Get ready for the 4th of July!

I’m now on my way back to the US after an amazing time in France and I will arrive just on time for Independence Day celebrations. It will be my first 4th of July in the US and I’m really excited as I’ve heard so much about it (mostly seen in movies until now, I guess it will be slightly different)! We don’t have any specific plans yet, but there will be food, maybe a picnic (weather permitted) and fireworks! And you, what do you usually do/recommend for July 4th and what are your plans for this holiday this year?

Every year, I collect patriotic recipes in a Pinterest board as I like to get inspired with very creative food ideas in blue, red and white, matching the American flag. A couple of years ago, I shared some so-called “Fireworks pancakes” made with 3 ingredients only, a “healthicious” (healthy + delicious) pancakes recipe that you should try for brunch on July 4th or any other patriotic celebration. I also like it after training as it is packed with protein.

An easy patriotic dessert

Today’s recipe is another patriotic one: individual berry cheesecakes served in a jar. Nothing fancy at all but a classic everyone should keep. You could use the same preparation (bottom and cream cheese part) and make a regular size cheesecake into a springform instead. I like here the individual portions as it enables more layers, which gives a nice visual effect with the 3 patriotic colors. It’s also perfect to bring with you for a summer garden party, and super easy to prepare.

Plus, you can go safe as this recipe is 100% natural: there is no food colorant whatsoever in the cheesecakes, the 3 colors red-blue-white being naturally brought by the fresh berries and the cream cheese. You could replace the graham crackers with other biscuit crumbs of your choice if you wish, it’s entirely up to you! I sometimes use some Speculoos and it’s delicious too.

I prepared them for David and although he often claims he’s not that much of a sweet tooth (even though he’s happy to try all my desserts) he went totally crazy for these adorable triple berry cheesecakes in a jar. They are fresh, super soft, with just as much sugar you need (i.e. not too much) to really appreciate the berries. It’s the kind of dessert that is just perfect in summer when berries are in season, and if you think a little, it could almost be a luxury breakfast or a sweet treat to enjoy for brunch! Think about it if you happen to have any leftovers.

Swap the fruits!

The cheesecake recipe here is very basic and you could replace the blueberries, blackberries and strawberries with other summer fruits, as long as they have the right color. Here are a few examples:

  • Instead of strawberries: use raspberries, cherries, gooseberries…
  • Instead of blueberries: use blackberries

Or if not a patriotic dessert, go for something completely different, using sliced bananas, caramel and pecans for instance. It works with exotic fruits as well, such as layers of mangoes/passion fruit and coconut. And why not using apricots when in season!

For now let’s keep the blue-red-white colors. Happy 4th of July!

For the bottom:

  • 1 1/2 cups (130g) graham cracker crumbs (about 10 full sized crackers)
  • 1 Tablespoon sugar
  • 1/3 cup (113g) butter, melted

For the cheesecake:

  • 1 block (8 oz/225g) cream cheese
  • 1/2 cup (60g) icing sugar
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons milk (any fat content)
  • 2 cups (250 ml) heavy cream, freshly whipped
  • Fresh mixed berries (blueberries/blackberries and strawberries)

Instructions

For the bottom:

  1. Crush crackers in a food processor or place them in a large ziplock type bag and crush them using a rolling pin.
  2. Pour crumbs, sugar and melted butter into a bowl and stir until fully combined.
  3. Pour into a 9″x13″ dish and press into a even layer. Bake at 350°F (180°C) for 10-12 minutes, until light brown. Allow to cool.

For the cheesecake:

  1. Beat cream cheese in the bowl of an electric mixer until smooth. Add icing sugar, beat to combine. Add lemon juice and beat until fully incorporated. Add milk, and combine.
  2. Fold freshly whipped cream into cream cheese mixture. Fill a large piping bag with the mixture.
  3. To assemble the cheesecake in a jar: layer a spoonful of graham cracker crumble, then pipe a layer of cheesecake, fresh chopped strawberries, more cheesecake, fresh blueberries/and blackberries, and a final layer of cheesecake.
