Healthy Lemon Coconut Energy Balls

My love for energy balls is not a secret anymore. My chocolate peanut butter energy balls have become a classic in my house for quite a while now, and I make it every so often. If you followed my latest recipes, you might have noticed that I even created a slightly improved version, shaping the balls into small patties with a vegan peanut butter mousse on top. From a simple snack, you get a tiny healthy dessert: mini healthy peanut butter pies.

If you want something completely different, I recommend my raw spicy lime bites, that will amaze your taste buds. This version also features various nuts such as cashews and almonds, which makes them very nutritious. However, for all of you who don’t like spicy food or happen to have any allergies, I created a new nut-free version close enough, with lemon and coconut.

Healthy Lemon Coconut Energy Balls

Vegan, raw, gluten and nut-free, these energy balls are the perfect to-go snack. In this recipe, I added some chia seeds, that are high in protein, making the energy balls energetic. You could also use some other grains or seeds, depending on what you have at home, such as flaxseed or hemp for instance. If you do so, you might need to adjust the quantity of liquid to make the texture moist enough, adding more lemon juice or simply water. I recommend to not add more than one teaspoon of liquid at a time, as you don’t want to have it too sticky either.

I love the very lemony taste of these energy balls, and it also brings you some interesting properties. Lemon is a good source of vitamin C and it contain more potassium (which is beneficial for the heart) than apples and grapes. It is also a good friend to your liver, thanks to its detoxifying properties – check my hot lemon water to drink in the morning straight after you jumped out of the bed for more info about the detox properties of lemon. It is always my best morning routine, as it cleans my body and clear my mind at the same time.

Lemon and coconut are an amazing combo, which is great here, as my energy balls are loaded with shredded coconut and just a little bit of coconut oil. Coconut is known for its various properties: it provides a natural source of quick energy and enhances physical and athletic performances, it improves digestion and the absorption of nutrients, vitamins, and minerals, and it also improves the good cholesterol (HDL).

One more reason to go for this recipe: it’s homemade, simple and quick to prepare, which means that you have an entire control of the ingredients you use in the recipe, unlike many ready-to-go snacks you purchase in store that are almost always packed with too much sugar or fat (even when pretending to be healthy) or other unnecessary ingredients for your body. When healthy meets delicious, there is absolutely no reason to say no to this awesome little treat!

Ingredients

  • 1 cup (90g) rolled oats
  • 1 cup (60g) unsweetened shredded coconut
  • 1 Tablespoon chia seeds
  • 1 pinch sea salt
  • 3 Tablespoons (45 ml) agave or maple syrup
  • 1/2 lemon, juiced
  • 1 Tablespoon lemon zest
  • 1 Tablespoon coconut oil, melted
  • 1/2 teaspoon vanilla extract (optional)
  • Extra coconut and lemon zests for rolling in

Instructions

  1. In a food processor, blend all the dry ingredients (oats, shredded coconut, chia, salt) until well combined and oats are chopped up.
  2. Add in the wet ingredients and pulse until it forms into a sticky dough.
  3. Transfer the mixture to a bowl and refrigerate for 20 minutes.
  4. Remove from the refrigerator and roll into 8 balls with your hands.
  5. Roll in extra lemon zests and shredded coconut.
  6. Store in a airtight container in the refrigerator for up to one week.

Notes

I often double the proportions, to have enough energy balls for the entire week. You can also freeze some, and simply leave them out of the fridge for 10-15 minutes before eating them.
