk but any other non dairy milk would work too (and so would dairy milk for a non vegan option).

*** For a more energetic drink, you can add one banana to the smoothie.

Note: This smoothie is also a good source of vitamin A (78.8%), vitamin E (32.4%), calcium (28.9%) and vitamin D (12.5%).
