They are the kind of drinks you can enjoy all day long, whether for breakfast, after a workout session or just when chilling by the pool. It’s also for me a great way to add more fruits to my diet in the most delicious way.

Today’s smoothie has it all: a vibrant pink color, with a sweet tart flavor and an ultra creamy and rich texture. It is prepared with frozen raspberries, full-fat coconut milk, and lightly sweetened to your liking. Here’s a drink you are going to make often – kids and grownups love it!

Ingredients for this Raspberry Coconut Smoothie

  • Frozen raspberries. Using them frozen rather than fresh creates a thick, creamy and frothy texture to the smoothie.
  • Coconut milk. Make sure you use full-fat coconut milk for a super creamy texture.
  • Natural sweetener of choice. Because I created this smoothie vegan, I recommend agave syrup for a neutral flavor (or maple syrup if you are looking for stronger notes).

The touch of cardamom is totally optional in this smoothie recipe, but it will add some delicate and subtle flavors to the drink.

Ingredients

  • 2 cups (250g) frozen raspberries
  • ¾ cup (180 ml) coconut milk
  • ⅓ cup (80 ml) water, or more if needed
  • 1 to 2 Tablespoons agave syrup
  • 1 pinch cardamom, freshly ground (optional)*

Instructions

  1. Pour the frozen raspberries (reserve two for decoration) with the coconut milk in a blender and mix until a smooth texture. Add the agave syrup and a pinch of cardamom if using, and stir together.
  2. Allow to cool in the fridge for at least one hour. Decorate with two small raspberries and enjoy!

Notes

* The touch of cardamom is optional but adds some delicate subtle flavors to the drink. I recommend using it freshly ground.
