By now, you’ve probably heard of the new trend around whipped coffee, as known as Dalgona coffee. This simple beverage went viral on social media over the last few weeks (especially on Instagram and Tik Tok), when people refraining from going out started making DIY videos of whipping the coffee at home, instead of getting their regular coffee cup at their nearby coffee shop. I got hooked myself, tried it, loved it, and even tried a variant with Super U’s new Mushroom Coffee product. I can’t wait to tell you more about it!

What is whipped coffee?

First thing first, let’s start with the beverage itself. Dalgona coffee is a beverage made by whipping equal proportions of instant coffee powder, sugar, and hot water until it becomes creamy and then adding it to cold or hot milk. The result? A sweet-tasting milky coffee.

By the way, why do we call it “Dalgona coffee”? The name comes from the fact that whipped coffee tastes like dalgona, a type of Korean honeycomb toffee, which for many Koreans evokes strong memories of street food from their childhoods.

How to make whipped coffee at home?

It won’t take you long to make whipped coffee, and really anyone could do it with minimal equipment: basically a mixing bowl and an electric mixer.

Ingredients you’ll need:

  • Instant coffee. For best result, I recommend instant coffee powder. Some people tried with regular coffee but they usually obtain mixed results.
  • Sugar. Granulated sugar is fine, but the recipe also works with brown sugar and even coconut sugar. You can go lighter on the sugar if you want, but don’t cut out sugar completely or you won’t have this fluffy texture you’re looking for.
  • Hot water. Just go for boiling water from your kettle for quicker results.

Then all you need is to beat with an electric mixer for 3 to 5 minutes, until you get a pale, fluffy texture. Once ready, add ice cubes to a glass, cover with milk up to two thirds of the glass, then gently spoon the whipped coffee cream on top. Depending on the size of your glass or cup, you can make one or two servings with the suggested measurements of the recipe. But you can easily double or triple the recipe as needed!

… A mushroom coffee option. What is that?

Now that we described the principles of a so-called whipped coffee, let’s talk about a mushroom coffee option. I first discovered mushroom coffee in a vegan coffee shop of Vancouver and it picked my curiosity right away.

With less than half the amount of caffeine compared to a regular cup of coffee, mushroom coffee blend tastes just like coffee (not mushrooms), and comes with great health benefits. Like coffee does, mushroom coffee supports a steady release of energy, but would also have some amazing immune-boosting properties. For this whipped coffee recipe, I used the Shroom Coffee blend from my long time and trusted partner Rheal Supefoods, which uses organic-certified and natural ingredients exclusively.

The good news is, you can use it exactly the same way as your regular instant coffee, using the same ratio. I found the whipped coffee texture pretty similar to the classic one, and to be honest, you could never tell there are mushrooms in the blend. For classic whipped coffee:

  • 2 Tablespoons instant coffee
  • 1,5 to 2 Tablespoons granulated sugar*
  • 2 Tablespoons boiling water
  • 1 cup milk

Using mushroom coffee:

  • Simply replace instant coffee with 2 Tablespoons mushroom coffee
  • 1,5 to 2 Tablespoons granulated sugar or coconut sugar*
  • 2 Tablespoons boiling water
  • 1 cup milk (or soy milk, almond milk, coconut milk)

Instructions

  1. Add the instant coffee (or mushroom coffe), sugar, and water to a bowl, and beat with an electric mixer for 3 to 5 minutes or until pale and fluffy.
  2. Add ice cubes to a glass or cup and fill with milk** up to tho thirds of the cup.
  3. Spoon a dollop of whipped coffee over the cup of milk, and enjoy!

Notes

* The ratio is traditionally 1:1:1 with instant coffee-sugar-water, but feel free to cut sugar a little bit. I usually go for 1,5 Tablespoon only.

** You can also go for hot milk if you want to. Just keep in mind that in this case, the whipped coffee will melt much quicker.

Storage: Because the ratio is 1:1:1: it’s easy to double or triple the quantities as needed. If you make extra, you can store any unused whipped coffee in the fridge for up to 5 days. You can whip it again to make it more frothy and lighter in color.
