To all white chocolate lovers, I’ve heard you! This white chocolate spread recipe with raw cashews is ridiculously easy to prepare and count among my favorite spread recipes. It actually brings me back to a small brunch place in the 5th arrondissement, where I used to go many years ago.

There, your bread basket would come along with a set of various sweet spreads to choose from: dark chocolate spread, milk chocolate spread, hazelnut spread, white chocolate spread… Heaven! If you’ve ever been to Le Pain Quotidien, you should see the kind of experience I’m referring to. Seriously, I could almost give up desserts for a warm toast generously spread with nut butter on top. Wouldn’t you?

3 simple ingredients

Coming back to the recipe, there is really not much to do, and your grocery shopping list will be quick. Just 3 ingredients:

  • White chocolate
  • Raw cashews
  • Coconut oil

You can replace coconut oil with any other vegetable oil of your choice, neutral in taste. Rapeseed or sunflower would be just fine, but avoid olive oil that would add a pungent, bitter taste to your spread.

Choose raw cashews over toasted cashews, and always make sure they are unsalted. Toasted cashews would work, potentially, but they will alter the final taste of the spread.

Note that there no added sugar to the recipe, as the white chocolate is already naturally sweetened – and very sweet by nature. If you really are into sweet things, you can add a tablespoon or two of maple syrup, but I do not find it necessary.

Then all you need is a good food processor as you want to make sure you get a smooth, silky texture, with no effort. Most importantly, you certainly don’t to break it. Nuts are always a little bit tricky to pulse until you get a nut butter. Luckily, cashews count among the softest nuts so the risk it breaks a food processor is lower than it would be with almonds or hazelnuts for instance.

To soften cashews, here’s a little trick: soak your cashews in water for a couple of hours or overnight. Drain, dry, and pulse in the food processor with the other ingredients. This way, you are ensured your white chocolate cashew spread will get a perfectly soft texture. If you don’t have time, just pulse a little longer until desired texture, scraping the sides from time to time.

How to serve my white chocolate cashew spread?

There are so many ways to enjoy nut butter or any sweet and chocolate spreads. I listed below a few of my favorites for inspiration:

  • On warm toasts or onto a crusty baguette
  • On crêpes, pancakes or waffles
  • Onto cakes or cupcakes (as a frosting)
  • On top of a porridge or in a smoothie
  • With berries, bananas, or any fruit really
  • Another option… lick the spoon!

Can I make it vegan?

Yes you can, if you feel a little bit adventurous. You have two options here: you can either use store-bought dairy-free white chocolate (check that all other ingredients are vegan), or you make your own.

I have never made homemade white chocolate myself. It consists mainly of cocoa butter, to which you add a few other ingredients. I’m actually curious to try now; I will let you know if I do!

  • 2 cups (10.5oz / 300g) raw cashews
  • 1 Tablespoon coconut oil
  • 1 ¼ cup (220g) finely chopped white chocolate
  • ¼ cup (60ml) water

Instructions

  1. Mix cashews with coconut oil and water on high speed in a food processor for about 10 minutes, until smooth in texture.
  2. Add white chocolate (it will melt quickly, as the cashew nut paste will be still warm) and mix for a further minute, until combined.
  3. Transfer the white chocolate spread into a jar and let cool.
