Today, I am running a gentle 5k race in Stockholm with a couple of friends and for the occasion I prepared some healthy energy balls, in a new version: raw, spicy, packed with nuts and a wonderful lime flavor!

If the 5k challenge is not to worry about, it’s always good to be well prepared and eating well before the race. Your body feels much more prepared, and so does your mind. And also, it’s the perfect excuse to eat sweet healthy treats that will bring you all the energy you need.

I ran this race last year with a bunch of friends and we had a lot of fun, so we’re doing it again this year. To begin with, the race takes place in a beautiful environment in the midst of green nature and woods around Stockholm University, in the northern part of Stockholm. Spring is blooming everywhere around Stockholm these past few weeks and it’s a real pleasure to run outside.

In addition, when running VårRuset race, you get a small picnic for free, so the party goes on! Running when the goal is food works very well on me as you might well imagine! This picnic idea is also the perfect occasion for us to build a delicious potluck around which everyone from our small group brings some delights to make the picnic even more decadent.

I must say that Swedes are actually really good at organizing all kind of races. They regularly organize many different events in different disciplines (ski, swimming, running, bicycling…) all year long. I didn’t exercise so much before moving to Sweden, except for swimming, but after more than 6 years living here, I have somehow become a Swede when it comes to the outdoors, and I love running or biking outside as often as possible when the beautiful season is on, with warmer and longer days, like now!

For now, I am really happy to feel this adrenaline kick again when running tonight and I can’t wait to eat one more of these raw spicy lime bites (yes I had some for breakfast already, I couldn’t resist). I made some bliss balls before (check out my Healthy No Bake Energy Balls) and I really enjoy them: they are very simple to make, easy to twist, and packed with nutritious ingredients.

The idea for this version comes from an industrial snack I tried several months ago. I loved the combination of lime with red chili pepper, and I figured I had to recreate this recipe to build my own one, a homemade one (always better, right?). I worked on the recipe like a scientist, being very meticulous with the choice and the proportion of ingredients, and after some time, I managed to find the perfect taste and texture. You get just the right amount of lime taste, spices, and nuts, all in a delicious healthy and naturally sweetened treat.

Now, wish me luck, it is soon time for the race!

Raw Spicy Lime Bites

Healthy spicy lime bars (vegan, raw, gluten free, no added sugar). Ready in 5 minutes only!

Ingredients

Scale
  • 1/4 cup (60g) pitted dates
  • 1/4 cup (60ml) coconut oil
  • 1/2 cup (75g) almonds
  • 1/2 cup (75g) cashews
  • 1 lime (juice + zest)
  • 1/2 small chili pepper, minced
  • 1 teaspoon ginger

Instructions

  1. Coarsely blend all ingredients (without adding any water), about 2 minutes.
  2. Shape into balls, and store in the refrigerator at least 2 hours before consuming.
